Deliciously tender pork chops cooked in the Instant Pot and smothered with a creamy ranch sauce.

Instant Pot Pork Chops Recipe with Creamy Ranch Sauce

garlic powder

onion powder

dill weed

chives

salt and fresh ground pepper, (to taste)

olive oil

unsalted butter

(about 1 pound) boneless pork chops, (1-inch thick)

ranch seasoning mix, (or to taste)

garlic, (minced)

chicken broth

heavy cream, (you can also use Half & Half or Evaporated Milk)

Ranch Seasoning Mix

dill weed and dried chives, (for garnish)

Prepare Ranch Seasoning Mix by combining all ingredients together in a small mixing bowl. (Store-bought Ranch Seasoning Mix will also work)

Grease pork chops with cooking spray.

Measure out 1 teaspoon of the prepared ranch seasoning mix (or to taste) and season the pork chops.

Set the Instant Pot to "Sauté"; add olive oil and butter.

Once the butter is melted and hot, sear chops for about 2 minutes per side, or until golden brown. Sear 2 pork chops at a time.

Remove pork chops from Instant Pot; set aside.

Add minced garlic to the pot and cook for 30 seconds.

Pour 1/4 cup chicken broth and use a wooden spoon to scrape up the bits off the bottom of the pot.

Stir in remaining chicken broth and add pork chops to the pot in the liquid.

Seal the lid, and cook on “Manual” at HIGH PRESSURE for 7 minutes.

Do a Natural Pressure Release for 12 minutes. After 12 minutes, do a Quick Release. Pork Chops are done when internal temperature reaches 145F.

Open the lid and remove pork chops to a plate; keep them covered.

Set the Instant Pot to “Sauté”; bring remaining mixture to a simmer.

Whisk in heavy cream.

Add in 2 teaspoons of Ranch Seasoning Mix. You can use less or more – adjust to your taste. Start with one teaspoon, taste, and see if you want more.

Bring to a gentle simmer for 3 to 4 minutes, or until sauce has slightly thickened.

Add the chops and released juices back into the sauce; allow to simmer for 1 minute, or until heated through.

Garnish with dried herbs and serve.

Followed it exactly to the recipe and it fit in with my Keto diet. So good. I really can not say enough about how delicious this dish was! Paired it up with fresh green beans lightly sautéed and it was a meal that the whole family enjoyed!

Don't typically buy very thick bone-in chops but with the hit-or-miss stocking of fresh meats in the grocery during the pandemic I take what I can get. This sent me searching for a new recipe to also use fresh rosemary from my garden. Final results:  The cook times for both stove-top searing and oven roasting were spot on. Browning color was perfect. Directions clear and easy to follow. I diced the rosemary as small as I could acheive. Only deviation I made was reducing the butter by half and I still had leftover so know next time I could decrease even more. My spouse would certainly eat all the butter sauce because he loves it but I act as his health advocate! Feedback from family: wonderful

Awesome!  We have a Meater thermometer (blue tooth) so that makes getting the temp right very easy. Simple ingredients and super delicious!  Definitely a keeper and you could easily mix up the herbs if you don't love rosemary.  Searing first then going to the oven is the best way to make so many things but almost a necessity for pork chops.  I echo the "buy them thick and bone-in" comment!

oh my lord was this recipe amazing. We were lookin for something new to try as we usually make the same few meals over and over again, and I stumbled across this gem. I followed the recipe sans cleaning out the pan after initial cooking for the pork. I don't know how this would taste otherwise, but i sure as heck don't want to find out. The extra fat and drippings from the pork really added extra falvor to the entire meal.

I followed the advice from the comments and used the drippings from the pan to cook the onions and added a little more chicken broth. It was delicious!

These pork chops were delicious! I followed other reviewers' advice and sauteed the onions in the pork drippings and 1/4 cup of vegetable oil rather than wiping the pan clean and adding yet another 3 tablespoons of oil. I also had to cook the pork chops double the time in the directions, but perhaps they were too thick.

Very goid. Instead of wiping out the pan where I fried the chops, I sautéed the onions in there too. So much flavor.

Family Favorite! Didn’t need quite as much oil bc like other reviewers have said - of course you cook the onion in the drippings! Came out perfectly smothered with gravy to pour over mashed potatoes!

This is the best pork chop recipe I've made in a long time!  Coming from a farm family that raises pigs in MN.

The 4 pork chops that I purchased were thick and large and I did not have a pan large enough.  I cycled two and two for the browning.  Then, I used a two burner skillet to saute the onions and then complete the recipe.  It all turned out juicy and yummy and appreciated by our guest.

If you want more flavor, season the chops with some garlic powder, onion powder, and a sprinkle of seasoning salt before dusting with flour. My son hates pork chops but loved this recipe!

This is by far one of our favorite meals and recipes. I follow exactly as written adding baby Bella’s.

Juicy Baked Pork Chops

paprika

EACH: onion powder and garlic powder

EACH: salt, pepper, and oregano

olive oil, divided

– (1 1/4 inch thick) boneless pork chops

Turn your oven to 400 degrees Fahrenheit.

In a small bowl, mix together the paprika, onion powder, garlic powder, salt, pepper, and oregano.

Drizzle the 1 tablespoon of the olive oil over both sides of the pork chops. Sprinkle the spice mix evenly over both sides of the pork chops and place them in a baking dish. (see notes) Drizzle them with the remaining tablespoon of olive oil.

Bake the pork chops for 18 minutes, or until they reach an internal temperature of 140 degrees Fahrenheit. Once you remove them from the oven, let them rest in the pan for 5 minutes before serving.

Made these tonight, I was out of paprika unfortunately, so I didn’t get the same flavors (used salt, pepper, garlic and inion powder, a bit of chili powder, and some red pepper flakes) the method is fantastic! Made this tonight, and it was juicy and had a nice flavour, but it was SO HOT!!!  I had to remove the seasonings from the top in order to eat it.  I think 1 teaspoon of pepper is too much.  I'm surprised no one else complained about this.

i made these last night using a different seasoning combo i've used and loved before for baked chops, but before, when i baked them without oiling them, they came out dry. but with your method of oiling both sides of the chops, they were so juicy, plump, and beautiful!

to reduce cleanup and keep my fingers clean, i poured ~1 T of the olive oil in the baking pan, placed the chops in the puddle of oil with a fork, one at a time, and turned them over with the fork to oil the other side. then i sprinkled my seasonings on top, and drizzled the remaining 1T of olive oil over the seasonings - such a great idea of yours!

the seasonings i used were a sprinkling of salt, then a very thorough sprinkling of thyme to cover the chop, then dried onion flakes. thyme and onion go so well with pork chops.

they were juicy and delicious.

served with peeled, chunked, boiled, and then mashed bright yellow rutabagas, with a little butter mixed in. and bright green steamed zucchini with a little butter.

my mother used to make sauteed pork chops cooked with fresh onion slices on top. she made a gravy with the pork chop juices, a little flour smoothed into the fat after the chops and onions were removed from the pan, and then rutabagas cooking water slowly stirred and simmered in to finish the gravy. so delicious! 

but your recipe for baked chops is so much easier, and heart healthier than making gravy with the pork fat. and so flavorful, cooked your method, it rivals mom's.

First let me say I loved this recipe and method of cooking the chops! Absolutely delicious, juicy, quick and easy like the recipe says! I have a question though... it seems like I have so much of the dry rub that sprinkling the chips isn't really the word I would use if I were to use it all, more like drowning them in it lol. I sprinkle it on and then rub it in on both top and bottom and the sides. My question is should I be rubbing it in or really just sprinkle, and if I am just sprinkling, should I only use enough of the rub to do that? Or use it all mo matter what?

These were delicious, or in my hubby's words, "seriously good!" I was a bit skeptical when I saw how much spice there was, but after reading the reviews, I decided to give them a try and I'm so glad I did! I'll definitely be making them again. My chops were 3/4 inch thick with the bone in. I baked them for 20 minutes which was just right.

This was a very simple easy recipe to follow. The meat was flavorful and juicy.  I'm already thinking about my next meal with pork chops using this recipe.

So easy to put together my 14 yr old did it herself tonight and we all devoured every last chop. I thought we’d have leftovers, but there weren’t  enough. Definitely serve with something to soak up the sauce. We had them with couscous and butternut squash that roasted at the same time. We used thin sliced pork loin chops because that’s what we had on hand. Using the internal temp helped get them just right. I broiled for a few minutes at the end to get a little browning since the thin ones cooked so quickly. This is definitely the way to cook chops!

Thank you for this recipe! I have made it once, and it was a big hit with the fam . . . but I have a question: do you recommend cutting the salt if I brine the chops first? I'm planning to make them tonight, and will have time to brine for a few hours (which I don't always).

first, let me say, it sounds really good.  But in one spot, you say 7-8 minutes and in another spot, you say 18 minutes to cook them.  Is it 7-8 minutes per side (14-16 mins total)? Or is it 18 minutes without turning them? Please clarify.  Thank you!

Preheat oven to 400 F degrees.

In a medium size bowl whisk together the soy sauce, honey, garlic, ginger, sesame oil and sriracha sauce. Pour over pork chops and let marinade for about 20 minutes.

Heat the olive oil in a large skillet for medium high heat. Add pork chops, without marinade, and cook for about 5 minutes for the first side, or until it gets a nice brownish color. Flip the pork chops and pour the remaining marinade over them. Cook another 5 min on this side.

Place the skillet in the oven to finish cooking them. Roast for about 10 minutes, or until pork chops are completely cooked through.

Baked Pork Chops

Preheat oven to 425° F. Line a rimmed baking sheet with parchment paper. (You can also bake pork chops in a baking dish, without parchment.)

Pat pork chops dry with paper towels. Rub pork chops with the olive oil and place them on the prepared baking sheet.

Combine the brown sugar, paprika, onion powder, dried thyme, salt and pepper in a small bowl. Stir to mix well.

Rub the spice mixture over all sides of the pork chops.

Bake pork chops in the preheated oven for 15 to 20 minutes for 1-inch thick boneless pork chops. The pork chops are done when the internal temperature measures 145° F on an instant read thermometer. (Thinner pork chops will cook faster, bone-in pork chops will take longer to cook. See notes.) Be careful not to overcook the pork chops or they may dry out.

BONE IN VS BONELESS PORK CHOPS
When I was first testing this recipe, I went to our local butcher to purchase thick cut pork chops. I had in my mind boneless pork chops because that is normally what I buy. She started pulling out the bone-in chops when I told her I was making stuffed chops. She said you could use either, so I decided to purchase both bone-in and boneless thick cut chops. And guess what? I preferred the bone in chops better. They seemed to be juicier and have more flavor.
HOW DO YOU COOK STUFFED PORK CHOPS?
There are 4 basic steps to preparing the pork chops.
Salt and pepper the chops, then brown them lightly in oil in a skillet. This enhances the flavor and gives them a pretty golden brown look.
Make the stuffing. Our stuffing is really easy to make and smells AMAZING while the butter, onion and celery are simmering on the stove.
Stuff the chops (this is the easiest part!).
Bake the chops.
 
Ingredients
For the pork chops:
2 bone-in thick cut pork chops (about 1 1/2" thick)
salt and pepper (to taste)
1 tablespoon olive oil (for browning the chops)
For the stuffing:
3/4 cup butter
1/2 cup chopped celery
1/2 cup diced onion
7  cups  dry bread cubes*
1 teaspoon teaspoon salt
1/2 teaspoon ground black pepper
3/4 tablespoon poultry seasoning
3/4 cup chicken stock
