Shrimp Scampi

linguine

lbs extra large shrimp, (peeled and deviened)

Tbsp extra virgin olive oil

unsalted butter

garlic cloves, (minced (4 tsp))

dry white wine*

Salt and black pepper

red pepper flakes ((optional))

lemon juice

parsley

Cook linguine according to package instructions.

Meanwhile, melt butter with olive oil in a 12-inch skillet just over medium heat. Add garlic and saute 1 - 2 minutes until just lightly golden (don&#x27;t brown or it can taste bitter).

Add wine and simmer until reduced by half, about 2 - 3 minutes.

Add in shrimp in an even layer season with salt, pepper and red pepper flakes and cook until shrimp turn pink, about 1 1/2 - 2 minutes per side.

Stir in lemon juice and a parsley then toss shrimp and sauce with pasta. Serve immediately.

Shrimp Scampi with Broccoli Orzo

orzo pasta (or gluten-free pasta)

broccoli

extra virgin olive oil

garlic (minced)

kosher salt and fresh pepper

jumbo shrimp (tails removed)

Bring a medium pot of salted water to a boil, add the pasta and broccoli and cook according to package directions for al dente. Reserve about 1/2 cup liquid before draining.

Drain orzo and broccoli in a colander and add the oil to the pot over medium heat.

Add the garlic and cook until golden, 30 seconds. Return the drained orzo and stir to combine all.

Add 1/4 cup of the reserved liquid, or more as needed and cook 1 minute, stirring.

Meanwhile, in a large skillet melt butter and oil over medium heat.  When the butter is melted, add garlic and sauté 30 seconds.

Add shrimp and season with 1/8 teaspoon salt and pepper. Cook 2 minutes, flip, then add another 1/8 teaspoon salt and pepper. Cook an additional 2 to 3 minutes or until shrimp are opaque and cooked through.

Remove from heat and add red pepper (if using), lemon juice, and parsley.  Toss to evenly coat.

To serve, divide the shrimp and sauce over 3/4 cup orzo.

This recipe is really off.  In reviewing other shrimp scampi recipes, the lemon and wine is far less that what is recommended here.  This recipe produced a lot of liquid and I had to use corn starch to thicken.  The overall taste was very lemony.

This is very yummy! I accidentally poured some red wine, instead of white wine in the pan (and then a little rose as I found I didn't have white)...but it was still delicious! I omitted the red pepper flakes on account of my elderly mother who can't stand a speck of heat, otherwise I would have tried that as well. I would definitely make this again. Thanks for sharing!

Easy to make, but did anyone have trouble with the cheese clumping? I couldn’t get it to smooth out even by adding extra butter or oil.

Simple and easy to make.  I enjoyed it and was surprised that it was not too high in the calorie department.  My only recommendation is using unsalted butter.  It gives you more control of your seasoning and flavor profile.

In a large cast-iron skillet, heat the oil over medium heat for about 1 minute. Then add the garlic and let cook, stirring, for about 1 minute. Do not let brown! Add the shrimp and lemon zest; season with salt (and red pepper flakes, if desired).

Toss until the shrimp turns pink and opaque in the center, about 2-3 minutes. Add the white wine; toss 1 minute. Add the Carnation Evaporated Milk and stir just until sauce is homogeneous. Let cook for about 1-2 minutes.

Remove pan from the heat, stir in lemon juice. If desired, sprinkle 2 tablespoons chopped parsley and/or basil leaves. Serve over pasta, zoodles (keto) or with a hard-crusted bread to soak in the sauce. Enjoy!

Instant Pot Shrimp Scampi

Turn the instant pot on sauté mode. Melt butter, add oil, garlic and shallots. Sauté for 2-3 minutes until fragrant. Add wine and cook until reduced (3 mins). Add shrimp, season with salt, pepper and pepper flakes. Sprinkle with fresh lemon and continue to sauté until shrimp is well coated.

Remove shrimp from pot* and add in chicken stock and pasta. Separate the pasta the best you can** Top with shrimp and cover the pot. Cancel sauté mode and turn the instant pot on high for 3-minutes. 

When time is up quickly release all pressure. Open the instant pot, add capers (optional) and stir. Season with fresh parsley and serve with fresh parmigiana cheese. 

Buttery, tender Shrimp Scampi in a light lemon and garlic sauce. Serve over fresh pasta, rice or zucchini noodles.

Quick Shrimp Scampi Recipe

tbsp Land O Lakes® Butter

salt & pepper

chicken broth

Make sure you have all ingredients prepped and ready to go before cooking!

Heat a large skillet over medium-high heat. Melt in 2 tbsp of Land O Lakes® Butter with Olive Oil &amp; Sea Salt, then toss in garlic and cook until fragrant, about 30 seconds.

Add in uncooked shrimp and season with salt and pepper. Let cook about 2 to 3 minutes on one side, then flip and continue cooking an additional 1 to 2 minutes. Pour in the chicken broth, lemon juice and red pepper flakes and bring to a small simmer.

Add in the remaining 1 tbsp butter and cook just until the shrimp is fully cooked. DO NOT OVER COOK!

Remove from heat and stir in the chopped parsley. Serve immediately and enjoy!

Place the oil and butter in the Instant Pot. Set to Sautee.

How to Make the BEST Shrimp Scampi

Thaw the shrimp in cool water and remove the shells then devein the shrimp. Discard the shells, rinse and drain the shrimp then transfer to a small bowl. Drizzle with 2 tablespoons olive oil, half of the garlic, 1/2 teaspoon kosher salt and the red pepper flakes. Toss to coat and set let sit for 20 minutes for flavors to build.

In a large skillet, warm 2 tablespoons olive oil over medium heat. Add the shrimp and garlic mixture to the skillet, spacing evenly in the pan. Cook for 1 to 1 1/2 minutes then flip the shrimps over when they begin to become opaque. Cook for 1 more minute or so, watching so the shrimp turn golden but don&#x27;t brown too much and the garlic doesn&#x27;t burn. Transfer the shrimp to a small bowl or plate. If you have browned bits of garlic, move the skillet from the heat and remove the browned garlic as it will be bitter.

Melt 3 tablespoons of the butter in the skillet over medium heat and add the remaining garlic. Cook for 30 seconds or until fragrant then stir in the white wine and lemon juice. Cook for 5 minutes or until the sauce thickens and reduces by half, stirring occasionally.

Add the shrimp with any juices back to the pan and stir in the last tablespoon of butter and 1/2 teaspoon kosher salt or to taste. Sprinkle with the minced parsley, stir, and cook for 1 more minute. Serve warm with sourdough bread for dipping, or over pasta or rice.

Divide tortillas and shrimp evenly among 4 plates.  Spoon pan sauce over shrimp, top each with freshly grated parmesan, scallions, and Caesar slaw.  Divide remaining 3 tablespoons of dressing evenly over tacos.
