Are you a mushroom lover like me? If so, this is the dish for you! EXTRA Creamy Mushroom Udon is one of my first viral recipes that takes less than 20 minutes to make. A Japanese-inspired fusion recipe that I’ve been making since university is easy and super delicious. Creamy Mushroom Udon is Vegetarian-friendly and affordable, perfect for busy and always on the go!

Creamy Mushroom Udon

servings of Frozen Udon

Cremini Mushroom (sliced)

Shiitake Mushroom (sliced)

pack of Shimeji Mushroom

Butter

tbsp of Soy Sauce

Garlic

green Onion (separate white & green)

Dashi stock or chicken stock (or vegetable stock)

Cream

Pour hot water over frozen udon so udon can separate, drain and set aside.

In a hot pan, add in all of the mushrooms. Let it sit and occasionally stir for 2-3 minutes or until the mushroom is soft and fragrant. DON’T ADD ANY OIL YET, and this will help release the fragrance of the mushroom.

Once the mushrooms are fragrant and soft, add 2 tbsp of butter, 2 tbsp of soy sauce, the white part of the green onion, and minced garlic. Sauté together for 1-2 minutes.

Pour in dashi stock, let it sizzle for 1-2 minutes, and slowly add cream/milk. Pour it in slowly and keep stirring to make sure everything is mixed well.

Now add in the udon and let it sit, and soak in all of the sauce for 2-3 minutes.

Optional, but HIGHLY recommended, add in 2 tbsp of butter right before serving. Garnish with some green onion & you are ready to serve!!

The udon is coated in a creamy and umami miso white sauce that is super addicting and savory. The best part is, this creamy chicken udon takes less than 25 minutes to make, plus it tastes fantastic the next day, which is perfect for meal-prepping. What are you waiting for? Creamy Chicken Udon

Serving of Udon

chicken thigh

Salt and Pepper

Oregano

tbsp of Garlic Powder

Garlic (minced)

tbsp of Miso Paste

Green Onion

Seaweed Powder (optional)

Cut the chicken in bite-size pieces and season with salt and pepper, oregano, and garlic powder.

In a hot pan, add in 1 tbsp of oil and add in the seasoned chicken. Saute the chicken for 3-4 minutes.

Add in the sliced mushroom and minced garlic and saute together for another 2-3 minutes.

Pour in cream, miso paste, mix well.

Add in the udon and let it sit, and soak in all the sauce for 2-3 minutes.

Optional, but HIGHLY recommended, add in 2 tbsp of butter right before serving. Garnish with some green onion, seaweeds & you are ready to serve!!

Creamy Masago Udon

Frozen Udon

Flour

tbsp of Dashi Powder

Garlic Powder

Black Pepper

tbsp of Japanese Mayo

tbsp of Masago

Seaweed powder

In a pan, melt butter. Once butter is fully melted, add in flour to create a roux.

Slowly add in cream or milk, dashi powder, a pinch of black pepper, and garlic powder. Mix until there is no flour lump and let it simmer on medium-low heat for 1-2 minutes or until the sauce becomes thick.

Turn the heat off, Add in udon noodles and mix well.

In a separate bowl, mix together mayo and Masago. Add in the udon and mix it all.

Optional, but HIGHLY recommended, poach an egg.

To serve, start with the Creamy Masago Udon, add on the poached egg & garnish with seaweed and green onion. ENJOY!

When I tell you I made Creamy Kimchi Udon almost every day in university, I am not joking around. Easy and affordable Creamy Kimchi Udon takes less than 20 minutes to make and is super delicious! This recipe is vegetarian-friendly, but you can also add crispy bacon or chicken breast to add extra protein. Optional, but HIGHLY recommended, topped with a crispy fried egg, and mix the yolk with the fried udon.

Eggs

In a bowl, add in the frozen udon and pour hot water over it. This will help the noodles separate without “cooking” the udon.

In a pan, add in oil and turn the heat to medium high. Add in sliced mushroom and cchopped kimchi, and saute for 2-3 minutes.

Once kimchi is fragrant, add in soy sauce, 1 tbsp of Korean Chilli flakes (optional), and dashi powder (optional) and asute for anotehr 1-2 minutes.

Pour in ¼ cup of cream, milk, or vegetable stock, add in udon noodles and cook for another 2-3 minutes.

Optional, in a hot pan, fry an egg and serve onto the noodles. Garnish with green onions and sesame seeds.

“WOW, what did you put in here? It is UNREAL” is what my husband told me when he tried my Korean-inspired Spicy Garlic Bread. I am not exaggerating when I say this Korean Spicy Garlic Bread is the BEST garlic bread you will ever try! Korean Spicy Garlic Bread

Whole Garlic (Large)

tbsp of Olive Oil

Butter (unsalted, softened)

Gochujang (adjust to your spice tolerance)

Oregano (optional)

Fresh Chives (chopped)

Cut the top part of the garlic off and drizzle on 1 tbsp of olive oil. Season with salt and pepper, wrap in tin foil and roast the garlic at 380 F for 40 Minutes.

Add in soft butter, gochujang, black pepper, oregano, and fresh chives in a bowl.

Squeeze out the roasted garlic, mix and taste to adjust the spice level by adding more gochujang.

Spread a generous amount of garlic butter over bread and bake at 400F for 10 minutes.

OPTIONAL: add on cheese to make cheesy, spicy garlic bread. ENJOY!

Ginger Glazed Oyster Mushroom

King Oyster Mushrooms (sliced 1.5 inches thick)

ginger (freshly grated)

Cut the mushroom into 1.5 inch thick pieces and score the mushroom on both sides.

Season the mushroom with salt and pepper.

Mix freshly grated ginger, honey, garlic, soy sauce, and black pepper in a bowl.

In a pan, drizzle in oil, and turn the heat to medium-high. Once the pan is hot, add the mushroom and pan-fries for 2-3 minutes on each side or until golden brown.

Drizzle on the sauce and let it simmer on high heat for another 2-3 minutes

Garnish with green onion and sesame seeds, and enjoy!

Did you hear that CRUNCH? Super CRISPY and savory Salt and Pepper Fries is seriously a must-try recipe that is easy to make at home! The fries are fried till crispy on the outside while fluffy on the inside, and it is then seasoned with my secret addicting salt and pepper seasoning. You need to give these Salt and Pepper Fries a try because they are seriously a game changer!

Salt and Pepper Fries

large Russet Potatoes (peeled and rinsed)

¼ cup of Corn Starch

Vegetable Oil

Cilantro

salt

garlic powder

white pepper

½ tsp of ground Sichuan peppercorn

mushroom powder

¼ tsp of ground chili

Cut Potato into ½ inch thick sticks or your desired thickness. Keep in mind the potatoes do shrink as you cook them.

Soak the potatoes into ice-cold water for 30 minutes.

Add salt and water (enough to cover all the potatoes) to a large pot, and bring it to a simmer.

Add the potatoes and blanch for 3-5 minutes; you want the potato to be 50% cooked.

Pat dry the fries with a paper towel and coat the fries with a thin layer of corn starch.

Heat oil in the pan to 320 F. and add in ⅓ of fries. Deep fry for 3 minutes, remove and repeat the process with the remainder fries.

Turn the heat up to high ~ 380 F and double fry for another 3-4 minutes or until crispy and golden brown.

Season the fries with salt and pepper seasoning, chopping cilantro and green onion, and enjoy!

SPICY GARLIC CHICKEN

chicken thigh (boneless skin-on)

Season the chicken with salt and pepper, and coat the chicken with a thin layer of cornstarch on both sides.

In a pan, drizzle in oil and turn the heat to medium-high. Once the pan is hot, add the chicken, skin side facing down.

Pan-fry the chicken for 4 minutes on each side or until crispy and golden brown. Remove and set aside.

Pour in the sauce, Mix, and simmer for 30 seconds

Add back in the chicken and cook for 1 minute on each side on high heat.

This coconut milk braised pork belly with miso is a perfect dish to describe what a fusion dish looks like. Surprisingly, it will not taste and flavor a Japanese or Southeast Asia dish. And the good news about this recipe is that it is effortless to cook. There are just a few ingredients.

Savoury, delicious, and super affordable to make at home, Spicy Garlic Spam Fried Rice is the perfect recipe for weeknight dinners. If you don’t like spicy food, you can also skip the red chili, and it will still be super delicious.

Spicy Garlic Spam Fried Rice

Spam

Mix soy sauce, garlic, red chili, sesame seeds, sesame oil, and sugar.

In a pan, turn the heat to medium-high, and add the chopped spam. No need to add any oil; pan-fry for around 4-5 minutes or until crispy and golden brown.

Push the spam to the side, and add white parts of the green onion and eggs. Scramble the eggs for around 2-3 minutes.

Finally, add in the rice, roasted seaweed, and green onion, and drizzle in the sauce. Saute on high heat for another 2-3 minutes.

Optional, finish off with a fried egg and enjoy!

I am making the EASIEST, TASTIEST, Sushi Bake! This recipe is super fun to make, and it is perfect for bringing to a dinner potluck. There are so many different variations and flavors, but today, I am making Spicy Tuna and Creamy Crab. For those who never tried Sushi Bake before, imagine a warm creamy hand-rolled sushi wrapped in crispy nori.

Spicy Tuna and Creamy Crab Sushi Bake

½ lb Imitation Crab

Japanese Mayo

tbsp Ponzu Sauce

tbsp Cream Cheese

tbsp Masago

Tuna (soaked in oil)

tbsp Japanese Mayo

Korean Chili Paste

tsp Black Pepper

Rice

Sushi Seasoning

Mix rice and Sushi Seasoning to make sushi rice.

Layer the Sushi Rice on the bottom of the dish.

Add a layer of Masago on top.

Add Furikake on top.

Add a layer of  Half Creamy Crab on one side, and half Spicy Tuna on the other.

Drizzle on more Japanese Mayo and Furikake.

Finally, Put in the broiler for 3-5 minutes until it gets crispy at the top.

Serve with crispy seaweed on the side.
