These Instant Pot small potatoes are amazing! So perfectly cooked and tender, they are a perfect summer side dish! This is the easiest method of cooking baby potatoes, period!

Instant Pot Small Potatoes

Put water and small potatoes in the Instant Pot. Close the lid and turn the valve to a Sealing position.

Press the "Pressure Cook" or "Manual" button and set the time to 8 minutes on High pressure. When it's done cooking, quick release (QR) the steam.

Add butter, dill and salt and pepper to taste.

Healthy Potato Salad with all traditional ingredients but not drowning in cups of mayo. Creamy, flavorful and a must at any summer gathering.

lbs baby potatoes (Yukon gold or red potatoes)

eggs (large)

pickles (sauerkraut or fresh cucumber, diced)

tbsp red onion (finely chopped)

tbsp dill (finely chopped)

tbsp yellow mustard

tbsp any light colour vinegar

plain yogurt (2%+ fat)

mayo

salt

tsp black pepper

To cook potatoes and eggs on the stove: In a medium pot, add potatoes, eggs and enough cold water to cover. Place lid on top and bring to a boil on high heat. Reduce heat to low and cook for 7 minutes. Remove eggs with a slotted spoon into a bowl with cold water. Keep cooking potatoes more depending on size: baby - extra 10 mins, medium - 20 mins, large - 25 mins. Or until fork tender.

To cook potatoes in Instant Pot: To 6 or 8 quart Instant Pot, add 1 cup cold water, basket or trivet and place potatoes on top. Cook on High Pressure with Quick Release: baby potatoes - 10 mins, medium 12 mins, large - 15 mins. Then you will have to make Instant Pot eggs separately or boil them on the stove for 7 minutes.

Drain potatoes and let cool for 20 minutes uncovered.

In the meanwhile, prep and add to a large salad bowl: pickles, red onion, dill, mustard, vinegar, yogurt, mayo, salt and pepper.

Chop the eggs and add to the bowl.

Cut potatoes into desired size pieces - some like chunky potato salad (cut into 2 inch cubes) and some more mushy (diced potatoes). Add to the bowl and gently stir salad with large spoon.

Chill for at least 3 hours or overnight before serving.

Serve cold with corn on the cob, grilled chicken breast or turkey burgers.

Arrange a rack in the middle of the oven and heat the oven to 425ºF.

Halve 2 pounds baby Yukon gold or red potatoes. Finely chop fresh rosemary or thyme leaves until you have 2 tablespoons.

Place the potatoes on a rimmed baking sheet. Drizzle with 2 tablespoons olive oil and sprinkle with the herbs, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper. Toss to coat, then arrange the potatoes in a single layer cut-side down.

Roast until the potatoes are lightly browned on the bottom and they easily release from the pan with a flat spatula, 20 to 25 minutes. Toss the potatoes and roast until browned all over and tender, about 5 minutes more.

Cut the beef into 1 1/2-inch chunks. Preheat a large frying pan over medium-high heat and add a few tablespoons of oil. Once the pan is hot, add the cubed beef, season generously with salt and fry for 7 to 10 minutes, until well browned all over. Transfer the beef into a large soup pot. Deglaze the frying pan with 1/2 cup water and add the liquids to the soup pot.

Into the same frying pan, add 1 tablespoon cooking oil and the carrots, celery and onion. Saute the mixture over medium heat until the onions are translucent, about 4 to 5 minutes. Once the onion is tender, add the garlic and cook for 1 more minute. Transfer the mirepoix mixture into the soup pot. Into the frying pan, add the butter and allow it to melt before adding the mushrooms. Saute the mushrooms for 4 to 5 minutes, until well browned all over. Season the mushrooms with salt and then add the flour. Toss the mushrooms in the flour so they're evenly coated and cook for 1 minute; transfer the mushrooms into the pot.

To the soup pot, add the red wine, tomato sauce, Worcestershire, beef broth, spices and herbs. Season generously with black pepper and abou 1 1/2 tsp salt. Cover the pot with a lid and bring to a boil over high heat. Once boiling, reduce the heat to low and continue simmering the soup for 1 to 1 1/2 hours, or until the beef is tender.

Add the potatoes and frozen peas; if using fresh peas, add them 10 minutes later. Cook the potatoes for 20 minutes, or until fork tender. Garnish the stew with chopped parsley and enjoy.

Optional: for a richer stew, add the potatoes and continue cooking for an additional hour, bringing the total cooking to 2 or 2 1/2 hours.

Spicy, salty, tangy - these delicious baby potatoes are a delight to have with simple rice &amp; dal or chapathis for your weekday meal or even a party. Served as party starters or as a side to pulaos, this one will be a hit for sure!

Thoroughly clean the baby potatoes. Do not peel them. Set aside.

Bring a pot of water to a boil, add some salt and toss in the potatoes and boil them till they are tender but not mushy. Depending on the size of the potatoes it should take 7-10 minutes. Drain and keep aside

In a wide based wok/kadai heat the oil till it smokes (this is an important step as it helps tone down the sharp flavour). Reduce the heat and add the mustard seeds. When they stop spluttering, add the cumin seeds.

Add the 2 tablespoons of the pickle along with some of its gravy. Reduce the heat to prevent burning. Add the boiled potatoes and the chilli powder if required. Toss in the turmeric powder and the tamarind juice. Sprinkle the chaat masala if desired

Add the chopped coriander and cook till the potatoes absorb the flavours and the mixture looks dryish. There is no need of adding salt as the pickle has salt so sprinkle some only if necessary

A quick and easy side dish that’s boiled quickly in the Instant Pot and then sautéed for a roasted finish. Creamy on the inside and crisp on the outside, these small potatoes make a perfect side dish for any main.

Easy Instant Pot Baby Potatoes

Add water, salt and potatoes into the Instant Pot.

Secure the lid and pressure cook on High for 6 minutes.

Once the 6 minutes is up, quick release the steam.

When all pressure has been released and the pressure valve has dropped, open the lid, drain the potatoes in a colander and dry the inner pot. Be sure to use an oven mitt to remove the inner pot as it will be very hot.

Return the inner pot to the Instant Pot, turn on the Sauté function and wait for it to say &quot;Hot&quot;.

Add butter, olive oil, dried rosemary, garlic, salt and pepper. Mix together.

Add the baby potatoes to the butter mixture and lightly brown them making sure to rotate them on all sides.

Remove the potatoes from the Instant Pot, let them cool for a couple of minutes, then serve. Optionally, drizzle some of the remaining butter mixture on top of the potatoes for extra flavor. Enjoy!

Place butter, garlic and dried basil into a small saucepan. Melt butter over medium heat, turn temperature down to low and slowly cook garlic until soft, about 15 to 20 minutes.

Meanwhile, bring a large pot of salted water to a boil and add halved baby potatoes. Cook until potatoes are almost fork-tender but still retain a bit of firmness. Drain and keep warm.
