If u do Keto and know the rules, you know off hand what substitutions you need to make to be Keto. I made them tonight, used stevia raw for coconut sugar (diabetic house) no sugar organic peanut butter and  dark chocolate chips! Delish!

Keto Peanut Butter Cookies Are Low-Carb, High Reward

These healthy and Gluten-Free Raspberry Thumbprint Cookies are made with a cashew butter base and topped with homemade raspberry chia seed jam!

Gluten-Free Raspberry Thumbprint Cookies

cashew butter

flax egg

maple syrup

coconut sugar

coconut flour (divided)

vanilla powder

baking soda

raspberries (fresh

Preaheat&nbsp;the oven to 350ºF.

Start by baking the jam. Add all the jam ingredients into a small saucepan and stir together. Bring to a low boil and continue to simmer for 10 - 15 minutes. Remove from heat and allow to cool for 15 - 20 minutes.&nbsp;

While the jam is cooling, prepare the cookies. Beat together the cashew butter, flax egg, syrup and sugar until smooth and creamy. Add half the coconut&nbsp;flour, along with the vanilla and baking soda, and mix until combined. Beat in the remaining coconut flour.&nbsp;

Scoop 1 tablespoon of dough into your hands and roll into balls. Place on a baking sheet and repeat until no dough remains. Use your thumb to make an indent in the center of each ball and bake for 9 - 10 minutes.&nbsp;

Remove from the oven and allow to cool for 10 - 15 minutes. Once cooled, add 1 teaspoon of jam into the center of each cookie and serve immediately!

White Chocolate &amp; Blueberry Oatmeal Cookie Bars

applesauce

oats

tsp vanilla extract

salt

tsp baking powder

white chocolate chips

blueberries -- honestly however many you want!

Combine the cashew butter, egg, applesauce, coconut sugar, and vanilla extract until smooth.

In a separate bowl combine oats, baking powder, and salt.

Add the dry ingredients to the wet and combine.

Spread the batter into a greased or parchment paper lined 8x8 baking pan.

Top with more white chocolate chips (optional but highly recommended!) and blueberries. I chopped my blueberries in half and then placed them with the cut side down, but you could totally just leave them whole as well.

These healthy chocolate chip cookies are thick, chewy, and contain no butter! This low sugar, easy recipe satisfies any sweet tooth!

Healthy Chocolate Chip Cookies

Whisk

In a large bowl, whisk together the coconut oil, applesauce, brown sugar, granulated sugar, and vanilla extract. Then, whisk in the egg, stopping as soon as it is blended.

In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.

Stir

Add the dry ingredients to the wet ingredients. With a rubber spatula, stir to combine, stopping as soon as the dry ingredients disappear. The dough will seem very stiff and dry at first. Use the spatula to gently push and &quot;smush&quot; the dough and stir and fold as needed. It will come together.

Fold

Fold in the chocolate chips. Chill the dough for at least 1 hour, or press plastic over the top and chill for up to 2 days.

Preheat

When ready to bake, preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.

Arrange

With a cookie scoop or spoon, portion the dough, then use your hands to roll into balls that are 1 ½-inches in diameter (you should have 18 total). Arrange on the baking sheet, leaving at least one inch between each. Place any uncooked dough balls that do not fit on the sheet in the refrigerator to continue chilling while the first batch bakes.

Bake

Bake for the cookies for 8 to 9 minutes, until very lightly browned around the edges and feel dry on the sides and top when lightly touched. They will still appear underdone in the centers. Do not over bake or the cookies will be dry. The cookies will not spread much as they bake.

Cool

Place the baking sheet on a wire rack and let the cookies cool on the sheet for 2 minutes. Carefully remove the cookies to the rack to finish cooling completely. The cookies will be fragile at first but will firm up and their texture will improve as they cool. Repeat with the remaining dough balls, cooling the sheet completely between batches. Enjoy!

Tahini Banana Breakfast Cookies

Bake cookies on center rack for 15 - 18 minutes until edges are golden brown. Remove and let cool on the pan for 5 minutes then transfer to a wire rack and cool completely.

Enjoy at room temp or slightly reheated in a microwave.

Peanut Butter Honey Cookies

Preheat the oven to 350ºF. Line a baking sheet with parchment paper and set aside.

In a mixing bowl, beat together the peanut butter, honey and eggs. Beat in the oat flour and baking soda.

Scoop the dough into tablespoon-sized scoops and form into balls. Place on a baking sheet and gently flatten. Use a fork to make a cross hatch pattern on the top.

Bake on the center rack for 8 - 10 minutes until the cookies are lightly golden brown.&nbsp;

Remove from oven, allow to cool on the pan for at least 15 minutes. This allows the cookies to "set". Slightly reheat in the microwave if desired and enjoy!

Blueberry breakfast cookies are packed with 9 happy and wholesome ingredients to power you through the day.

Good Morning Sunshine Breakfast Cookies

ripe medium bananas, mashed (about 3/4 cup)*

(200 grams) old-fashioned whole rolled oats*

(250 grams) any nut butter (I use almond butter)

(60 grams) chopped pecans

(75 grams) honey*

(190 grams) fresh or frozen blueberries (do not thaw frozen)

Preheat oven to 325°F (163°C). Line two large baking sheets with parchment paper or silicone baking mats. Set aside.

Add everything to a large bowl and mix together with a rubber spatula or wooden spoon until combined (or use a hand-held or stand mixer).

Scoop mounds of dough, about 1/4 cup each, onto baking sheets. 6 cookies per baking sheet since they are so large. The cookies won’t spread much in the oven, so gently press the mounds down to create a flatter shape.

Bake for 18-21 minutes until lightly browned on the sides.

Remove from the oven and let cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Cover and store cookies at room temperature for up to 4 days or in the refrigerator for up to 1 week.

Another fab recipe that I have mixed up! Used what I already had- peanut butter instead of almond butter, dark chocolate chips instead of pecans, golden syrup &amp; demarara sugar instead of honey, 1 tsp of cinnamon, 50g dried cranberries, 50g golden sultanas, 90g frozen blueberries. Very versatile recipe- thanks Sally- your recipes always work- although I'm yet to use one as written- I just have to mix up recipes in my own image!!

Hi, I tried this recipe with some substitutions. Even though the flavor was great but unfortunately the texture wasn't. They came out a little dry. What could I have done wrong? I ran out of honey so I added whatever honey I had with some brown sugar, I use rolled oats, and added dried cranberries, flax seed powder, peanut butter and toasted walnuts. The batter was a little too stiff so I added 1-2 tbsp of milk to loosen it. I liked how healthy they were and want to make it right the next time. What can I do for that?

Soft and Chewy Healthy Ginger Cookies

(286 grams) blanched almond flour

(68 grams) unrefined coconut sugar

ginger

nutmeg

fine Himalayan salt

(80 grams) pastured butter (soften, or coconut oil)

(26 grams) water

egg (room temperature)

In a large bowl, mix together with a spatula the almond flour, coconut sugar, ginger, cinnamon, nutmeg, baking soda, and salt.

In a separate bowl, whisk together with a handheld mixer or whisk the butter, honey and water. Then whisk in the egg until combined.

Using a spatula, mix dry and wet ingredients together. Do not over mix.

Cover and freeze dough for 40 minutes to 1 hour or until it's easy to handle.

Preheat oven to 350°F, and line a cookie sheet with parchment paper.

Roll the chilled dough into balls (about 1 ½ tablespoons per ball), and place each 2-inches apart on the prepared baking sheet. Flatten each cookie with the palm of your hand.

Bake for about 10 minutes or until the bottom and edges start to turn brown, then set the baking sheet on a wire rack to cool.
