Maple Oven Baked Chicken with Vegetables

Preheat the oven to 375 degrees Fahrenheit.&nbsp;

Arrange the chicken in a 9X13 in Pyrex dish. Sprinkle chicken with poultry seasoning, salt and pepper.&nbsp;

Chop the vegetables and place the carrots, sweet potatoes, and red onion in the dish. Drizzle with maple syrup and olive oil. Add fresh thyme on top.

Bake for 35-40 minutes, or until your chicken pieces have reached an internal temperature of 165 degrees Fahrenheit.&nbsp;

Let the dish cool for 5 to 8 min before serving. Refrigerate any leftovers.

Oven Baked Chicken Leg Quarters are crispy, juicy and oh-so deliciously tender.

Baked Chicken Leg Quarters

olive/canola oil

Set chicken out about 30 minutes before cooking. (So they will be close to room temp.)

Preheat oven to 425.  (For easy clean-up, I like to line a 9 x 13 dish with foil. You can also use a sheet pan, but I will not mention how many times I have spilled the chicken juices in my oven and on the floor!)

Before starting, give your a sprinkle with salt and pepper on both sides.

Mix the flour and all the spices in a large bowl.

Dip the leg quarters in the bowl and generously coat chicken with the flour/spice mixture.

Place leg quarters, skin side down on the foil and bake for 30 minutes.

Turn chicken and reduce heat to 325 degrees and bake 35-45 minutes longer or until chicken is done. (If you have a digital thermometer, go ahead and place it in the chicken at this point and bake the chicken quarters until they reach an internal temp of 165 degrees.)

I used the recipe with the brown  sugar and my family simply loved it.  Easy to cook didn’t take a lot of time and it was good.

Delicious!  The whole family, including my picky boys, loved it.  Spice was perfect.  Omitted the brown sugar and still delicious.  I did have to bake for a full 45 min to get to 165 internal temperature.

Flavor profile is probably spot-on, I generally do not use any types of sugar to marinate anything. Sorry, Dr. told me not to. But the spice rub minus the brown sugar was still very tasty. Feel free to make spice/herb substitutions, everyone's tastes are different. I also cannot add salt to anything (same reason, Dr. said no). Please do be cognizant of the fact that different sized chicken breasts will call for different cooking times, it pays to pound them to even thickness before seasoning and popping them into the oven. If you don't feel safe doing that (I live in an apartment, and pounding the chicken is out of the question because of the noise that my neighbors would hear), simply try to fold the thin ends under to try to create pieces of even thickness. I made this tonight.  I didn't have lemons or paprika and it was still excellent.  I baked 18 minutes using very thin sliced organic chicken breasts.  Perfect time (used a thermometer as well).  Hardly any prep which was excellent.

Oven Baked Crispy Chicken Thighs with Garlic, Lemon and Scallion

Line large baking sheet with foil for easy clean up and set rack on top.

Add garlic, zest of one lemon and juice of one lemon, along with scallions, olive oil, salt and pepper to food processor or blender.

Blend for about 20 seconds until well combined and a paste forms.

Pour into large bowl.

Rinse and pat dry chicken thighs.

Add to large bowl with marinade and rub into chicken. Getting under skin.

Cover and let rest while oven preheats.

Preheat oven to 400 degrees. Use convection feature if you have it. No sweat if you don't, just increase cooking time by 5 minutes.

Lay chicken SKIN SIDE DOWN ontop of rack.

Cook for 20 minutes and turn chicken over.

Cook for an additional 25 minutes or until internal temp of chicken reaches 165 degrees.

Let rest for 5 minutes and serve!

This Teriyaki chicken is a perfect plan B recipe. The easy teriyaki sauce cooks up in minutes and the chicken is simple too! Just a couple of steps to&nbsp;prep the chicken and then pop it into the oven and let it bake until it's tender and juicy then slather on the sweet sticky savory sauce! &nbsp;

Teriyaki Baked Chicken Legs

tbsp apple cider vinegar

soy sauce

tsp minced ginger

tsp minced garlic

tsp crushed red peppers (optional)

Add all of the teriyaki sauce ingredients (except cornstarch and water) to a small sauce pan over medium high heat. Add cornstarch and water to a small bowl and mix until the clumps are gone. Once the sauce mixture starts to boil add the cornstarch mixture. Cook until the sauce has thickened stirring often. Reserve about 1/4 cup of the sauce for serving.

Preheat oven to 425 degrees Fahrenheit. Pat the chicken dry with a paper towel. Season the chicken legs with salt, pepper, and garlic powder. Add the chicken to a bowl with the oil. Coat with oil.&nbsp;&nbsp;

Line a baking sheet pan with foil then place a baking rack on top. Place the chicken on to the rack. 

Bake each side of the chicken for 25-30 mins basting occasionally with the teriyaki sauce in the sauce pan.  Drizzle the remaining sauce over each chicken leg and serve immediately.

Here&#039;s another way to coat the chicken in the sauce. Instead of basting, after the chicken if done,  add the teriyaki sauce to a cast iron skillet or any large pan you have over medium heat until it comes to a boil then simmer. Add the chicken legs to the cast iron skillet and toss until nicely coated with the teriyaki sauce.

Easy Low-Sodium Chicken Breast Recipe

Place the chicken in a gallon-sized resealable plastic bag and pound the chicken with the flat side of the meat mallet to 1/2 inch - 3/4 inch thick so that it has an even thickness throughout.

Add all other ingredients to the bag and close the bag. Mix the marinade and the chicken together by gently kneading the bag until the mixture is well combined. Place chicken in marinade and refrigerate for at least an hour.

Spray grill pan with non-stick cooking spray and set the pan on high heat on the stovetop. Let the pan get very hot first - this is essential! It should take at least 5 minutes.

When the grill pan is good and hot, add chicken with tongs. Don&#039;t move or touch it for exactly 1.5 minutes! Then, turn it over and grill the other side for exactly 1.5 minutes. Now, place the whole thing in the oven for 8-10 minutes.
