Put everything in a blender with ice.

Blend for about 15 seconds.

Pour it into a hurricane glass.

Clarified Piña Colada

1.5 oz barrel rested rum

2.5 oz coconut water

In a large high speed blender add all of the ingredients

Starting on low blend for 10 seconds, slowly turn the blender to high until all ingredients are fully blended

Divide into 2-4 cups and top with a fresh pineapple wedge.
** For a virgin Piña Colada that serves 2 add 2 cups frozen pineapple, 2 cups ice, 3 oz Coco Lopez, 4 oz pineapple juice, 2 oz lime juice to a high speed blender

coconut milk (regular

(2 fluid ounces) coconut rum or spiced rum

(1 fluid ounce) allspice dram

(1 fluid ounce) falernum

cinnamon sticks

nutmeg

maraschino cherries

lime wedges

pineapple wedges

swizzle sticks

tiny umbrellas

Stir the coconut milk, pineapple juice, rum, allspice...

Stir the coconut milk, pineapple juice, rum, allspice dram, and falernum together in a Boston shaker or other small cocktail pitcher.

Fill two approximately 8-ounce highball or festive tiki...

Fill two approximately 8-ounce highball or festive tiki glasses with crushed ice.

Divide the cocktail equally between the two glasses.

Garnish with your choice of fruits, spices, swizzle...

Garnish with your choice of fruits, spices, swizzle sticks, tiny umbrellas, and what have you. In my opinion, more is never too much! 

Serve immediately.

Malibu Original

½ parts Pineapple juice

½ part Coconut cream

Ninja Creami Pina Colada Light Ice Cream

Cups Coconut Cream (Canned-Unsweetened)

Cup Pineapple (Canned tidbits- small pieces)

Tablespoon Toasted Coconut

Tablespoon Pineapple (Chopped)

pour into pint and freeze

Pour coconut cream and pineapple into an empty Ninja Creami pint container and freeze for 24 hours.   There is no need to stir it before freezing it.

remove from freezer

After 24 hours, remove the pint from the freezer.  Remove the lid.

use lite ice cream function

Place the Ninja Creami pint into the outer bowl.  Place the outer bowl with the pint in it, into the Ninja Creami machine and turn until the outer bowl locks into place.  Push the Lite Ice Cream button.  During the lite ice cream function, the ice cream will mix together and become very creamy.

remove from machine

Once the lite ice cream function has ended, turn the outer bowl and release it from the Ninja Creami machine.

add mix-ins

Using a spoon, create a hole through the center of the ice cream that goes from top to bottom.  This hole is where you will add the mix-ins.  Add in 1 tablespoon of toasted coconut and 1 tablespoon of chopped pineapple.

Place the outer bowl with the pint back into the Ninja Creami machine and lock it into place.  Choose the MIX-IN function.

Once the Ninja Creami completes the MIX-IN cycle, remove the outer bowl from the machine.

Place about two tablespoons of the cream of coconut into a small shallow plate and the coconut flakes into a small shallow bowl.

Put the rims of the serving glasses into the cream of coconut, making sure to place a good amount all along the rim.

Place the glasses into the coconut flakes and completely cover the rim.

Put the ice cream, pineapple, coconut milk, cream of coconut and rum into the blender.

Blend until completely mixed and smooth.

Gently pour into garnished serving glasses, top with whipped cream and a cherry, if desired and serve immediately.

Virgin Piña Colada Recipe

cream of coconut (recipe in notes (8 ounces))

pineapple juice ((6 ounces))

lime juice (about 1 lime juiced)

rum extract

molasses (optional)

pineapple (chopped (about 3 cups))

maraschino cherries (to garnish, optional)

Important: if you are making homemade cream of coconut, you must make it first and allow time for it to cool before starting the recipe. See notes.

In a blender, add 1 cup cream of coconut, 3/4 cup pineapple juice, 2 tablespoons lime juice, 1 teaspoon rum extract, 1 teaspoon molasses (optional), and 10 ounces frozen chopped pineapple, about 3 cups.

Blend until completely smooth, about 1 minute.

Transfer the mixture to a container with a lid. Freeze the mixture for 45 minutes to 1 hour, until it is partially frozen.

Return the mixture to the blender and blend again for just a few seconds, until it is smooth and creamy.

Serve immediately. Garnish with maraschino cherries, parasol picks (the official name for the cute umbrellas), straws, and a wedge of pineapple.
