This Brazilian dish may contain a few unexpected or even unfamiliar ingredients, but they are easy to find online and worth the search. The result is a tropical fish stew mellowed by slices of plantain and coconut milk and accompanied by the traditional hot sauce called piri-piri and farofa, the toasted cassava-meal accompaniment. Farofa is served all over South America with all kinds of dishes; this version, with caramelized onions adapted from Felipe Amaral in Rio de Janeiro, was my favorite. You can serve the moqueca without the farofa, if you prefer, but it helps to sop up the soupy liquid from the stew.

Moqueca (Brazilian Fish Stew)

Piri-piri or other hot sauce,

Make the farofa if desired: Melt butter in a skillet or shallow saucepan on medium heat. Add sliced onion, and cook, stirring, until it turns light brown. Stir in manioc and cook, stirring, 5 to 8 minutes, until it starts to toast. Cover and keep warm.

Make the fish broth: Cut each bass fillet in 4 or 5 pieces, cover and refrigerate. Place trimmings in a 3-quart stovetop casserole, preferably an earthenware pot. Lightly salt shrimp, cover and refrigerate. Place shells in the pot. Add 5 cups water; the bay leaves; the turnip; 2 onions, chopped; 2 tomatoes, chopped; half the shishito peppers; the garlic; and half the cilantro and chives. Bring to a boil, reduce heat and simmer about 45 minutes, until vegetables are tender.

Heat oven to 450 degrees. Cut a slit in the skin of the plantain, wrap in foil and bake 20 minutes, until flesh is tender. Cool.

Strain broth into a bowl, pressing on the solids. Discard solids and return broth to pot. Cook over medium heat until reduced to 1 1/2 cups.

Slice remaining tomatoes and remaining onion 1/4 inch thick and add to pot. Add bell peppers, Cubanelle peppers, remaining shishito peppers, remaining chives and all but 1 tablespoon remaining cilantro. Bring to a simmer and cook about 20 minutes, until vegetables are tender.

Peel plantain and slice it 1/2 inch thick. Add to pot. Add coconut milk and dende oil. Add fish and octopus, if using, and simmer 5 minutes. Rinse and dry shrimp and squid, if using, and add to pot. Simmer 3 minutes. Check seasonings. Strew remaining cilantro on top, garnish with a red chile and serve over rice directly from the pot, with farofa and piri-piri on the side.

These Blistered Shishito Peppers are the perfect finger food. They're so easy to make too. Lightly seasoned and slightly smoky, you'll find that most are mild... one out of every ten might surprise you.&nbsp;

Blistered Shishito Peppers

shishito peppers (washed and thoroughly dried)

olive oil

togarashi

Heat a large heavy skillet over medium-high heat.&nbsp;

Place the peppers in a medium bowl and toss with olive oil; set aside.

When the skillet is hot, arrange the peppers in a single layer; reserve the bowl they were in.

Saute the peppers uncovered, turning occasionally, until they charred and blistered, about 6 to 8 minutes total.

Return the peppers to the bowl, and toss with togarashi and salt. Squeeze lemon over peppers, to taste. Serve immediately.

Konnyaku Steak with Shishito Peppers

Cut the konjac bar into two thin fillets.

Score the surface about 5mm apart of the each fillets diagonally on both sides of the fillets.&nbsp;

Cut each fillets into two lengthwise, then cut it into 2cm strips.&nbsp;

Place all konjac pieces into a mixing bowl and sprinkle salt.&nbsp;&nbsp;

Rub the salt onto konjac with your hands and leave it for 5 minutes.

Bring water to boil in a saucepan over high heat, and add the konjac into the boiling water.&nbsp;

Cook the konjac for a few minutes.&nbsp;

Turn the heat off and drain the hot boiling water.&nbsp;

Wash Shishito Peppers and make a small cut so that the shishito peppers will not burst when they are heated.&nbsp;

Combine soy sauce, mirin, and sugar well altogether and set aside.&nbsp;

Heat olive oil and butter in a frying pan over medium heat.

Add finely chopped garlic into the frying pan.&nbsp;

When the garlic is fragrant, add the well-drained konjac and shishito peppers into the frying pan

Fry them for a few minutes.&nbsp;

Add the combined sauce to the frying pan.&nbsp;

Stir them all together to coat the sauce.&nbsp;

When the shishito peppers colour has changed to vibrant green and blistered a little bit, remove the shishito peppers out of the frying pan to a plate.&nbsp;&nbsp;

Continue to cook Konjac pieces for a couple of minutes or until the sauce has reduced and thickened a little bit.&nbsp;

Turn the heat off and serve the konjac steak with shishito peppers on a plate.&nbsp;

Put them all together

Air Fryer Shishito Peppers are a quick and delicious appetizer or side dish. These blistered Japanese peppers are mild and sweet and ready in about 5 minutes.

Air Fryer Shishito Peppers

dry pint shishito peppers ((about 20 peppers))

cooking spray

salt (to taste (large flake, if available))

Place the shishito peppers in the air fryer basket.&nbsp;

Spritz with a little cooking spray and shake the basket to evenly distribute.

Air fry for 5 to 6 minutes at 390 degrees, shaking half way through, until the peppers are blistered and lightly charred in areas.

Place the peppers on a serving dish and generously sprinkle with salt. Enjoy immediately.

Serve the shishito peppers with a dipping sauce made of 1 Tablespoon fresh lime juice combined with 1 teaspoon tamari.

Sprinkle the peppers with Furikake seasoning. (Be sure the check the ingredients to make sure it's vegan since some blends contain fish/seafood products.)

Squeeze a lemon or lime over the peppers before serving.

5 Minute Roasted Shishito Peppers

A few weeks back I nominated Fried Stuffed Olives into my unofficial bar snacks hall of fame.  This week I have another contender for the list: Grilled Shishito Peppers with Sesame Oil and Salt, courtesy of Steven Raichlen's Planet Barbecue!  While the preparation of the tiny shishitos is minimal (merely brushed with sesame oil, grilled until blistering, and salted), the excitement comes from the somewhat volatile nature of the peppers.  Once grilled, the flavor of the peppers is grassy and sweet but one out of every five or so is spicy enough to have you reaching for a cool drink.

Asian (dark) sesame oil

Skewer the shishito peppers crosswise on bamboo skewers, leaving about half of the skewer exposed. Lightly brush the peppers on both sides with the sesame oil and season them with sea salt.

Set up the grill for direct grilling and preheat it to high.

When ready to grill, brush and oil the grill grate. Arrange the skewered peppers on the hot grate with the aluminum foil shield under the exposed ends of the skewers to keep them from burning. Grill the peppers until sizzling and browned on both sides, 2 to 4 minutes per side. Serve the peppers hot off the grill with extra salt on the side for sprinkling.  

These oven roasted peppers and crispy potatoes are the ultimate in spicy summer food. This is an easy side dish that&#39;s perfect for any barbecue, summer meal or quick and veggie-filled snack. Plus this way you can roast your shishitos without smoking up your apartment? Win-win? Win-win.

Old Bay Shishito Peppers & Potatoes

shishito peppers (whole)

russet potato

tsp Old Bay seasoning

salt & pepper

Preheat your oven to 425F.

Dice your potato, and bring a large pot of water to a rolling boil. Heavily salt the water and add in the diced potato. Boil for about 7-8 minutes or until fork tender.

Drain the potatoes and spread them out evenly on a parchment lined baking sheet. Toss in 1 tbsp of the olive oil, the Old Bay seasoning and add salt and pepper to taste.

Roast the potato at 425F for 15 minutes.

While the potato is roasting, toss the shishito peppers in a bowl with the remaining olive oil, salt and pepper.

After the potatoes have roasted for 15 minutes, take them out of the oven and give them a good toss in the roasting pan. Move the potatoes to the edges so that there is an open space in the middle. Spread the shishito peppers out evenly in the middle of the pan, and try to have them each touching the pan&#39;s surface.

Put the potatoes and shishitos back in the oven for 10-11 minutes, or until the shishitos have blistered, puffed up and collapsed.

Remove the pan from the oven and toss the vegetables together so that they are all coated in the Old Bay mixture. Move to a bowl and serve!

Shishito Peppers seem to be everywhere these days and while I do enjoy snacking on them blistered right out of a large cast-iron skillet then sprinkled with salt, these cream cheese and salami Stuffed Shishito Peppers are my favorite. Makes about 30.

Stuffed Shishito Peppers Recipe

lb shishito peppers

oz cream cheese (softened)

oz dry salami (diced)

garlic powder

tsp black pepper

Take the cream cheese out of the refrigerator and allow to come to room temperature. Move oven rack to middle of oven and turn broiler on.

Dice the salami into small pieces and add to a bowl with the cream cheese. Add the garlic powder and black pepper. Stir to blend thoroughly.

Lay the shishito peppers out on a lined baking sheet and see how they lay. With a small paring knife cut a slit down the side facing up on each one (from below stem to almost the tip).

Using a teaspoon, fill the pepper cavity and press sides together to hold cheese salami filling.

Spray all of the stuffed shishitos with cooing spray or olive oil. Place tray in oven and broil for 5 minutes. Shishito peppers should blister and cheese filling turns a golden brown. Serve warm. Makes 30+ depending on size of shishito peppers.

Stuffed Shishito Pepper Tempura

oz peppers

Tempura batter mix

Water

Vegetable or canola oil (cooking oil)

cup+ shrimp (cooked, thawed, tail removed, deveined)

onion

tsp Japanese sake

ginger paste

tsp salt

Cut shishito peppers:  Cut the stem and top off of peppers.  Make a vertical incision down just one side.  Remove seeds and membrane.

Make shrimp paste: Put the cooked shrimp, deveined and tail removed, into the food processor. Pulse until shrimp starts to turn into smooth paste, but with some pieces still remaining.

Put the shrimp paste in a small bowl.  Add chopped green onion, Japanese sake, ginger, salt and one half of egg whites to the shrimp paste and mix.

Using a small spoon, stuff the shrimp paste mix into peppers.

Heat about 1.5 to 2 inches of vegetable/canola oil in deep fryer to 375 F (190 C).

Make tempura batter:  In a small bowl, mix 1/2 cup tempura batter mix and 1/2 cup water until just blended.

Dip the stuffed pepper, one at a time, in the batter to coat.  Dip the entire pepper but remove it from the batter quickly.  (Don&#039;t let it sit in the batter.)  Carefully, place the pepper in the hot oil.  Deep fry each pepper until golden brown, about 1 1/2 to 2 minutes.  Drain on paper towels.  Repeat with remaining peppers.

Serve while hot.

This shrimp stir fry recipe makes a delicious spicy dish—I love the heat of shishito peppers, especially not knowing whether the next hit will be sweet and peppery or sweet and POW!

Shrimp with Shishito Peppers Stir Fry

canola oil

sea salt flakes

red chile (seeded and finely chopped)

shishito peppers (left whole)

shrimp

juice of 1 lime

sugar

Heat a wok over high heat until smoking and add the canola oil.

Add the salt and let it dissolve in the hot oil.

Add the garlic and red chile and toss for a few seconds.

Add the shishito peppers, toss for 30 seconds until they are seared on the outside and beginning to soften, then stir-fry for another minute.

Add the cooked shrimp and toss for less than 1 minute (or cook raw shrimp for 2 to 3 minutes, depending on their size).

Season with the mirin, the light soy sauce, lime juice, and sugar.

Transfer to serving plates and serve on its own as an appetizer, or with jasmine rice as a main meal.

This blistered shishito peppers recipe is such a fun appetizer or snack! If you&#039;re sensitive to spice, proceed with caution - about 1 in 10 of these usually sweet peppers is spicy.
