One of our go-to dinner recipes when we are in the throes of busy school schedules and extracurricular activities and I haven't planned ahead is this Homemade Hamburger Helper Cheeseburger Pasta Skillet made with browned ground beef, shredded cheddar cheese, and cavatappi or macaroni noodles.  It's may not be fancy, but it's always easy, satisfying, and a hit with my family!

Heat a large skillet over medium high heat,...

Heat a large skillet over medium high heat, then add the ground beef and break it up, cooking and stirring until the meat is no longer pink.  Drain any remaining fat in the pan.

Sprinkle the cornstarch, paprika, garlic powder, onion powder,...

Sprinkle the cornstarch, paprika, garlic powder, onion powder, salt, sugar, and pepper over the browned meat and stir well to evenly distribute the spices.  Add the hot water, milk, and pasta, then bring to a boil.  Cover with a lid, reduce heat and simmer for 8-11 minutes, or until the pasta is al dente.

Sprinkle the grated cheddar cheese over the cooked pasta and stir until melted into the sauce.  Remove from the heat, and let stand for a few minutes until the sauce thickens a bit.  Garnish with freshly chopped parsley, if desired, then serve.

Press SAUTE on the Instant Pot and when it reads Hot, add olive oil and ground beef. Break up beef with a spatula, and cook until no longer pink

Stir in the sea salt, garlic powder, onions and pepper, then hit CANCEL&nbsp;

Layer the uncooked macaroni on the beef, pour the beef broth over and around the macaroni, and top with the butter

Place lid on pressure cooker, turn vent to Sealing position, and hit PRESSURE COOK for 4 minutes. Pot will take a few minutes to pressurize, then cook for 4 minutes and beep when done

Turn vent to Venting for a quick release, and when pin drops, remove lid, and stir. Stir in the cream, and gradually stir in the cheese, about 1 cup at a time, stirring well after each cup is added

Add in the cream and cheese and stir until all the cheese melted. Add back in ground beef, cook for 2 to 3 minutes more to re-heat ground beef and serve immediately!

This Cheeseburger Casserole is comfort at it's best and is prepared in a single pot on the stove top! It's cheesy, meaty, and a delicious homemade version of Hamburger Helper!

One Pot Cheeseburger Casserole

cheddar cheese (at room temp. Separated.)

lb. Ground Beef (85% lean)

Salt/Pepper (to taste)

onion

garlic (minced)

Worcestershire sauce

tomato paste

(16 oz.) box elbow macaroni (*uncooked*)

sour cream (at room temp)

½ cup whole milk (at room temp)

Parsley (to garnish)

Shred the cheese and set it aside. It should be at room temperature when added to the pasta later.

Season the ground beef with desired amount of salt and pepper.

In a large pot over medium heat, cook and crumble the ground beef along with the onions. Drain any excess grease.

Add the minced garlic and cook for an additional minute.

Add the Worcestershire sauce and the tomato paste and stir until well-combined.

Add the beef broth and the uncooked macaroni, stir to combine. Bring to a gentle simmer over medium or medium/low.

Cover the pot and heat for 4 minutes. Uncover, stir briefly, replace the cover, and heat for 4 more minutes. At this point the macaroni should be just about cooked through.

Reduce the heat to low.

Stir in the room temperature sour cream and half of the milk. Only add the other half if desired.

Gradually sprinkle in 2 ½ cups of the shredded cheddar, stirring as you do so.

Once the cheese is melted and you have a uniform consistency, top with the remaining cheese.

Replace the lid and heat for an additional 2-3 minutes, until the cheese is melted.

Top with parsley and serve!

Brown ground beef and onion in the pan until cooked through- about 10 minutes.

Add in the seasonings, Worcestershire sauce, pasta, broth, tomato paste and water. Stir, cover and bring to a boil.

Once boiling, remove cover and reduce to a simmer, stirring occasionally for 12-14 minutes or until pasta is done and liquid is reduced by 3/4.

Move the pan off the heat and add in shredded cheese.

Stir until combined, taste for salt and pepper and add more as desired.

Add onion and garlic and sauté until tender, about 2 minutes. 

Add tomato paste and mix until well incorporated and season with salt, pepper and paprika.

Add milk, beef broth, and uncooked macaroni. Stir well and bring to a boil. Cover the lid and simmer over medium heat for 8-10 minutes until the pasta is tender. Make sure to stir occasionally to prevent the pasta from sticking to the bottom of the pan.

Add cheddar cheese and stir until melted and well combined. Sprinkle parsley on top and serve immediately.

Mix ingredients together in a bag or jar. When we are ready to make, brown up 1 pound of hamburger. Add in the mix and 1 c. water and 2 c. of milk. Cover the skillet and let the pasta cook. Stir in 1 c. of shredded cheddar cheese before serving. That's it!

Homemade Hamburger Helper {One Pot}

lb beef chicken

yellow onions, diced

garlic

In a large deep skillet, heat olive oil over med-high heat. Add onions and garlic, sauteeing for 2 minutes until fragrant. Add ground beef and cook until browned, another 2 min. Add celery and red pepper, sauteeing for another 2-3 min.

Add dried basil, oregano, salt and pepper, sauteeing another 30 seconds before adding broth and diced tomatoes. Stir to combine, then add dry pasta and bring to a boil, cooking on medium heat and stirring occasionally for about 15 minutes until pasta is completely cooked and most of the liquid is absorbed.

Stir in sour cream and cheese, then remove from heat. Top with parsley (optional), then serve and enjoy!

Stovetop instructions

Add olive oil to Instant Pot and turn to saute mode. When oil is hot, add onions, garlic and ground beef, breaking up with a spoon and sauteeing for 4-5 minutes until browned.

Add in remaining ingredients in order that they are listed except for sour cream, cheese and parsley, adding in pasta last.

Cook on high pressure for 3 minutes (Instant Pot will take about 15 minutes to preheat then cook the 3 minutes). Do a quick release of the pressure, then stir in sour cream and cheese, garnishing with parsley. Serve and enjoy!
