This easy overnight oats recipe is a healthy simple breakfast that you can make ahead for busy mornings and customize with many add-ins and toppings!

Easy Overnight Oats

rolled old fashioned oats

milk of choice

non-fat Greek yogurt

chia seeds

vanilla extract

strawberry jam

peanut butter

strawberries

peanuts (crushed)

apples

pecans (chopped)

maple syrup

cinnamon

½ banana (sliced)

Nutella

hazelnuts (crushed)

chocolate chips

coconut

almonds (chopped)

Place all ingredients into a large glass container and mix until combined.

Cover the glass container with a lid or plastic wrap. Place in the refrigerator for at least 2 hours or overnight. Toppings can be added the night before or immediately before serving.

Uncover and enjoy from the glass container the next day. Thin with a little more milk or water, if desired.

Rinse the can of beans in a colander and let drain as you prepare the eggs.

In a large bowl, combine the eggs, milk, a pinch of salt, and pepper. Whisk until fairly smooth.

Heat a large skillet over medium-low heat. Once hot, add the butter and let it melt. Spread the butter over the surface of the skillet with a spatula. Pour the whisked eggs into the skillet and gently fold them with the spatula as they begin to set. Avoid over stirring the eggs.

When the eggs are bout 75% set (still soft, moist, and fluid around the edges), add the drained beans and chopped green chiles (no need to drain the chiles). Gently fold the beans and chiles into the scrambled eggs. Drizzle taco sauce over the eggs, then top with pepper jack.

Place a lid on the skillet and let it warm for about 5 more minutes, or until the eggs are fully set and the cheese on top is melted.

While the eggs are warming through, slice the green onions and dice the tomato. Top the eggs with the fresh tomato and green onion just before serving.

The cream cheese filling is tasteless to me.  Not sure why?  I'm wondering if powdered sugar would be better?  Was hoping for more of a taste of like a pumpkin roll.  Not sure if it was because it was cooked, the egg or what.   The bread is good though.  Also wondering if adding cinnamon would add some kick to the bread as well?  I might try 3 tsp the next time in the dry ingredients mix!

Really loved it. Was out of pumpkin pie spice so added cinnamon, clove, turmeric, ginger and fresh graded nutmeg. Also added a pinch of salt to the cream cheese mix. Will be making it again soon.

In a large skillet, melt the butter over medium heat. Add the oats and toast for 5 to 7 minutes, stirring occasionally, until the oats start to smell fragrant and nutty.

In a large, heavy-bottomed pot, add the milk, kosher salt, cinnamon, and water. Bring to low boil over medium heat. Add the toasted oats and stir gently to combine, then cover the pot, turn off the heat, and allow to sit for 7 minutes.

After 7 minutes, the oats are ready to serve. The texture will be a chewy texture, not creamy as with the stirred method. To serve, top with real maple syrup. Add toasted almonds or walnuts and/or additional milk if desired. Leftovers can be kept refrigerated in a sealed container for up to 5 days.

In a high-speed blender, add the banana, mangos or pineapple, blue spirulina powder, and 1 cup milk. Blend until combined and consistency is thick and smooth. If preferred, add more milk to thin the blue smoothie to your desired consistency.

Divide the smoothie into a 2 bowls ( I used these coconut bowls ). Drizzle with honey or maple syrup, then top with your preferred toppings.

NOTE: I like to swirl my smoothie bowls with another kind of smoothie - like acai or pitaya smoothie!

If you’ve got potatoes not mash, cook them in boiling water until tender. Drain well and press through a potato ricer or mash. Weigh out 250g and cool.

Sieve the flour and baking powder onto cooled mash. Whisk eggs and milk together and add to the potato mix with the chives. Whisk the batter until smooth.

Heat a large non-stick frying pan over a medium heat. Add ½ tsp sunflower oil and a dot of butter. When the fat is hot, start to cook the pancakes. Add 1 tbsp of batter for each pancake and cook 4 at a time. Cook for about 1 min until the underside is golden brown and small bubbles appear.

Flip the pancakes and cook until golden. Remove from the pan and keep warm while you cook the remaining pancakes in the same way, adding a tiny bit of oil and butter to the pan as and when needed. Serve the pancakes in stacks with creamy scrambled egg and crisp rashers of streaky bacon.

Prep the vegetables

 Thinly slice the red onion. Large dice the bell pepper.

Prep the eggs or tofu

 In a medium bowl, crack the eggs and whisk them together until well-beaten. Stir in the shredded cheese, fresh herbs, kosher salt, and plenty of fresh ground pepper. Or, complete Step 1 of the Tofu Scramble.

Cook the vegetables

 Heat the olive oil over medium high heat. When hot, add the onion and peppers. Cook 3 to 4 minutes until tender and just starting to brown, stirring occasionally. Reduce heat to low. Add a pinch of salt and the baby greens. Cook for 30 seconds until wilted. Remove and set aside.

Cook the eggs or tofu

 Keep heat on low. Pour in the eggs. Cook for 20 to 30 seconds. When the eggs just start to set, use a flat spatula to scrape sections of eggs, gently stirring constantly until cooked but still soft, about 1 minute. Or, complete Step 2 of the Tofu Scramble.

Add the vegetables and serve

 Add the veggies back to the pan with the eggs or tofu. Stir for a few seconds until combined and warmed. Serve immediately.

Spray the cups of a 12 cup muffin pan; set aside.

Line each cup with a slice of ham. Trim the slices if they are too large.

Add about 1 tablespoon of cheese on top of the ham.

Bake for 12 to 15 minutes. Ham and egg cups baked for 12 minutes will have a runny yolk. The closer to 15 minutes of cooking time will have eggs with harder yolks.

Remove the pan from the oven. Sprinkle with fresh parsley.
