These easy and delicious Funeral Potatoes&nbsp;(also called cheesy potatoes) are a cheesy hash brown casserole that makes the perfect warm side dish for any meal, holiday dinner, or potluck.

Funeral Potatoes

hash browns (, diced or shredded will work, THAWED*)

sour cream

can cream of chicken soup ((or homemade))

Tablespoons butter (, divided, melted)

salt

black pepper

onion

cheddar cheese

corn flakes cereal

Allow potatoes to thaw in your fridge overnight, or spread them on a baking sheet and warm them in the oven at 200 degrees for about 20 minutes, until thawed.

Preheat oven to 350 degrees F.

Combine sour cream, cream of chicken soup, 6 Tablespoons of melted butter, salt, pepper and dried onion in a bowl. Mix well.&nbsp;

Add potatoes and shredded cheese and stir to combine. Spoon mixture into a single layer in a 9x13'' pan.

Add cornflakes to a large ziplock bag and crush gently with your hands or a rolling pin.&nbsp;

Add remaining 4 tablespoons of melted butter to the crushed cornflakes and combine well. Sprinkle mixture over potatoes.&nbsp;

Bake uncovered at 350 F for 40-50 minutes.

Serve these with baked ham, oven roasted turkey, or flank steak.

Preheat oven to 350°F.

Combine all ingredients in a large bowl reserving ½ cup of cheese for topping.

Place in a greased 9×13 casserole dish and top with reserved cheese.

Ensure that your hash browns have thawed. (Otherwise they take a very long time to bake.) You can defrost them in the microwave to speed up this process.

Pat them dry of excess water.

Set ½ cup of cheddar cheese aside.

Combine all remaining ingredients in a large bowl.

Place it in a greased 9x13 casserole dish and top with remaining cheese.

Bake for 35 minutes, uncovered.

Increase heat to 375 and bake for an additional 10 minutes, until the top begins to crisp and brown slightly.

Remove from the oven, let it sit for 10 minutes, and serve!

Preheat oven to 350° degrees F.

Combine sour cream, cream of chicken soup, 6 tablespoons of melted butter, salt, pepper and dried onion in a 10” or larger cast iron skillet.

Add the turnips and shredded cheese to the skillet, stir to combine.

In a small bowl mix together the crushed pork rinds and the remaining 4 tablespoons of melted butter. Place the pork rind mixture over the top of the turnips.

Transfer to the oven and bake for 45-55 minutes until the top is golden and the turnips are tender.

Dump the potatoes into a large mixing bowl with peppers and onion.

Add all the cheese sauce ingredients to a blender and process until completely smooth.

Pour the cheese sauce over the potatoes, peppers, and onions. Use a large spoon or rubber spatula and stir until everything is mixed and well combined.

Add the mixture to a 9&#215;13 nonstick baking dish or line one with parchment paper. Place in the oven and bake, uncovered, for 50 mins. to 1 hour.

Pretty tasty and very easy to make. But, mine was still cold in center at 40 min. It ended up taking a little over 90 minutes before it was done.  I checked my oven temp in case it was off; nope, thermometer said 350F. Shane: Did you thaw the frozen hash browns before making the recipe?

That said, my family liked it and described it as "shredded scalloped potatoes," which is not a bad thing because we love scalloped potatoes! I'll make it again, but will probably that the potatoes first. We ate it for dinner and had leftovers for breakfast! Very versatile comfort food for fall.

Cheesy Hashbrown Casserole

lb frozen hashbrowns (thawed)

butter (melted)

oz cream cheese (room temperature)

(10 1/2 oz cream of chicken soup, optional)

cream

flour

tsp black pepper

paprika

garlic (minced)

corn flakes (crushed)

Grease a 13x9 baking dish and set it aside.

In a measuring cup combine cream and flour, whisk until smooth. Set aside.

In a large mixing bowl, combine sour cream, cream cheese, salt, pepper, onion, garlic, paprika, and 1/2 cup of the melted butter. Mix until combined.

Add the hash browns and the cream mixture, also the cream of chicken soup if using, stir to combine. Pour into the prepared 13x9 baking dish.

Sprinkle 1 cup of grated cheddar over the top.

In a small bowl, combine 1/4 cup melted butter with crushed corn flakes. Sprinkle over the top of the casserole.

Topping:

Cover dish with foil and bake for about 60 minutes.

Remove foil and bake an additional 5-10 minutes until topping is golden and crunchy.

Serve hot.

sharp cheese (divided)

pkg. shredded hash browns (frozen)

Spray the slow cooker with non-stick spray, set aside. In a extra large bowl, stir together the sour cream, 3 cups of the cheese, salt, pepper and onion powder. Add in the frozen hash brown and stir until there is sour cream mixture coating all the hash browns.

Add the cheesy hash brown mixture to the sprayed slow cooker.

Cover and cook on HIGH for 3 hours and 20 minutes. Add remaining cheese (1 cup) and put the lid back on until the cheese melts.
