Best Chicken fajitas

lime juice

garlic clove, (minced)

cumin

chili ((adjust to your desired spice preference))

cilantro ((optional))

(650 grams) chicken thighs, (skinless and boneless)

large bell peppers

red onion (thinly sliced)

avocados, (peeled, seeded and sliced)

In a large shallow bowl, combine lime juice, oil, garlic, cumin, salt, chili and cilantro; mix together. Add the chicken thighs and If time allows, let marinate for 30 minutes.

Heat a large skillet or pan (12-inch | 30cm) on medium-high heat until smoking. Add a drizzle of olive oil to lightly coat the bottom of the pan. Sear the chicken on both sides until golden, charred and cooked right through (about 8 minutes per side, depending on the thickness of your fillets). Flip them a couple of times while cooking so they get a nice even char.Transfer chicken to a warm plate, loosely tent with foil and let rest.&nbsp;

Add the peppers and onions to the skillet (drizzle with a little extra oil only if needed), and cook until the onion is soft and the peppers are slightly charred and cooked to your liking. Season with salt and pepper.

Slice chicken into strips.Serve with warmed tortillas, chopped cilantro and sliced avocado (plus your desired fillings).

Easy Chicken Fajitas

chicken breasts

onion

lime

bell peppers (red, yellow, green or orange)

olive oil (divided)

chili powder

smoked paprika

onion powder

black pepper

Cut onion into slivers &amp; slice peppers.

In a separate bowl, combine 1 tablespoon olive oil, juice of 1/2 lime, chili powder, paprika, onion powder, pepper, cumin and salt. Cut chicken into strips and toss with the spice mixture.

Preheat 1 tablespoon olive oil over medium high. Add 1/2 of the chicken and cook until just cooked, about 3-5 minutes. Remove from pan and set aside. Repeat with remaining chicken.

Set chicken aside and add 1 tablespoon oil to the pan. Drain onions well and cook 2 minutes. Add in sliced peppers and cook an additional 2 minutes or just until hot. Add chicken back to the pan and stir to combine.

Squeeze additional lime overtop and serve over tortillas.

This chicken fajita marinade is a blend of olive oil, lime juice and spices, all mixed together to form the perfect flavoring for zesty fajitas. You can also use this marinade to make Mexican style chicken for burritos, nachos, tacos and more!

Chicken Fajita Marinade

olive oil

Place the olive oil, lime juice, water, sugar, kosher salt, cumin, garlic, smoked paprika, onion powder, chili powder and pepper in a bowl.

Stir to combine.

Add 1 pound of sliced chicken, 1 1/2 cups sliced bell peppers and 1/2 cup sliced onions to the bowl and toss to coat.

Marinate the chicken for at least 30 minutes or up to 8 hours.

I'm 10 and I made them my self they are super delicious and the chicken was flavorful my whole family loves them

The chicken fajitas were delicious. So easy to make. I used red, yellow and orange peppers and a large sweet onion. The spices complimented the fresh squeezed lime juice. My son cooked the veges and chicken on a flat top. A fun and different meal.

Made this tonight,  and the family loves it! I gave it 4 stars because I fell like the pepper to chicken ratio needs some adjustments. A TON of peppers and onions vs a small amount of chicken, and not enpugh seasoning for our taste, I added some paprika and more cumin after I added the chicken to the peppers at the end.

I love it, but I would recommend adding less oil. But everything else is amazing!

Made this tonight with my best friend. I was getting confused because as I was cooking I realized the entire recipe only calls for 2 tsp of cumin, the only spice. After following the recipe it turned into grilled chicken with grilled vegetables, with almost no flavor. Highly disappointing. Had to add 1/4 cup of taco seasoning, a couple more teaspoons of cumin, some garlic powder, and salt to revive it. Definitely was yummy after all that.

Chicken Fajitas Will Get Your Fiesta Started

Chicken fajitas are an easy and flavorful weeknight meal. This Mexican recipe that everyone will love can be whipped up in less than 30 minutes. Watch the video above!

Chicken Fajitas - Easy & Flavorful!

onion (thinly sliced)

bell peppers (thinly sliced)

garlic powder

paprika

oregano

tortillas

sour cream

pico de gallo

avocado

Add the fajitas seasoning ingredients to a small mixing bowl and stir together.

Generously sprinkle the fajita seasoning on both sides of the chicken and use your fingers to press it into the chicken.

Sear

Heat the oil in a large skillet over medium heat. Sear the chicken breasts for about 7-8 minutes on each side.

Slice

While your chicken is cooking, cut the bell peppers and onion into thin slices.

Saute

Once the chicken has finished cooking, remove it to a plate and let it rest for a couple of minutes. Add the bell peppers and onion to the same skillet over medium heat and saute for 4-5 minutes, stirring frequently.

When the bell peppers are just about done sauteing, slice the chicken breasts into strips.

Add the chicken back into the skillet, add a squeeze of fresh lime juice and stir everything together.

Serve

Serve immediately with tortillas and extra toppings such as sour cream, pico de gallo and guacamole.

CHICKEN FAJITAS | the best easy mexican recipe + homemade seasoning

All the delicious flavors of traditional fajitas without all the extra hassle! Just dump everything in the slow cooker and let it simmer to tender well seasoned perfection.

Slow Cooker Chicken Fajitas

(14.5 oz) can petite diced tomatoes with green chilies

bell peppers ((preferrably 1 red, 1 yellow and 1 green) cored and sliced)

garlic, (minced)

tsp chili powder

tsp cumin

tsp ground coriander*

tsp pepper

Tbsp honey

flour tortillas

Cilantro, sour cream, salsa, guacamole cheese

Pour half of the canned tomatoes into the bottom of a slow cooker and spread into an even layer. Top with half of the peppers and half of the onions. Sprinkle garlic in. Top with chicken breasts.

In a bowl whisk together chili powder, cumin, paprika, coriander, salt and pepper. Evenly sprinkle half of the seasoning over chicken breasts then flip chicken and sprinkle in remainder. Top with remaining half of the tomatoes, then layer in remaining peppers and onions.

Cover and cook on HIGH heat about 2 1/2 - 3 hours or low heat 4 - 6 hours, until chicken has cooked through and veggies are tender.*

Remove chicken, and cut into strips, or shred. Ladle out 1 cup of the broth in slow cooker (mostly tomato liquid) and discard.&nbsp;

In a small bowl whisk together lime juice and honey and add to slow cooker along with chicken and season with additional salt to taste if desired (I sometimes like to add 1/4 cup chopped cilantro too here but this is optional). Gently toss. Serve warm in warmed tortillas optional toppings.

This spicy, savory and cheesy Chicken Fajitas Casserole is a staple chicken dinner recipe. It&#039;s such an easy way to make chicken fajitas that will have everyone asking for the recipe!

Chicken Fajitas Casserole

chicken breasts, (shredded)

green bell pepper,

red bell pepper,

yellow onion, (thinly sliced)

cream cheese,

cheddar cheese

fajita seasoning mix

salt and fresh ground pepper, (to taste)

cilantro (for garnish)

Preheat oven to 350˚F.  Lightly grease a 9x13 baking dish with cooking spray; set aside.  Shred the baked chicken breasts and then transfer to a large mixing bowl; set aside.

Heat olive oil in a skillet set over medium-high heat.  Add strips of peppers and onions to the hot oil; sprinkle with salt and cook for 4 to 5 minutes, or until softened. Stir frequently.  Remove from heat and add to the chicken. Set aside.

In a large bowl combine cream cheese, HALF of shredded cheese, fajitas seasoning mix, salt, and pepper; mix until thoroughly combined.

Add sour cream mixture to the chicken and peppers; mix until everything is well combined.

Transfer chicken mixture to previously prepared baking dish and sprinkle with remaining shredded cheddar cheese.

Bake for 25 to 30 minutes, or until hot and bubbly, and cheese is melted.  Remove from oven and garnish with chopped cilantro or parsley. Serve and enjoy!

Honey-Lime Chipotle Chicken Fajita Bowls

Tablespoons lime juice

Tablespoon honey

oil ((vegetable or canola oil))

white vinegar

chili powder, garlic powder, liquid smoke

cayenne pepper ((optional))

½ red onion (, roughly chopped)

red bell pepper

green bell pepper

corn (, fresh, canned or frozen-thawed)

Tablespoons oil ((vegetable or canola oil))

red onion (, chopped)

garlic (, minced)

long grain white rice ((*see note below))

chicken broth

can black beans

juice from 1-2 limes

cilantro (, chopped)

sour cream ((or plain Greek yogurt))

sauce chipotle chiles

salt (,

cilantro

Mix marinade ingredients together.&nbsp;

If you're using thick chicken breasts, pound them thin with a meat mallet or rolling pin, or slice them horizontally in half.

Place chicken and veggies in separate ziplock bags.&nbsp; Pour half of the marinade mixture into each bag.

Refrigerate vegetables and chicken for one hour, or up to 8 hours.

When ready to cook, heat 2 tablespoons of oil in a large pan over medium heat.&nbsp;

Add onion and saute for 2-3 minutes or until tender.&nbsp;

Add the rice and cook, stirring constantly, until golden, about 5 minutes.&nbsp;

Add garlic, cumin and salt and cook for 30 seconds.&nbsp;

Add chicken broth and bring to a boil.&nbsp;

Once boiling, stir in the black beans, reduce heat to low, cover, and simmer for 20 minutes.&nbsp;

Remove from heat. Remove lid and squeeze juice from 1 lime over the rice, but do NOT stir. Return lid and allow to rest for 5-10 minutes.&nbsp;

Then, remove lid, sprinkle with cilantro and fluff gently with a fork. (Don't "stir" it, just fluff it with a fork so it doesn't get mushy.)

For the Rice:

While the rice is cooking, prepare chipotle cream sauce by mixing all ingredients together. Refrigerate until ready to serve.

Chipotle Lime Crema:

Heat 2 tablespoons oil in a large skillet over medium high heat. Once skillet is hot, remove chicken from ziplock bag, discard marinade and add to skillet.&nbsp;

Cook for 2-3 minutes on one side, or until nicely browned. Turn chicken over, cover and reduce heat to medium.&nbsp;

Cook until chicken is cooked through (about 5 more minutes, depending on the thickness).&nbsp;

Remove to a cutting board and allow to rest 3-5 minutes before slicing.

For the Chicken:

While chicken is resting, add another splash of oil to the same skillet over medium heat.&nbsp;

Drain vegetables in a colander to remove excess marinade.&nbsp;

Add vegetables to the hot skillet and saute, stirring occasionally, for a few minutes, until warmed through. I like them to still have a little crunch.

For the Fajita Vegetables:

&nbsp;In bowls, layer rice, vegetables, and chicken.&nbsp;Top with Chipotle Lime Crema.

Assembly:

(8 oz) can crushed pineapple

juice of 1 lime, about 1/4 cup

garlic cloves,

tbsp apple cider vinegar

tsp salt

jalapeño, seeded, minced

tbsp worcestershire

cilantro leaves

chicken

green bell pepper, ½” sliced

red bell pepper, ½” sliced

yellow bell pepper, ½” sliced

lime wedges

queso fresco or cotija cheese

In a medium bowl, mix together all the ingredients for the marinade.Mix the chicken into the bowl and let it marinade for 30 minutes at room temperature or cover it and place it in the refrigerator for up to 4 hours.Heat 2 tablespoons of the the oil in a large cast iron skillet set over medium-high heat

Working small batches add the chicken to the pan and sauté until the chicken is cooked all the way through.When the chicken is cooked add the remaining 2 tbsp oil to the pan and turn up the heat to high

Once oil is smoking sauté the red onions and bell peppers on until they are just tender and turning dark brown in some spots

Add chicken back into the pan and mix everything together.Serve the fajitas with warm tortillas, lime, cilantro, avocados and cheese if desired.
