In a medium bowl, toss the shrimp with 2 teaspoons of the minced garlic, 1 tablespoon of the olive oil, and 1/4 teaspoon salt. Let the shrimp stand in this mixture for 20 minutes at room temperature while you prepare the other ingredients.

Stir the mixture now and then to prevent the garlic burning and cook until the garlic is light and golden, about 5 minutes. Remove the skillet from the heat and use a slotted spoon to take out the garlic, leaving as much oil as you can in the skillet. Throw the garlic away and set the skillet aside.

Preheat large deep skillet on medium heat and add olive oil, onion and garlic. Saute until translucent, stirring occasionally.

Add tomato sauce, stock, balsamic vinegar, rosemary, thyme, salt, pepper and hot pepper flakes. Stir and bring to a boil.

Add pasta and stir again.

Bring to a boil, cover, reduce heat to low and cook for 15 minutes, stirring every 5 minutes.

Add broccoli, cover and cook for 3 minutes for crispy broccoli and 5 - 6 minutes for softer vegetables.

Turn off heat, add cheese and stir until melted.

Garnish with parsley or basil and serve hot.

Preheat oven to 350 degrees F (175 degrees C).

Bring a large pot of lightly salted water to a boil.

Add pasta and cook for 5 to 8 minutes or until al dente; drain.  (If you want a softer noodle cook for the longer time).

Heat oil in a large, deep skillet. Place sausage, onion and garlic in the skillet and cook over medium high heat until evenly brown. Drain excess fat.

Stir in tomato sauce, diced tomatoes, tomato paste and oregano.

Simmer for 10 minutes, stirring occasionally.

Toss with cooked pasta, and place in a 9×13 inch baking dish.

Sprinkle top with mozzarella and italian cheese blend.

Bake in pre-heated oven for 20 minutes, or until cheese is melted. (Cover with foil if you don’t want some noodles on the top to be hardened).

Cook bacon in large deep skillet until crisp; remove from skillet. Drain on paper towels. Discard drippings from skillet. Add ground beef, mushrooms, onions and garlic to skillet; cook until meat is browned, stirring occasionally.

Crumble bacon. Add half the bacon to meat mixture in skillet with the tomatoes, pasta sauce and water; mix well. Cover; bring to boil.

Stir in pasta; simmer, covered, on medium-low heat 20 min. or until pasta is tender, stirring occasionally. Remove from heat.

Top with cheese and remaining bacon. Let stand, covered, 5 min. or until cheese is melted. Sprinkle with parsley.

This 20 Minute Lemon Pesto Penne is my husband's favorite pasta! Baby broccoli, oven roasted tomatoes, and fresh lemon and basil.

Cook the penne according to package directions. Add the baby broccoli to the pot of boiling water for the last 1-2 minutes of cooking. It should turn bright green. Drain and return to the pan over medium high heat.

Add the tomatoes and garlic to the pan with the pasta and baby broccoli; saute 1-2 minutes or until fragrant. Add the pesto, half of the feta, and the lemon juice. Toss in the pan until well combined. Remove from heat and add the basil. Sprinkle with remaining feta before serving.

I made it tonight and it was really good! Lots of flavor, if you can find fresh pesto vs jarred that would be the way to go, makes a huge difference!

Preheat oven to 375°F.

Place meatballs in a 9x13 pan and bake 20 minutes (or according to recipe or package directions).

Meanwhile, heat oil over medium heat. Add onion and garlic and cook 4-5 minutes or until softened.

Remove the meatballs from the oven. Drain fat if there is a lot in the bottom, if there is a little bit you can leave it for flavor.

Add cooked penne, and remaining ingredients to the 9x13 pan with the meatballs. Stir to combine.

Top with cheese and bake an additional 20 minutes or until heated through. Garnish with parsley if desired.

Bring a large pot of water to a boil and season generously with kosher salt.

Meanwhile, begin preparing the marinara. Pour the tomatoes and purée into a bowl and crush with your hands or the the back of a spoon, then set aside.

In a large cold skillet, add the extra-virgin olive oil and garlic cloves, and bring to medium heat. As the garlic begins to sizzle, stir occasionally, and cook until fragrant and golden, about 5 minutes. Monitor the heat so the garlic doesn&#039;t cook too quickly or burn.

Very carefully stir the tomato paste into the garlic and oil—take care so the oil doesn&#039;t splatter and burn you as the paste is added—and cook for 1-2 minutes. Carefully spoon the tomatoes into the pan with the oil and paste and season with salt and pepper. Add the basil sprigs and bring to a boil. Reduce to a bubbling simmer over low heat, stirring occasionally, for 30 minutes. Stir to mix the oil that rises to the top, then discard the basil sprigs and garlic.

Meanwhile, cook the pasta in the boiling water until 2 minutes shy of suggested cooking time on the packaging. Use a slotted spoon or spider to transfer the pasta directly to the sauce to continue cooking until tender but still toothy. Toss the pasta to coat it well, and add 1-2 tablespoons of the pasta water if needed to extend the sauce. Garnish with fresh basil and serve.
