A simple and fantastic recipe for Shrimp Salad. Sure to become a favorite in your home as it is in ours! A great fit for low carb and keto diets! 

Shrimp Salad

lemons (divided)

shrimp

salt

mayonnaise (or 1/3 cup mayonnaise and 1/3 cup plain yogurt

Dijon mustard

capers (coarsely chopped)

dill

shallot (minced)

lemon juice (from about 1/2 lemon)

black pepper (to taste)

celery (diced small)

butter lettuce leaves

Cut one lemon into wedges. (Reserve remaining half lemon for dressing.)

Prepare ice bath for shrimp.

Bring 2 quarts water, lemon wedges and kosher salt to boil in a large pot over medium-high heat. Add shrimp and cook uncovered 2 to 3 minutes, until just cooked through. Transfer with slotted spoon to ice bath.

When shrimp are cool, lift out of ice bath with slotted spoon. Pat dry and add to large salad bowl.

To a separate bowl add mayonnaise, Dijon mustard, capers, dill, and shallot. Squeeze remaining lemon half over (about 1 tablespoon of fresh juice). Whisk until well combined. Season to taste with pepper.

Add celery to shrimp in salad bowl. Spoon mayonnaise mixture over and gently toss to coat evenly.&nbsp;

If desired, line 6 individual serving bowls or salad plates with butter lettuce leaves.

Divide shrimp salad among 6 bowls or plates and serve.

Brioche Hot Dog Buns

all-purpose flour (453 grams, or bread flour)

yeast

sugar

Whisk together flour, yeast, sugar, and salt in a large bowl.

Heat 3 tablespoons of the butter and milk in a small saucepan until butter has just melted. Remove from heat to cool slightly.

Whisk together warm water and one egg in a medium bowl. Add warm milk and butter mixture and whisk until combined. Pour over flour mixture and stir with a rubber spatula or wooden spoon until no dry flour remains and you have a sticky, shaggy dough. Cover bowl tightly with a lid or plastic wrap and let stand in a warm place 2 to 4 hours until dough has doubled in size. Or tightly cover and chill for 12 to 24 hours to rise slowly in the refrigerator. (My preferred way, for the best flavor and texture. I typically give it a head start at room temperature before refrigerating. Just enough to let the dough begin to bubble and rise, 30-60 minutes depending on how warm the kitchen is.)

Line a rimmed baking sheet with parchment paper.

Turn risen dough out onto a lightly floured work surface and gather dough into a ball with lightly floured hands, then gently pat into a rectangle. With a sharp knife or dough scraper, divide dough into 10 equal pieces (use a kitchen scale for perfectly even hot dog buns). Shape each piece into a ball by first tucking edges under then pinching together to seal. With a rolling pin, roll one ball into a rectangle about 6 inches long. Fold rectangle into thirds as you would a letter, folding one long side to the center and folding the opposite long side over the top. Turn the dough seam-side down and gently fold the ends under to seal. Repeat with remaining dough balls, placing each bun about 1/2-inch apart on prepared baking sheet in 2 rows of 5 side by side on the baking sheet (see image). Cover loosely with a clean kitchen towel and let rise until puffy and light to the touch, about 1 hour or up to 2 hours if dough is chilled.

When ready to bake, preheat oven to 375˚F.

Whisk together remaining egg with 1 tablespoon water and brush over buns with a pastry brush. Bake 12-15 minutes or until tops are golden brown, rotating sheet halfway through baking time.

When buns are nearly finished baking, melt the remaining 2 tablespoons of butter. Once you&#039;ve removed buns from the oven, brush the tops with melted butter while they&#039;re still very hot. Transfer to a wire rack to cool completely.

In a large glass baking dish whisk together Carne Asada marinade ingredients (jalapeño through black pepper) until combined. Add skirt steak in a single layer, turning to coat with marinade. Cover and refrigerate for at least 1 hour, but no longer than 8 hours (longer will begin to break down the meat).

When you&#039;re ready to grill: preheat an outdoor grill to medium-high heat. Grill steaks for 7 to 10 minutes per side, turning once for medium-rare. Remove steaks and allow to rest for 5 minutes.

Slice thinly across the grain and serve.

Step 1

Preheat oven to 350°F (180°C). Line baking sheet with parchment paper.

Combine flour, cornstarch, baking powder and baking soda in medium bowl; set aside.

Beat Becel® Original margarine and granulated sugar using electric mixer until light and creamy. Beat in applesauce, soy milk and vanilla until blended.

Step 4

Gradually add in flour mixture and beat until just combined, scraping down sides of bowl occasionally (do not overmix). Fold in your choice of mix-ins. Refrigerate dough 30 minutes or until chilled.

Step 5
