These corn fritters are crispy cakes filled with corn kernels, cheddar cheese and seasonings, all cooked together to golden brown perfection. An easy side dish that is the perfect way to showcase summer corn!

Corn Fritters

corn kernels (fresh, thawed

all purpose flour

sugar

baking powder

salt

pepper

eggs

milk

onions

cheddar cheese

Place the corn kernels, flour, sugar, baking powder, salt and pepper in a large bowl. Stir to combine.

Add the eggs and milk. Stir until a thick batter forms. Add the green onions and cheddar cheese and gently stir to combine.

Heat 1/2 inch of oil in a deep pan over medium high heat. Place 2 tablespoon size mounds of the fritter mixture in the pan, then flatten them.

Cook the fritters for 3 minutes per side, or until they&#x27;re golden brown and crispy. Repeat the process with any remaining batter.

Add toppings if desired, then serve immediately.

Fritters are crispy, fun-sized, and packed with flavor. Try this version made with corn and zucchini, and dunk them into a zesty jalapeño cream!

C vegetable oil (sunflower

C unsweetened nondairy milk

tbsp apple cider vinegar

tbsp pickled jalapeño slices (5-6 slices)

garlic

tsp mustard

tsp sea salt

tsp black pepper

C corn,

C shredded zucchini (about 1 large zucchini)

C shallot

C all-purpose flour

C fine corn meal

yeast

tsp smoked paprika

tsp nutmeg

vegetable oil (for frying)

To make the cream sauce, place all the ingredients in a tall jar or container. Place an immersion blender into the contents of the jar and run it moving it slightly up and down for 30 seconds to 1 minute until slightly thicker and smooth. Alternatively, you can use a store bought vegan mayonnaise and combine finely chopped jalapeños, minced garlic, apple cider vinegar, ground mustard, ground black pepper and sea salt into it. Add a small amount of nondairy milk to thin it out if necessary. Refrigerate for at least 1 hour before serving. The homemade version will thicken a bit more once chilled.

To make the fritters, place shredded zucchini in a strainer and coat with 1/4 teaspoon of sea salt. Let it sit for 10 minutes, then squeeze the excess water out of the zucchini shreds onto paper towel or a tea towel.

Break it up into shreds that should feel much dryer in a large mixing bowl and combine with corn, minced shallot, all-purpose flour, corn meal, nutritional yeast, another 1/4 teaspoon of sea salt, ground black pepper, smoked paprika, and nutmeg. Stir to combine well. Once all the vegetables are nicely coated, stir in nondairy milk and combine into a thick batter.

Heat a nonstick pan or cast iron skillet over medium heat with 2 tablespoons of vegetable oil. Use a scant 1/4 cup of batter for each fritter, and shape into a patty with your hands.

Place 2 to 3 fritters in the pan at a time and fry about 2 minutes per side or until golden brown on both sides.&nbsp;Remove them from the pan and place onto paper towels to absorb any excess oil.&nbsp;You may need to add more vegetable oil to the pan once about half the fritters have been fried.

Alternatively, you could bake these instead. I have not tested this but I imagine it work just fine! I'm thinking a preheated 400°F oven. Line a baking sheet with parchment paper and lightly spray it with vegetable oil. Then place the formed fritters onto the baking sheet.

Bake for 20 to 25 minutes, flipping half way through bake time or until golden brown on the outside.

Combine the dry ingredients in a large bowl and mix well.

Whisk together the wet ingredients and pour into the dry ingredients. Mix until just combined.

Fold in the corn, cheese and jalapeños.

Heat a few tablespoons of oil in a large pan or skillet and fry spoonfuls of the batter until cooked through and golden brown on both sides.

Remove from the pan and serve with sour cream.

Process chickpeas, onion, garlic, lime juice, and all spices in a food processor.

Add rice flour and mix again.

Put the mixture into a bowl and add the chopped pepper, corn, and parsley. Stir with a spoon or use your hands.

Form 8 patties and fry them with some oil in a skillet from both sides (about 5 minutes each) until golden brown.

Serve with a cashew dip. Enjoy!

These are the legendary Bill Granger Corn Fritters with Avocado Salsa. The extra step that makes these corn fritters really special is blending some of the corn and cilantro (coriander) into the batter - it makes the whole fritter truly taste of corn, rather than just bursts of it when you bite into kernels. This recipe makes 12 fritters and serves 4.

Bill Grangers Corn Fritters with Avocado Salsa

cilantro/coriander leaves and some stems ((lightly packed))

tomatoes (, seeded and diced (about 3/4 cup, diced))

tbsp coriander/cilantro (, roughly chopped)

tbsp lemon or lime juice

tbsp finely chopped spring onions scallions or red onion

Tabasco sauce (, optional)

Turn on the oven to very low - just to keep the fritters warm.

Place 2 cups of the corn kernels and the onion, eggs, coriander, salt and pepper in a bowl and whizz with a stick blender until most of the corn is pureed (but still lumpy, not completely smooth). You can also do this step in a blender or food processor.

Stir through remaining corn, flour and baking powder until just combined.

Heat 1 tablespoon of the oil in a skillet/fry pan over a medium high heat.

When the oil is hot, drop 2 heaped tablespoons of mixture per fritter into the pan and cook in batches for 1 1/2 minutes each side, or until golden.

Transfer to a baking tray and keep warm in the oven while you are making the rest of the fritters.

To serve, stack 3 corn fritters on each plate and top with avocado salsa and extra cilantro/coriander leaves if desired.

Combine all ingredients, toss very gently.

Avocado Salsa

These easy corn fritters make a wonderful quick breakfast, snack, or lunch. They&#039;re made with just a few simple ingredients and can be made ahead of time. Great for meal prep, and can be easily made vegan and gluten-free.

(400 grams) frozen corn kernels

red onion

(120 grams) all-purpose flour

garlic powder

lemon juice

cilantro

black pepper

corn oil (for frying)

(150 grams) Greek yogurt

(100 grams) cucumber (sliced)

parsley

(50 grams) red onion (thinly sliced)

balsamic vinegar

If using frozen corn, no need to thaw as these can directly go in the batter. Place fresh or frozen corn kernels in a glass bowl.

Place half of the corn in the food processor jug with the rest of the ingredients, and blend to get a coarse mixture.

Transfer the mixture to the bowl with the rest of the corn, and mix it with a spatula so that the corn kernels are mixed in with the blended mixture (do not overmix the mixture).

Heat the oil in a pan or a cast-iron skillet on medium heat. When the oil is hot, using a cookie scoop, drop the fritter mixture onto the skillet and lightly flatten with a spatula or the back of a spoon.

Add 2 more scoops of fritter mixture at a time, slightly spaced. Cook the fritter on medium heat for around 3 minutes or until the bottom is golden brown, then flip over and cook for 2 more minutes. Or until corn fritters are golden brown and cooked through. If using frozen corn, it might take 1-2 minutes longer.

Repeat the process 2 more times until all the corn fritter mixture is used up.

Make Corn Fritters

Add all the ingredients in small bowl and stir well to combine.

For the yogurt sauce

In a small bowl, whisk together all the ingredients for the lemon dressing until salt and sugar are dissolved. Season well with sea salt and pepper.

In a large bowl, add cucumber, parsley, red onions, and lemon dressing. Gently toss to combine.

For the cucumber salad

Divide corn fritters and cucumber parsley salad between the plates/bowls. Spoon the yogurt sauce on the corn fritters or use it as a dip.

These corn fritters are loaded with fresh corn, rich with a touch of honey and buttermilk, light and tender on the inside, perfectly crispy on the outside!

In a bowl, whisk together the flour, cornmeal, baking powder, salt, paprika, white pepper, cayenne and black pepper.

In another bowl, whisk together the buttermilk, eggs, honey and melted butter.

To another large bowl add the corn kernels and the finely grated white cheddar cheese, then sprinkle in the flour/seasoning mixture, and toss with the corn kernels to combine well.

Pour in the buttermilk mixture, and using a spatula, fold all of the ingredients together gently, just until well combined. (The batter will be <em>thick</em>, and this is normal.)

Pour enough oil into your large non-stick skillet to just coat the bottom (for a shallow fry), turn the heat on medium, and allow the oil get hot and begin to shimmer.

Once the oil is hot, reduce the heat to medium-low, and using a cookie dough scoop (about 1 1/2 tablespoon portions) drop about 4 fritters into the pan at a time; using the back of a small spoon, gently flatten/shape the batter into a small, even, silver-dollar shape, and allow the fritters to fry about 2-3 minutes per side, until nice and deeply golden-brown.

Remove the golden fritters from the pan and allow them to drain on a paper towel-lined wire rack or platter, and repeat until all corn fritters are fried. (You can keep them in a warm 200° oven while you fry up the batches to keep them extra warm.)

Finish the corn fritters by sprinkling over a touch of salt, then garnish with minced chives; serve plain or with extra honey on the side to drizzle over top, or perhaps some sour cream with chives.

These are so good and perfect anytime. You can make them for breakfast, lunch or dinner.

Country Corn Fritter

Sift together flour, baking powder, and salt.  Mix corn and egg;  add to dry ingredients, and stir.  Heat canola oil in large skillet over medium heat.&nbsp;

Drop batter by large spoonfuls into hot canola oil. Fry about 2 minutes on each side or until golden brown. Drain on paper towels. Makes about 12 fritters

These Coriander Sweetcorn Fritters are so lovely bright and fresh full of Thai flavour.

Coriander Sweetcorn Fritters

coriander leaves

½ red chilli (finely chopped)

coconut oil

lime juice (about 2 limes)

Remove the entire husk from the corn cob and place the corn in a large pan of boiling water.  Boil for 10 minutes then remove with a slotted spoon.

Strip the corn kernels from the cob using a knife then set aside.

In a medium sized bowl add all the rest of the ingredients, except for the coconut oil and mix together until thoroughly combined.  Finally mix in the sweetcorn.

In a wide based saucepan heat up the coconut oil for 5 minutes on a gentle heat.

Fry the fritters in batches.  Take 50g of the sweetcorn mixture, ball it up and drop into the hot pan, gently press with the back of a spatula to spread out a little.  Add another couple of fritters to the pan in this way then cook for 3-4 minutes each side until golden.

For the dipping sauce, combine the lime juice, fish sauce and sugar in a small bowl and mix well.  Once the sugar has dissolved stir in the water and chilli.  Serve with the fritters.
