Italian Pasta Salad

fusilli pasta,

mozzarella balls, halved

salami,

c. baby spinach

c. cherry tomatoes, halved

artichoke hearts, chopped

c. pitted black olives, sliced

olive oil

tbsp. red wine vinegar

garlic clove,

Italian seasoning

What type of noodle do you prefer for pasta salad?

Was very good! I did however add some more dressing than suggested, especially garlic. Felt it was a little dry/bland with the original amount of dressing.

This salad is delicious! The dressing is very good. I used everything the recipe called for and added shaved parmesan on top. I also used penne pasta.  I will definitely make this again!

Absolutely Delicious, but I changed quite a few things:  I substituted sun-dried tomatoes for the artichokes, used sauteed spinach instead of raw, opted the salami, doubled the cherry tomatoes and added sugar to the dressing.  So good!!

Mine came out delicious, next I will need to make sure that the salami isn't sliced thin. Big hit!

fyi - mayo isn't dairy.  Base ingredients are eggs, oil, and lemon juice.  I love the "create your own recipe" format by the way -- that helps with inspiration and substitutions!

Tender pasta, juicy tomatoes, crisp bell peppers, salami, and mozzarella cheese are tossed in an Italian dressing for the perfect make-ahead side dish.

salami (chopped)

Italian vinaigrette dressing (store-bought or homemade)

mozzarella cheese (cubed)

grape tomatoes (halved)

black olives

green bell pepper (diced)

orange bell pepper (diced)

red bell pepper (diced)

onion

parmesan cheese (shredded)

parsley (chopped)

salt & pepper (to taste)

Cook pasta al dente according to package directions. Rinse under cold water.

Combine all ingredients in a large bowl. Toss to combine.

Refrigerate at least 2 hours before serving.

The Best Easy Italian Pasta Salad

pasta

cherry tomatoes,

mozzarella cheese balls,

salami

kalamata olives, sliced

pepperoncini (optional, but do it)

red onion

fresh parsley, chopped

white vinegar (white vinegar vinegar

water

coarse sea salt (yes, tablespoons – see notes!)

garlic garlic

sugar

dry oregano and dry basil

herbs

Cook pasta according to package directions, in salted water for more flavor. Allow to cool slightly and toss with a little oil to prevent sticking.

Blend up the dressing, or shake together in a jar.

Toss all ingredients together! I like to use about three-fourths of the dressing, and then I save the rest of the dressing to add to my leftovers.

Keep in the fridge for 2-3 days. I think it actually tastes best the day AFTER you make it.

We are literally melting here in western NY so this was the perfect easy to prepare not hot lunch. In love with the dressing as well.

This Italian pasta salad sounds good. I find using bottled dressing helps to keep the pasta from absorbing too much of the oil but your dressing sounds delicious and you could just add it right before serving it. This is great for hosting parties or take along.

Served it at the new year party. Got many complement for the dish. Excellent salad.

Easy Italian Pasta Salad

Super easy Italian Pasta Salad – with pasta, tomatoes, fresh mozzarella, spicy salami, pepperoncini, olives, and easy Italian dressing. DANGEROUSLY GOOD.

Loaded and refreshing! Made with tender pasta, smoked salami, fresh veggies and herbs, two types of cheese, and a tangy homemade Italian dressing. Perfect for a picnic or summer dinner.

dry rotini

(16 oz.) grape tomatoes, (halved)

(6 oz.) can black olives, (sliced)

chopped bell peppers ((I

mozzarella pearls*

freshly grated parmesan,** ((3/4 cup))

parsley

basil***

lemon juice

oregano

tsp dijon mustard

tsp honey

tsp minced garlic

tsp red pepper flakes, (or to taste)

(and black pepper)

Cook pasta according to directions on package (I boil in 5 quarts water with 1 Tbsp salt) just barely to al dente. Reserve 1/2 cup pasta water then drain pasta.

Immediately transfer pasta to a rimmed 18 by 13-inch baking sheet and spread out to cool for 15 minutes.

While pasta is cooking and cooling chop ingredients and prepare dressing.

For the dressing whisk together olive oil, lemon juice, oregano, mustard, honey, garlic, red pepper flakes and season lightly with salt and then pepper to taste.

Add cooled pasta to an extra large bowl along with salami, tomatoes, olives, bell peppers, red onion, mozzarella pearls, parmesan, parsley and basil.

Whisk dressing once more then pour over ingredients in bowl along with 1/4 cup pasta water. Toss well to evenly coat. Thin with more pasta water as desired and season with more salt as needed.

It can be served right away or for a colder, more refreshing pasta salad, chill for 1 - 2 hours (or up to 3 days).

Spaghetti Salad is a perfect summer side dish for potlucks. Filled with veggies, mozzarella cheese, Italian dressing, and pepperoni.

Spaghetti Salad

spaghetti noodles (uncooked)

oz Italian Salad Dressing

oz package mini pepperoni

whole grape tomatoes

oz pepperoncini peppers, drained ((or mild deli style banana peppers))

orange bell pepper

mozzarella cheese ((6 mozzarella sticks))

cucumber

purple onion

salt

Cook the noodles according to package instructions, then drain and rinse with cool water. Drain and add pasta to a large bowl.

Add in ½ cup italian dressing, and mix well. Cover and refrigerate 20 minutes while preparing and slicing the olives, peppers, cheese, cucumber, and onion.

Add mini pepperoni, tomatoes, and remaining vegetables and mozzarella cheese to bowl of pasta. Add remaining italian salad dressing and gently mix, coating salad ingredients evenly. Optional: top with grated parmesan cheese and fresh parsley to serve.

Pesto Pasta Salad is simple, light and a delicious crowd-pleasing side dish! Cooked pasta, roasted asparagus, sweet cherry tomatoes, fresh pearl mozzarella and toasted pine nuts tossed in a homemade basil pesto.

Pesto Pasta Salad

sea salt (for pasta water)

short pasta

olive oil spray

asparagus

kosher salt

cherry tomatoes (halved)

pearl mozzarella

basil pesto

pine nuts

Preheat your oven to 500° and bring a pot of salted water to boil (I measure a small palmful of fine sea salt).

Spray a small, rimmed sheet pan with olive oil spray. Arrange trimmed asparagus on the pan, lightly spray with olive oil and season with kosher salt and ground black pepper. Roast for 6 minutes if asparagus is thin and 8 minutes if thicker or until tender. Rotate the pan halfway through roasting.

Once roasted, use tongs to transfer the asparagus to a cutting board and cut into thirds.

When the water is boiling, drop in the pasta and stir ocassionally. Cook following the package directions. After the pasta has cooked, drain into a colander and rinse with cold water.

In a large mixing bowl add the cooked pasta, roasted asparagus, pearl mozzarella, halved cherry tomatoes, desired amount of pest, the pine nuts and parmesan.

Toss to combine. Taste and season with more salt and pepper to taste.

Serve or cover and refrigerate until ready to serve.

my Italian Salad Dressing

Cook pasta according to instructions on the box, until al dente. Drain and rinse under cold water. Place in a large salad bowl.

Chop cucumber, pepper and onion, add to pasta.

Quarter cherry tomatoes, pepperoni slices and slice olives in half. Add to pasta.

Garnish with freshly grated Parmesan cheese and fresh mozzarella cheese, torn into pieces. Gently toss to combine.

To make dressing: combine all ingredients in a jar with lid, shake well; or whisk well in a measuring cup. Pour half of the dressing over pasta and gently toss to coat. Serve more if needed.

This Italian Pasta Salad is so easy to make in just a few minutes with rotini pasta, cucumber, red peppers, tomatoes, olives. Seasoned with a perfect homemade light Italian dressing. It&#039;s a must have cold side dish for any BBQ or potluck!

Cook pasta per package directions

Drain pasta and add to a large serving bowl.

Dice and slice all vegetables and add to the pasta.

Mix dressing ingredients in a carafe or mason jar and shake well.

Pour all dressing over top of vegetables

Toss well to coat.

Refrigerate until ready to serve.

Top with parmesan cheese if desired.

Italian Pasta Salad with Homemade Italian Dressing

extra virgin olive oil

vinegar

tbsp parmesan cheese ((Note 1))

tbsp sugar (any)

garlic clove, minced

basil and oregano

tsp dried chilli flakes (red pepper flakes) (optional)

tsp black pepper

baby bocconcini, halved (Note 2)

red capsicum/bell pepper,

cherry tomatoes, halved (~1.5 Australian punnets)

(tightly packed) fresh basil leaves

Place Dressing ingredients in a jar and shake well.

Cook pasta according to packet directions minus 1 minute. Drain in a colander and rinse under cold water to stop it cooking further. Shake excess water off well then transfer into large bowl.

Place remaining Pasta Salad ingredients in the bowl. Drizzle over Dressing and toss. Serve at room temperature.

SCOOP OUT a mug of pasta cooking water just before draining. Add 3 tbsp water to Dressing, shake well. Use this Dressing per above, but reserve 3 tbsp to freshen up pasta salad on Day 2 onwards.

Freshen up pasta salad: Bring to room temp or briefly microwave (cold pasta = dry) to warm gently. Toss with Reserved Dressing then serve.

Make ahead PRO TIP (Note 4):
