Here’s a fuss-free skillet dinner for those nights you just don’t want to bother.

Unstuffed Cabbage Skillet Dinner

lb beef

cabbage

brown rice*

onion

mushrooms

tubs Knorr concentrated beef stock **

garlic powder

water

tsp pepper

sour cream (optional)

white rice may be substituted

**Rich stock in the amount of 2 1/2 cups may be substituted, however, OMIT THE WATER then. If you like a tomato base, you can substitute 1 can (8 oz) of tomato sauce and 1.5-2 cups of water for the stock/water. If you do this, you may have to add more water if the rice is not cooked–I did not test it with this.

Heat a large heavy skillet over medium-high heat.

Add the ground beef, onion and mushrooms. Brown meat well, draining off any excess fat.

Add the 2 tubs of stock gel and the water. Bring to a boil and add the rice, garlic powder and pepper; stir. Stir in the shredded cabbage.

Reduce heat to simmer. Cover and cook for 35-45 minutes or until rice is done and water is absorbed. I would caution checking the water periodically and adding water as necessary so that the rice cooks–brown rice can be tricky this way. Even if you add too much water, the brown rice will absorb it eventually. As I mentioned, white rice may be substituted, and it has a shorter cook time.

Dish is done when rice is cooked and all water is absorbed. Serve with a dollop of sour cream on top.

This easy Cajun Sausage and Rice Skillet is the perfect easy and filling weeknight dinner, packed with plenty of smoky-spicy flavor!

Cajun Sausage and Rice Skillet

Andouille sausage* (3.99)

Tbsp cooking oil (0.04)

bell pepper (0.89)

tsp smoked paprika (0.10)

tsp dried oregano (0.05)

thyme (0.05)

garlic powder (0.02)

onion powder (0.02)

cayenne pepper (0.02)

tsp black pepper (0.01)

15 ounces. can fire roasted diced tomatoes (1.00)

long grain white rice (0.62)

chicken broth (0.20)

green onions, sliced (0.20)

Slice the sausage into ¼-½ inch thick slices. Add the sausage and cooking oil to a deep skillet or Dutch oven and sauté over medium heat until the sausage is well browned. Don&#039;t worry if the sausage begins to brown on the bottom of the skillet. That&#039;s extra flavor that will cook into the rice later.

While the sausage is cooking, dice the bell pepper. Once the sausage is browned, add the bell pepper to the skillet and continue to sauté for about one more minute.

Add the spices (smoked paprika, oregano, thyme, garlic powder, onion powder, cayenne, and black pepper) to the skillet with the sausage and bell pepper and continue to sauté for one minute more to toast the spices.

Add the fire roasted diced tomatoes (with juices), rice, and chicken broth to the skillet. Stir to combine and dissolve any browned bits off the bottom of the skillet.

Place a lid on the skillet, turn the heat up to medium-high, and allow the broth to come to a full boil. Once it reaches a boil, turn the heat down to low and let the skillet simmer for 20 minutes. After 20 minutes, remove the skillet from the heat and let it rest, with the lid on, for an additional 5 minutes.

After the skillet has rested, remove the lid, and fold the sausage and rice to redistribute the rice and sausage throughout. Top with sliced green onions and serve!

Low Carb Asian Beef & Cabbage Noodles

lb beef, thinly sliced (I used top round)

cabbage, thinly sliced into noodles

soy sauce

curry

sesame oil

rice wine vingear (can sub with white winte vinegar)

Swerve Brown sugar

Heat up a large saute pan and add the oil. When hot saute the beef until it&#x27;s starting to brown.

In the meantime, mix the curry paste, soy sauce, sesame oil, Swerve brown sugar and rice wine vinegar.

When the meat starts to brown, add in the cabbage and pour the sauce over top. Cover and cook for 5 minutes.

Take the cabbage noodles, if you want them softer, cook for another 5 minutes.

Garnish with fresh cilantro or basil .

Brown Butter Scallops with Corn, Bacon, and Avocado Salad

1.&nbsp;Heat a large skillet over medium-high heat.&nbsp;Add the bacon and cook until crisp. Remove the bacon from the skillet and drain onto paper towels. Strain off all but 1 tablespoon of bacon grease from the skillet and return the skillet to medium-high heat. Add the corn and cook 3-4 minutes, until golden. Add 1 tablespoon butter and allow it to brown, about 3-5 minutes more. Remove the skillet from the heat and stir in basil, lemon juice, and a pinch each of salt and pepper. Spoon the corn out of the skillet and onto a platter.2. Wipe the skillet clean and return to medium high heat. Add the olive oil.&nbsp;When the oil shimmers, add the scallops and sear on both sides until browned, about 2-3 minutes. Add the remaining 2 tablespoons butter, the garlic, thyme,&nbsp;and crushed red pepper flakes. Cook until fragrant and the butter golden, about 3-4 minutes. Slowly pour in the wine, simmer 5 minutes. Remove from the heat.&nbsp;3. Spoon the scallops&nbsp;and any sauce left in the pan over the corn. Sprinkle&nbsp;the bacon over top. Finish with avocado and fresh herbs. Eat!&nbsp;

Thinly slice the onions and bell peppers. Slice the smoked sausage into 1/4 inch thick medallions.

Heat the olive oil in a large skillet over medium heat. Add the sliced sausage and sauté until browned. Drain off the excess fat.

Add the sliced onions and bell peppers to the skillet. Continue to sauté until the onions are soft and transparent.

Add the diced tomatoes (with juices), oregano, some freshly cracked pepper, and the cooked farro. Stir until evenly combined and allow to heat through (5-7 minutes). Taste and adjust the salt if needed. Serve topped with chopped parsley.

1. Preheat the oven to 400 degrees F. In a small bowl, mix together the paprika, cumin, cayenne, salt, and a pinch of pepper.2.&nbsp;Heat the 2 tablespoons olive oil in a large dutch oven or cast iron skillet set over medium high heat. Rub the chicken all over with the spice mixture, reserving&nbsp;any remaining spices left in the bowl.
