Fiery Easy Pickled Scotch Bonnet Peppers give a kick to everything from grilled meats, fish, soups, stews, legumes and sauces.

Easy Pickled Scotch Bonnet Peppers

Scotch Bonnet peppers

filtered water

white vinegar

garlic

sugar

bay leaves (optional)

dill (optional)

salt

Wearing gloves, rinse off Scotch Bonnet peppers and slice into evenly sized pieces (I left some whole and some sliced in pieces).

With your gloves still on, pack the peppers into your glass jars (or one very large tight-fitting lid). Add a clove of garlic to each jar. If using one large jar, add them all into that jar. Add in the bay leaves and dill (if using).

In a medium saucepan, combine water, vinegar, salt, and sugar.

Bring water to a low simmer and stir until sugar and salt are just melted (not boiling).

Remove vinegar mixture and using a ladle very carefully pour the mixture into the jars with peppers.

Process jars in a boiling water bath for 10 minutes.

Remove.  Cool and store in your refrigerator for up to 2 months.

These pickled Scotch Bonnet peppers are ready to eat in 24 to 48 hours.

You can pickle just about any vegetables with this simple brine with 3 ingredients -- soy sauce, vinegar and sugar! Quick, delicious and crunchy!

Jangajji (Vegetable Pickles)

cucumbers (Kirby pickling cucumbers, Korean cucumbers)

onion

green chili peppers

soy sauce

vinegar (any clear type

Clean and cut the vegetables into bite size pieces, any way you want.

Pack the vegetables in jars or glass containers.

Add 2 cups of water to a small pot along with 1 cup of soy sauce and 1/2 cup of sugar. Bring it to a boil, and gently boil for 2 to 3 minutes over medium heat, until the sugar is dissolved. Turn the heat off, and pour in 1/2 cup of vinegar. Adjust to taste if necessary.

Pour the hot brine over the vegetables. If the vegetables are tightly packed in the jar, you don&#039;t need to weigh it down. However, make sure all the vegetables are submerged in the brine.

Close tightly with a lid, and leave it out at room temperature for a day or 2. Then refrigerate.  The pickles can be eaten the next day or so of pickling, but they will taste better as they mature.

Optional: To keep the pickles longer, you can pour out the brine into a pot and boil it for a few minutes. You can do this after 3 or 4 days of pickling at which time the vegetables have released their water content and diluted the brine. This time, cool it and pour back over the pickles before refrigerating.

Pickling Spice is easy to make and a great way to use up spices you have on hand. Add it to pickles, corn beef, stews, rice, or use in brine to flavor meat.

In a small bowl, combine all your spices. Add some of the optional ones I listed for addition flavor.

Keep your pickling Spice in a glass jar with a tight fitting lid, and use within 6 months.

Pickled Peppers (Pao Jiao)

Chinese spirit or other hard liquid

Boil some water and let it cool down completely. Or you can use purified water.

Wash the green peppers, discard any spoiled ones. Set aside until completely drained.

Cut the top off and keep the pepper body only.

Sterilize the container is extremely important to prevent your pickled pepper been spoiled. My common solution is soak the jars in boiling water, then air-dry completely.

Place the pepper in the jar, place water, white spirit, white vinegar, slat and sugar in. Gently shake to make all the ingredients well combined.

Set aside and wait for 7 days until well pickled.

Japanese Cucumber Salad (Sunomono) made with soy sauce, vinegar, and a touch of sugar and spice is a healthy side dish packed with flavor!

Tbsp rice wine vinegar

tsp sugar

tsp chile oil

sesame oil

garlic, finely minced

cucumbers

peanuts

cilantro leaves

red chile flakes

Whisk the dressing together and be sure to taste it to adjust anything you like.

Finely grind the peanuts in a food processor using the pulsing button.  You want them to be very fine but be careful not to go too far and turn them into peanut butter!

Thinly slice the cucumbers on the diagonal.  If you would like to remove part of the peel first, you can run a zesting tool down the sides, or simply run the tines of a fork down the sides to create a decorative edge.

Put the cucumbers in a bowl and toss with enough dressing to coat thoroughly, you may not need all of it.  Toss with the crushed peanuts, sprinkle with chile flakes,and top with cilantro leaves.  Serve immediately or chill until ready to serve.  I like to serve this within a few hours of making, but it will keep overnight.

Quick Pickled Fennel is a zippy condiment that works with just about anything you&#039;ll pull off your grill this season.  It&#039;s great in salads, and I love to eat it straight out of the jar.  Practically zero calories and over the top flavor!

Quick Pickled Fennel

fennel

apple cider vinegar

fennel seeds

tsp yellow mustard seeds

tsp black peppercorns

Trim the top stalks from the fennel, reserving some of the fronds.  Trim the root end and peel any tough outer layers away.

Slice the trimmed bulb very thinly (1/8 inch) on a mandoline slicer, or with a very sharp knife.

Fit the fennel slices tightly into a wide mouth quart mason jar.  I like to add a few fennel fronds into the jar as well.

Put the vinegar and water in a small saucepan with the spices.  Heat to a boil, then pour everything into the jar with the fennel.  Make sure the fennel is completely covered with pickling liquid.  If not, add a little more water to top off.

Let cool at room temperature, then cap and refrigerate.  It&#039;s ready to enjoy as soon as it&#039;s chilled, and will keep up to a month, refrigerated.

Refrigerated Pickled Peppers Recipe - How to Make Refrigerator Pickled Peppers

Ingredients

3-4 cups chili peppers you can use any type of pepper here. The amount will vary depending on how you chop them.
2 cups white vinegar
4 garlic cloves chopped
3 tablespoons black peppercorns
teaspoon cardamom seeds
1 tablespoon ginger
2 bay leaves
2 tablespoons pickling salt

Instructions

Wash and dry the chili peppers. Cut the large ones up into small chunks or slice them into rings. Any small peppers you can leave whole, but poke holes in them to the pickling solution can enter the peppers. Pack them all into a sterilized quart jar.
To a pan, add all remaining ingredients. Stir.
Heat and bring to a quick boil, then reduce heat and simmer about 20 minutes.
Pour the hot brine into the jar, over the peppers, and seal with a sterilized, tight lid. Cool and refrigerate.
Let the peppers sit a week or two before using so they can get nicely pickled, though they are fine to eat right away. It is best to wait!

Grandma's Pickled Onions Recipe

How To Make Pickled Beets

beets (about 24 small,)

organic sugar

Tablespoon Pickling spice

Cups vinegar

water beets

After beets have cooked, peel, cut into chunks, and set aside.

Combine all ingredients excepts beets in a large sauce pan. Bring mixture to a boil; reduce heat. Simmer 15 minutes. Remove cinnamon sticks.

Pack beets into hot jars, leaving 1/4-inch head space.Ladle hot liquid over beets leaving 1/4 inch head space. Remove air bubbles. Adjust two-piece caps. Process jars 30 minutes in boiling water canner.

The recipe I am sharing today is vert poignant, as it was my mum&#x27;s recipe for Traditional Homemade Pickled Onions, and she made a few jars every November for the Christmas tea table. Why only make these in November? Well, in the UK you start to see small &quot;pickling onions&quot; in the greengrocers and supermarkets from October onwards, and with a view to the Christmas buffet table, and that ubiquitous cheese board, now is the time to make these pickled onions so they have time to &quot;mature&quot; for 6 weeks. If you make them in the first week of November, they will be wonderfully mellow but still crisp and crunchy by the time the festive period starts in earnest. 

These Traditional Homemade Pickled Onions WILL keep quite happily for up to a year in the pantry, as long as it is cool and dark, but they are best eaten with 6 months. Serve these traditional pickled onions with cheese, cold meats, pork pies, ploughman&#x27;s lunch as well as with quiches, flans and salads. They are also great when served with fish and chips, in the style of a proper &quot;Yorkshire Fish Supper&quot;.

Prep. Pour liquid from the beets into a large bowl or jar that won't stain, glass is perfect.

Chill. Cover and chill for 2 hours or longer before serving. That&#039;s long enough for the beet juice to color the eggs, and penetrate a bit. If you keep them for a day or longer the beet color will penetrate farther until the entire egg turns royal purple.

Serve. Enjoy them how you like (they make very colorful deviled eggs). They must be kept in the fridge.

Pickled Banana Peppers - Chili Pepper Madness

Well, I put the recipe to the test and I definitely feel it’s “award-winning.” Not only is this pickled egg recipe easy, but it’s incredibly tasty as well!

Kansas Award Winning Pickled Eggs

eggs (left on the counter for 4 days)

tbsp sugar

tbsp salt

tbsp minced garlic

tbsp crushed red pepper flakes

lime juice

Submerge eggs in water in a pot and bring the water to a hard boil. Boil for 2 minutes; then remove from heat, cover, and allow the eggs to sit for 8 minutes.

While the eggs sit, combine the sugar, salt, garlic, red pepper flakes, lime juice, and vinegar.

After 8 minutes, wash the eggs in cold water, peel, and place into a quart jar, gently pushing down the top to fit in as many eggs as possible.

Pour the vinegar brine over the eggs and into jar to the top. Seal the jar with the lid and turn up and down a few times. Store in the fridge for up to a week and then enjoy!
