I made this tonight. It was wonderful. I changed it up a little and used gouda cheese instead. Was amazing.

We made this exactly how the recipe is and it was amazing!! I think this is an excellent substitute for potatoes and will make this again!

Just made this tonight and stuck to the directions exactly. It was a huge hit! I cooked it in a ceramic casserole and it turned out beautifully. I was concerned the zucchini would turn mushy, but it was the perfect amount of firmness and made such a great palate for the cheese. The only thing I think I might do differently when I make it next time is to turn up the second stove to broil temp and move it under there for the last five minutes to make the cheese more golden brown. But all said, everyone loved it! Thank you for sharing!

I had issues w/the directions... I melted (nearly) all my cheese in the white sauce then layered, the video kinda shows the cheese added separately during layering and sorta reads that way later in recipe... even reading it a few times it was still confusing (for me). Also the lack of cups of zuchinni leaves a lot in question. All that said I will attempt it again with the experience of making it once... it was good.
Anyone have comments as to how this might freeze as I often do w/recipes... just makes too much for two... unless one wants to eat it 4X... guess I will just try it!

These zucchini corn fritters combine two summer favorites into an easy, delicious appetizer or side.&nbsp;

Zucchini corn fritters

11 1/2 oz zucchini

onion

corn (155 grams, from 1 ear of corn)

mozzarella (60 grams/ 2 ounces)

all purpose flour

tsp baking powder

pepper

olive oil

sour cream and paprika to serve (optional)

Trim the end off the zucchini, peel the onion then coarsely grate both. Put them into a colander and sprinkle over some salt. Toss and leave while you prepare the rest.

If using fresh corn, peel and remove the kernels from the cob. If using frozen/can make sure it is defrosted and well drained.&nbsp;

Coarsely grate the mozzarella and grate the parmesan relatively finely.&nbsp;

Squeeze as much liquid as you can from the zucchini and onion and discard the liquid. Put the drained zucchini and onion in a bowl with the corn, mozzarella, parmesan, egg, flour, baking powder and pepper. Mix well so well combined and ingredients seem pretty evenly distributed, without breaking up the zucchini too much.

Warm a thin layer of olive oil in a medium skillet/frying pan over a medium heat (you can do more/less at once in a smaller/bigger skillet, as you find easier to manage). Put spoonfuls of the mixture into the skillet and press them down with a spatula/fish slice to gently flatten.

Leave the fritters to cook a couple minutes (around 3, but will depend a little on pan/heat) until you can see the underside starting to brown. Turn over and cook a couple more minutes on the other side. Remove from the pan and set aside, ideally covered, while you cook further batches.&nbsp;

Suggest serving with a little sour cream and paprika on top or just as they are.

Whipped Sweet Potatoes Recipe

Wash and peel potatoes and cut into chunks. Place in a steamer basket over a pot of boiling water (the water shouldn&#39;t touch the bottom of the steamer basket), cover, and cook for 15 to 20 minutes or until sweet potatoes are tender when pierced with a fork or knife.Note: If you don&#39;t have a steamer basket, you could boil the sweet potato chunks. Place the sweet potato chunks into a large pot and cover with cold water (there should be an inch or two of water above the potatoes, basically ensuring that they are fully submerged and covered by the water). Bring to a boil and cook for 15 to 20 minutes or until tender. Drain. Note: As you are boiling the potatoes, reduce the heat, if necessary, while still maintaining a boil.

Carefully remove potatoes from the steamer basket and place in a mixing bowl. Use a hand mixer to whip. Start on low speed to just break up, increasing the speed a little as you whip. Alternatively, you could give them a head start by simply mashing with a potato masher before using a mixer.

Melt butter in a saucepan over medium-low heat. Once melted, remove from heat and add heavy cream, salt, black pepper, cinnamon and nutmeg. Whisk to combine. Pour over sweet potatoes and whip again, just until creamy.

Transfer whipped sweet potatoes to a serving dish and garnish, if desired, with more butter, parsley and/or chives. Serve and enjoy!

Microwave Corn on the Cob in Husk

Place the ears of corn (with the husks on!) in the microwave.• For 1 cob: Microwave for 3 minutes on full power. If it’s a larger cob, it may take 4 minutes.• For 2 cobs: Microwave for 5 ½- 6 minutes on full power.• For 3 or 4 cobs: The general rule of thumb is to add 2 minutes for each additional ear of corn - 8 minutes for 3 microwaved on high, 10 minutes for 4 cobs. Check for doneness, and then continue cooking in 30-second increments as needed, especially if you want the corn softer.To ensure that the corn is fully cooked, you can check the internal temperature is around 160-170ºF/71-77Cº, or peel back the husk slightly to visibly check. Note that the power level of your microwave can affect how much time it takes.

Use a kitchen towel, oven mitt, or tongs to remove them from the microwave. Slice off the bottom 1/2 inch from the cob and slide the corn from the husk and silk. It should come out easily.

If you&#039;ve never had a grilled salad before, now&#039;s the time to try. This delicious grilled romaine lettuce is packed full of flavor and is a great base for a summer salad.

5 Minute Grilled Romaine Lettuce

romaine lettuce (medium-sized)

tsp sea salt (or

lemon juice (just a squeeze, if wanted)

Preheat your outdoor grill or grill pan to medium-high heat.

Remove any damaged leaves from the lettuce, then slice the head in half (vertically, lengthwise). Wash the lettuce halves in a bowl of water to remove any dirt or sand. Once they’re rinsed well, pat the lettuce dry.

Brush the lettuce halves with oil and sprinkle with salt and pepper.

Prep the lettuce

Brush some oil on the grill pan or grill grates (if using). Grill the lettuce leaves on medium-high heat. Place the cut side down first for about 2-3 minutes, then flip and cook for another 2 minutes.

To get grill marks, add a lid as soon as you put the lettuce on the grill to achieve a good sear and give the grilled romaine lettuce beautiful black char marks. You can also use a spatula or tongs to press down on the leaves to char them.

Grill

Remove the grilled romaine lettuce from the grill and add a touch more salt and pepper to each half, if you want. Drizzle with lemon juice for added brightness. Use a grater to generously shave fresh parmesan on each half and enjoy.
