Cut each avocado half into five wedges. Lightly beat eggs in a shallow bowl. Combine breadcrumbs and parmesan in a second shallow bowl. Add avocado wedges to egg and toss to coat, then coat in breadcrumb mixture. Spray generously all over with cooking spray.
Step 3
Taking care, place avocado fries in the air fryer basket; cook for 12 minutes, turning halfway through cooking time, or until golden.
Step 4
Meanwhile, to make lime dipping sauce, combine yoghurt, lime rind and juice in a small bowl. Season to taste.
Step 5
Sprinkle avocado fries with salt flakes and serve with lime dipping sauce.
