Thai Sweet Chili Sauce Recipe

In a small bowl, whisk together 2 tablespoons water and cornstarch. Set aside.

In a medium saucepan, mix together remaining 1 cup water, garlic, peppers, sugar, vinegar, and salt. Bring to a boil over medium heat, reduce heat and simmer for 3 to 5 minutes.

Stir cornstarch mixture to re-combine, then whisk into simmering sauce and cook until thickened, about 1 minute more. Remove from heat, let cool, and use immediately or store in an airtight container in the refrigerator.

This exceptionally tasty pasta salad is like the creamy classic but with a Japanese twist! It combines a creamy miso dressing with seaweed, black sesame, kale, corn and my fave squash.

Japanese pasta salad with roasted kabocha

tbsp avocado oil (or other high-heat vegetable oil)

garlic powder

tsp sea salt

tsp ground pepper

C dried orecchiette pasta

C corn kernels

C finely chopped red onion

C finely chopped cilantro

tbsp black sesame seeds

mayonnaise

tbsp mellow white miso

water

lime juice

garlic

tsp chili flakes

Preheat oven to 450°F.

Add cubes of kabocha squash to a large baking sheet. Add avocado oil, garlic powder, sea salt and ground pepper and toss with your hands to coat well. Spread out in an even layer and bake for 30 minutes, flipping half way through the bake time.

Meanwhile bring a large pot of salted water to a boil. Cook paste to al dente. Just before draining add kale and corn to the water, stir to submerge, then drain together. Do not rinse. Let cool until room temperature before assembling the pasta salad.

To make the dressing combine the mayonnaise, miso, water, lime juice, garlic and chili flakes in a blender until smooth or combine all the ingredients together in a bowl and ensure to finely mince the garlic to incorporate.

Once pasta and roasted kabocha squash is cooled toss together with red onion, cilantro, seaweed, black sesame seeds and all the dressing. Serve immediately. You can also toss everything together and refrigerate for a few hours before serving. I like letting the pasta salad sit out to take the chill off from the fridge before eating.

Blue Cheese Dressing

Gorgonzola

sour cream

buttermilk

white wine vinegar

Worcestershire sauce

Put the Gorgonzola in a small mixing bowl and mash it with a fork. Add the sour cream, buttermilk, mayonnaise, white wine vinegar, Worcestershire sauce, and black pepper and whisk to combine. Serve, or store in an airtight container in the refrigerator for up to 1 week.

This spicy curry sauce can be found all over Britain, in chip shops and pubs - and even bottled (or powdered) in markets to use as a simple sauce to turn leftover roast dinners into a simple meal the following day. The spice can be tailored to the level of heat you want, but the base of aromatics and toasted spices make a fantastic base for any number of dishes.

British Curry Sauce Recipe

Heat vegetable oil in a medium non-stick skillet over medium-high heat until shimmering. Add onion, garlic, and ginger Cook stirring constantly with a spatula until onions soften about 5 minutes. Add cumin, turmeric, coriander, paprika, curry powder, and pinch of red pepper flakes and continue to cook until the spices begin to smell toasted, about 6 minutes.

Reduce heat to medium and add tomato paste and continue to stir until tomato paste is evenly incorporated and has begun to reduce, about 3 minutes. Add flour and mix until there are no lumps and no white spots left in the pan. Pour the water and lemon juice into the pan and stir until the mixture begins to thicken, allow curry sauce to reduce until the mixture has reduced to about 1 1/2 cups. Curry sauce can be stored for up to a week in the refrigerator.

At this point you can decide whether or not to puree and strain the mixture. If you decide to puree and strain the curry then run it through a food processor or blender and the pass through a fine mesh strainer. Season with salt and pepper, then use to make a variety of delicious curries.

Spicy Mayo for Sushi Recipe

This classic Italian dish can be part of your regular dinner rotation with this lightened up clam sauce. It's an easy-to-make gourmet meal for seafood lovers that’s ready in less than 30 minutes thanks to canned clams, which are convenient and less expensive than fresh. If you don’t have white wine, substitute 1/4 cup of bottled clam juice instead. Serve with a simple side salad to complete the meal.

Linguini with white wine clam sauce

oz Canned clams drained, liquid reserved, chopped or minced

0.25 cup(s) White wine

Cook linguini, al dente, according to instructions on box.

In another large pot, gently heat oil over medium-low heat. Add garlic and red pepper flakes; cook, stirring, for about 15 to 20 seconds, without allowing the garlic to burn. Add parsley and basil; cook, stirring, until coated and incorporated, about 30 to 45 seconds more.

Add reserved clam juice and white wine. Bring to a boil; boil, uncovered, for about 1 minute. Reduce heat to low and simmer gently until liquid begins to reduce, about 5 minutes.

Add clams and simmer until just heated, about 30 to 60 seconds. Add linguini and toss until it’s well coated, about 30 to 45 seconds. Serve immediately. Garnish with more chopped parsley, if desired. Yields about 1 1/3 cups per serving.

Butterflied chicken with a vinegar and spice rub gets slow-cooked on the grill, then quickly cooked directly over the coals to crisp the skin. It comes out tender and juicy, and goes perfectly with a simple spicy and creamy sauce made with jalapeños and ají amarillo peppers.

Peruvian-Style Grilled Chicken With Green Sauce Recipe

For the Sauce:

jalapeño chilies, roughly chopped (see note)

(15 milliliters) ají amarillo pepper paste (see note)

cilantro leaves (1 ounce; 28 grams)

(120 milliliters) mayonnaise

(60 milliliters) sour cream

lime

(5 milliliters) distilled white vinegar

(30 milliliters) extra virgin olive oil

For the Chicken:

whole chicken, 3 1/2 to 4 pounds (1.6 to 1.8kg)

(20 grams) kosher salt

(30 grams) ground cumin

(30 grams) paprika

(5 grams) black pepper

(30 milliliters) white vinegar

(30 milliliters) vegetable or canola oil

For the Sauce: Combine jalapeños, ají amarillo (if using), cilantro, garlic, mayonnaise, sour cream, lime juice, and vinegar in the jar of a blender. Blend on high speed, scraping down as necessary, until smooth. With blender running, slowly drizzle in olive oil. Season to taste with salt and pepper. Sauce will be quite loose at this point, but will thicken as it sits. Transfer to a sealed container and refrigerate until ready to use.

For the Chicken: Pat chicken dry with paper towels and place on a large cutting board, breast side down. Using sharp kitchen shears, remove backbone by cutting along either side of it. Turn chicken over and lay out flat. Press firmly on breast to flatten chicken. For added stability, run a metal or wooden skewer horizontally through chicken, entering through one thigh, going through both breast halves, and exiting through other thigh. Tuck wing tips behind back.

Combine salt, cumin, paprika, pepper, garlic, vinegar, and oil in a small bowl and massage with fingertips until homogeneous. Spread mixture evenly over all surfaces of chicken.

Light 1 chimney full of charcoal. When all charcoal is lit and covered with gray ash, pour out and spread coals evenly over half of coal grate. Alternatively, set half the burners of a gas grill to high heat. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes. Clean and oil grilling grate.

Place chicken, skin side up, on cooler side of grill, with legs facing toward hotter side. Cover grill, with vents on lid open and aligned over chicken. Open bottom vents of grill. Cook until an instant-read thermometer inserted into thickest part of breast registers 110°F (43°C). Carefully flip chicken and place, skin side down, on hotter side of grill, with breasts pointed toward cooler side. Press down firmly with a wide, stiff spatula to ensure good contact between bird and grill grates. Cover and cook until skin is crisp and an instant-read thermometer inserted into thickest part of breast registers 145 to 150°F (63 to 66°C), about 10 minutes longer. If chicken threatens to burn before temperature is achieved, carefully slide to cooler side of grill, cover, and continue to cook until done. Do not leave the lid off for longer than it takes to check temperature, or chicken will burn.

Transfer chicken to a cutting board and allow to rest for 5 to 10 minutes. Carve and serve with sauce.

Lemon Drop Hot Sauce Recipe

lemon drop chile peppers

coriander seeds

In a skillet over medium heat, toast chiles, coriander, and cumin until just fragrant, about 10 seconds. Remove from heat and transfer to blender along with garlic, vinegar, and olive oil. Blend until very smooth, scraping down sides of blender as needed, for 3-5 minutes. 

Pour hot sauce through a fine-meshed strainer into a bowl. With a rubber spatula, push sauce through strainer to separate all liquid from chunks of pepper and spices. Add honey and salt to taste, starting with about 1/4 teaspoon, then transfer to a very clean bottle or jar. Store sauce in refrigerator, where it keeps well.

Seriously Meatless: Mole Aproximado Recipe

ancho chiles

oregano leaves (or 1 teaspoon dried)

orange juice (bitter orange if you happen to have it)

Remove the stems, seeds and ribs from the chile peppers. You might want to wear rubber gloves for this. Cover them with boiling water and weight them so they stay underwater. Leave to soak for 30 minutes while you prepare everything else.

In a hot, dry skillet, cook the garlic cloves and tomato for about 5 minutes, turning a couple of times. 

Drain the chiles, reserving the soaking water.  In a blender, combine the chiles with the garlic, tomato, bread, onion, oregano, cloves, cinnamon, black pepper, sugar, salt and cocoa power, orange juice and 1/2 cup of the chile soaking water. Puree very thoroughly, adding more liquid as necessary until you have about 3 1/2 cups. Strain.

Heat the vegetable oil in a saucepan over a medium flame. Pour in the mole, and simmer for about 30 minutes, lightly covered. The sauce should darken and become more concentrated. 

Taste and adjust the seasonings. Can you taste the various herbs and spices? The chocolate? The chiles? Is there a bit of acid and enough salt? Aim for a complex, balanced flavor. Also add a little more liquid or simmer a bit longer to get a pleasing saucy texture, like a thick tomato sauce.

Mole brings together the wonderful worlds of chile and chocolate. The smooth, flavorful sauce is very versatile. It can smother enchiladas, chicken, sweet potatoes, you name it. The concept of mole is that the sauce is the main event--what it's served with is in a supporting role.

Serious Heat: Silky, Spicy Mole Sauce Recipe

pasilla chile, seeded and chopped (reserve the seeds)

black beans

dark chocolate, coarsely chopped

Rehydrate the pasilla chile by pouring broiling water over it, and allowing it to soak for half an hour. 

When you're ready to make the sauce, pull the chile open and seed it. Chop coarsely and put in a blender or food processor with the chipotles, black beans, chocolate, almonds and salt. Blend, adding the stock slowly, allowing the blades to do their work as the sauce things out. 

Heat the olive oil in a sauté pan, and gently sauté the garlic and shallots over low heat. Once they're soft, add them to the blended chocolate-chile mix, and blend again. 

Transfer the sauce to a saucepan, and simmer for 10 minutes. Keep an eye on it to avoid scalding because the chocolate and nuts are delicate. 

The sauce should have a subtle but definite heat and enough salt to bring out the diverse flavors. If the sauce needs to be spicier, add some of the reserved chile seeds or add a low-acid hot sauce such as Marie Sharp's. 

Mayo may be classically French, but this sauce gains an umami kick from an ingredient that’s as Japanese as Godzilla wearing a Hello Kitty backpack. Katsuobushi or bonito flakes are bonito or skipjack tuna loins that have been dried, smoked, and, when hard as a block of wood, shaved into flakes. The best katsuobushi is aged for months, or even years, and can be easily procured on the interwebs. This recipe first appeared in Season 1 of Good Eats: The Return.
