Homemade Whipped Cream

(240 milliliters) cold heavy cream cream

Tablespoons confectioners’ sugar sugar*

teaspoon pure vanilla extract

Using a hand mixer or a stand mixer fitted with a whisk attachment, whip the heavy cream, sugar, and vanilla extract on medium-high speed until medium peaks form, about 3-4 minutes. Medium peaks are between soft/loose peaks and stiff peaks and are the perfect consistency for topping and piping on desserts.

Use immediately or cover tightly and chill in the refrigerator for up to 24 hours. Freezing prepared whipped cream sometimes causes it to lose its creamy texture, but it definitely works.

My mother taught me to make whipped cream exactly this way except she ALWAYS chilled the bowl and beaters.

I use super fine sugar which I’m my area has gotten crazy expensive for less than 3 lbs so I make my own I use in inexpensive Ninja “blender” it’s shaped like a 5 cup measuring cup &amp; buy a bag of your favorite sugar I run it through blender until it’s the size texture I want ( do a couple of cups at a time) I store in glass container and use it for baking sugar syrup whipped cream etc. I don’t remember which blog recommended this but it’s so inexpensive &amp; a little work compared to $$$ I would have spent.

I have used real whipped cream for years! The frozen stuff just tastes like a lot of chemicals to me.

I live Chantilly whip cream and almond flavored whipped cream. 
All good tips. Another reason to use sifted powdered sugar is that the cornstarch in powdered sugar helps hold the whipped cream shape when used for decorating.

This was amazing! I don't have a mixer, so I put it in the blend and pulsed twice, and then went to the highest speed. This recipe and the ratio's she came up with for the cool whip is absolutely great! I have tried a few recipes this year, and this one is hands down, the greatest. I could not stop licking the spatula.

Homemade Whipped Cream | Sally's Baking Addiction

Using only 6 ingredients, this perfect angel food cake bakes up tall, light, and airy. For best results, read the recipe in full before beginning and have all your ingredients ready to go. Enjoy!

Angel Food Cake

(350 grams) granulated sugar*

salt

egg whites,

cream of tartar

vanilla extract

sugar

Adjust the oven rack to the lower middle position and preheat oven to 325°F (163°C).

In a food processor or blender, pulse the sugar until fine and powdery. Remove 1 cup and set aside to use in step 3; keep the rest inside the food processor. Add the cake flour and salt to the food processor. Pulse 5-10 times until sugar/flour/salt mixture is aerated and light.

In a large bowl using a hand mixer or a stand mixer fitted with a whisk attachment, whip egg whites and cream of tartar together on medium-low until foamy, about 1 minute. Switch to medium-high and slowly add the 1 cup of sugar you set aside. Whip until soft peaks form, about 5-6 minutes. See photo and video above for a visual. Add the vanilla extract, then beat just until incorporated.

In 3 additions, slowly sift the flour mixture into the egg white mixture using a fine mesh strainer, gently folding with a rubber spatula after each addition. To avoid deflating or a dense cake, don’t add the flour mixture all at once. Sift and very slowly fold in several additions. This is important! Pour and spread batter into an ungreased 9 or 10 inch tube pan. Shimmy the pan on the counter to smooth down the surface.

Bake the cake until a toothpick inserted comes out clean, about 40-45 minutes. Rotate the pan halfway through baking. The cake will rise up very tall while baking. Remove from the oven, then cool the cake completely upside-down set on a wire rack, about 3 hours. (Upside-down so the bottom of the tube pan is right-side up, see photo and video above.) Once cooled, run a thin knife around the edges and gently tap the pan on the counter until the cake releases.

If desired, dust with confectioners&#8217; sugar. Slice the cake with a sharp serrated knife. Regular knives can easily squish the cake. Serve with whipped cream and fresh berries.

Store leftovers in the refrigerator for up to 5 days.

I never knew angel food cake could be so heavenly! My husband always said it was his favorite but I never realized why until I tried this recipe. Thanks for all the great instructions. I've made it several times successfully but the last 2 times it came out way too moist. Any thoughts? Thank you :)

Just a question, I love this recipe, it is my favorite all time angel food cake.  I was wondering if I wanted to make a chocolate angel food, would I have to use less flour for the cocoa addition or just add the cocoa.  I have looked at lots of chocolate angel food recipes and lots of regular angel food cake recipes and it seems to me the amounts of flour and sugar vary a lot from recipe to recipe, I think this recipe hit the jackpot.  The amounts of sugar, flour and cocoa vary a lot in recipes too, from 1/4 cup to 1/2 cup, very confusing.

The chocolate angel food cake was excellent, I gave half to my cousin and she and her husband loved it.  I used your recipe and just added 1/4 cup plus 1 T of cocoa along with the flour.  The result was a nice rich chocolate, not too sweet and nice and moist.  Really good with some fresh blackberries from my patch and whipped cream!  I debated removing some of the flour, but it didn’t really need it.

I love the recipe, but the way that it is presented is difficult to navigate.  For example, one section reads "save some of the sugar aside," and then another section reads "save 1 cup of sugar aside" ; one section refers to vanilla, and the other doesn't.  The two extra table spoons of flour is confusing too.  Luckily I did a large scoop.  I hope that it turns out o.k.  It was delicious last time.

I have to agree with Sherry.   I realize the responsibility it is on the baker to read the recipe through in its entirety before starting--which we mostly did (a little challenging baking with small children :)--but I still got tripped up with setting the sugar aside.  Most times I've seen it, it is listed in the ingredients as  "3/4 cup + 1 cup, divided" or something like that.  Just this one little addition to the recipe would help a lot, I think!  Thanks for sharing!

My husband out of the blue said he wanted an angel food cake for his birthday and I have never tackled one before. I looked over a ton of recipes and this one looked the most promising! Made it tonight along with your whipped topping recipe- so delicious!! I had 2 problems- one was self sabotaging... I ordered the special pan, but when I got it- it was only 7" so I saw your angel food cupcakes and threw the remainder into them. But they were more dense and did not rise as much... My other problem was folding in the dry ingredients, I tried not tonmix too much, but kept finding spots of dry ingredients when I was pooring into the cake pan! How do you know you mixed enough without overmixing?

I chose this recipe for the September baking challenge because I had already been making so much bread and I’ve been wanting to try to make angel food cake. This recipe did not disappoint!! I will absolutely make it again. I made your strawberry sauce recipe, but I made it a mixed berry, to top it and also some homemade whipped cream. The family loved it!! Thanks for the recipe!!

I usually don’t leave reviews, but I want to say that this angel food cake was too sweet (and I like sweets)! Followed the recipe exactly and the texture was great, but the cake had a taste of almost marshmallow. Have had great angel food cake in the past, sadly this was not the recipe for me.

Angel Food Cake | Sally's Baking Addiction

This recipe, part of our <a href="http://www.bonappetit.com/recipes/holidays-recipes/article/throwback-thanksgiving/">Throwback Thanksgiving feature</a>, is from our 1970 issue. Mincemeat can be purchased at specialty baking shops, or made with a combination of dried fruits, rum or brandy, brown sugar, and baking spices. It's traditionally mixed with beef suet, but you can substitute butter or schmaltz.

Country Mince Pie

Mincemeat Pie Filling

This recipe, part of our Throwback Thanksgiving feature, is from our 1970 issue. Mincemeat can be purchased at specialty baking shops, or made with a combination of dried fruits, rum or brandy, brown sugar, and baking spices. It's traditionally mixed with beef suet, but you can substitute butter or schmaltz.

Bon Appétit

Mix mincemeat, apple, and bourbon in a large bowl. Line a 9" pie pan with pastry. Fill with mincemeat mixture. Top with remaining pastry cut to fit or lattice top. Slit top crust. Bake at 400° until crust is golden brown, 30–35 minutes. Serve pie warm with whipped cream, if desired.

If you’re feeling really decadent and fancy (as you should), add a splash of half-and-half or heavy cream to this hot chocolate just before serving.

Bring ¾ cup water to a simmer in a medium saucepan over medium-high heat. Whisk in 3 Tbsp. cocoa powder until no lumps remain, then add milk and return to a simmer. Whisk in chocolate and sugar and cook, whisking frequently, until mixture is smooth and creamy and chocolate is melted, about 5 minutes.

Divide hot chocolate among mugs. Top with whipped cream and dust with cocoa powder.

The rye flour will make the crust look darker than your standard pie dough. If it starts getting too dark while baking with the custard filling, tent it with a ring of foil.

Whisk rye flour, sugar, salt, and 1½ cups all-purpose flour in a large bowl to combine. Add butter and toss to evenly coat. Working quickly and aggressively, use your fingers to rub butter into flour to create large shaggy pieces of dough (you want some pieces of butter that are flat and thin and some that are large and chunky). Drizzle 5 Tbsp. ice water over, running your fingers through flour mixture to evenly distribute. Knead dough in bowl until it starts to come together (it should look a little dry, but add more ice water by the teaspoonful if needed, just until dough comes together).

Turn dough out onto a work surface and knead 1 or 2 more times, pressing to incorporate shaggy edges and any loose bits. Dust surface and dough lightly with flour to keep dough from sticking. Using your hands, form dough into about a 7x5" rectangle. Using your rolling pin, gently tap and press dough to compact and tidy up edges. Roll out dough, dusting dough and surface as needed, until 3 times longer than when you started. Fold dough over onto itself in thirds like a letter to make a square. Wrap in plastic and chill until firm, at least 30 minutes.

Preheat oven to 400°. Roll out dough on a lightly floured surface to about a 12" round. Wrap dough around your rolling pin and unfurl into a standard 9"-diameter pie dish. Gently lift dough so it slumps down into edges of dish. Trim overhang and crimp as desired. Line crust with parchment paper or foil. Place dish on a rimmed baking sheet and fill with pie weights or dried beans. Bake until edges of crust start to brown, about 20 minutes. Remove parchment and weights. Decrease oven temperature to 350° and bake crust until edges are golden, 20–25 minutes. Remove dish from oven and brush 1 Tbsp. egg white over bottom of crust. Return to oven and bake until crust is golden brown, 5–10 minutes (the egg creates a water-resistant coating that helps prevent the custard from making the bottom soggy). Reserve remaining egg white for topping.

Do Ahead: Dough can be made 3 days ahead; keep chilled. Crust can be baked 3 days ahead; store tightly wrapped at room temperature.

While your crust is baking, combine eggs, egg yolk, pie filling, cream, granulated sugar, whiskey, cinnamon, ginger, nutmeg, cardamom, cloves, 6 Tbsp. brown sugar, 2 Tbsp. butter, and ½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt in a large bowl and blend with an immersion blender until smooth; try not to aerate. (Alternatively, you can whisk mixture well and blend in 2 batches in a blender until smooth and homogenous.)

Pour into crust and bake pie (still at 350°) until filling is puffed and mostly set with just a slight wobble in the center when gently shaken, 40–45 minutes.

Just before the pie is done baking, toast pecans on a rimmed baking sheet, tossing once, until slightly darkened and fragrant, 8–10 minutes.

Whisk reserved egg white, remaining 2 Tbsp. brown sugar, and remaining ¾ tsp. salt in a small bowl until foamy, about 30 seconds. Add syrup and remaining 1 Tbsp. butter; whisk just to combine. Add pecans and toss to coat.

Carefully remove pie from oven and top with pecan mixture, allowing any excess egg white mixture to drip back into the bowl. Return pie to oven and bake until filling is completely set (a tester or paring knife inserted into the center should come out clean) and nuts are not tacky to the touch, 8–10 minutes. Transfer pie to a wire rack and let cool, at least 2 hours. Serve with whipped cream if desired.

Do Ahead: Pie can be baked 1 day ahead. Store uncovered in a cool oven or at room temperature.

Pumpkin roll cake is one of my favorite fall desserts. It is super soft and fluffy and filled with a smooth and delicious cinnamon flavored whipped cream. It also look so elegant and beautiful, a true show-stopper dessert!

granulated sugar, divided (100 grams)

pumpkin puree (140 grams)

all purpose flour (90 grams)

tsp baking powder

tsp vanilla extract

sugar (for dusting)

heavy whipping cream (230 grams)

sugar (30 grams)

walnuts (optional)

Preheat the oven to 370°F (190°C). Line a 11x15 inch baking sheet with parchment paper.

On a large piece of parchment paper, generously sprinkle some powdered sugar. We will later invert the cake on this. You can also use a kitchen towel instead.

In a small bowl, sift flour, baking powder, salt and cinnamon together and set aside.

You will need two large bowls, one for the egg whites and another for the yolks. For the egg whites, it&#039;s important that the bowl is super clean and grease free. So pour a little bit of white vinegar into the bowl, swirl around and then empty it out. Wipe the bowl with a clean paper towel. Wipe the whisk attachment with vinegar too. Then, separate the eggs, add the egg whites into the super clean bowl and the yolks into the other. Be careful not to mix in any yolks into the whites.

Add ¼ cup granulated sugar to the egg yolks and using an electric hand mixer beat on medium for about 1-2 minutes, until pale and creamy.

Add in vanilla extract and pumpkin puree. Mix until combined.

Then add in the flour mixture, and mix on low for a few seconds, until just combined (do not over-mix). Set aside.

Start beating the egg whites with a whisk attachment on medium high until frothy. Then, while beating, slowly add in the rest of granulated sugar (¼ cup). Once all the sugar is added, continue beating on medium-high until stiff peaks form.

Using a spatula, add the egg whites into the batter in 3 parts and fold gently. Be careful not to overmix. The batter will be quite fluffy at the end.

Gently transfer the batter into the lined baking sheet and spread it out evenly. You can use an offset spatula to even it out.

Bake in the preheated oven for 12-15 minutes. Check by touching the surface, it should gently bounce back.

Working quickly, loosen the sides of the cake with a sharp knife. Gently invert the cake onto the dusted parchment paper/kitchen towel (The baking sheet is still hot, so remember to wear oven mitts). Gently peel off the parchment paper from the cake and roll up cake and dusted parchment paper/kitchen towel together, starting from the short end. Let it cool down on a wire rack for about 1-2 hours.

Pumpkin Cake

Whip the heavy cream and powdered sugar together until soft peaks form. Add in cinnamon and vanilla extract and beat until combined. Taste the filling, add in more powdered sugar if you like it more sweet. Continue beating on high until stiff peaks form. Fold in the walnut pieces if using. Refrigerate until ready to use.

Once cake is at room temperature, gently unroll it and evenly spread the filling over it. Reroll the cake, wrap or cover with plastic wrap and refrigerate for at least 1 hour (I think it tastes best the next day!).

Once ready to serve, lightly dust with powdered sugar. You can also pipe some more whipped cream on top to decorate. Slice and serve.

Cinnamon Whipped Cream

Give winter a warm welcome this year with a Gingerbread Cake Roll. Spiced with cozy flavors and swirled with an eggnog cream filling, this soft, fluffy cake roll makes December delicious.

Gingerbread Cake Roll With Eggnog Whipped Cream

cake flour

dark brown sugar (packed)

unsulphured molasses

sugar (for dusting tea towel)

Gingerbread Cake Roll with Eggnog Whipped Cream

preheat oven grease and parchment paper pan

Preheat oven to 350 degrees. Grease a 10 x 15 inch jelly roll pan with butter, line with parchment paper then grease the top of the parchment. Set aside.

Combine flour, ginger, cinnamon, cloves, nutmeg, baking powder and sea salt in a mixing bowl. Whisk until combined then set aside.

beat egg whites

In a separate bowl, beat egg whites with a whisk attachment until soft peaks form. Add granulated sugar then beat until peaks stiffen. Set aside.

In a separate bowl, beat egg yolks until until thickened, approximately 2 minutes. Add dark brown sugar, molasses and vanilla and beat until combined.

Add flour mixture to the egg yolk mixture, stirring with a spoon until combined.

Pour batter into prepared jelly roll pan. Smooth with a spatula then bake for 8 to 10 minutes. Cake is done after it springs back when pressed with a finger.

While cake is baking place a tea towel on your counter and generously dust with powdered sugar.

turn hot cake onto towel and roll up

As soon as cake comes out of the oven, turn it onto the tea towel to release from pan. Gently remove parchment paper then roll the warm cake with the tea towel starting with a short end.

refrigerate

Refrigerate towel-wrapped cake for 3 hours.

Gingerbread Cake

Add heavy cream, powdered sugar and eggnog to a mixing bowl and beat until stiff peaks form.

Eggnog Whipped Cream

Allow cooled cake a few minutes to come to room temperature after removing from the refrigerator then very gently unroll. Spread eggnog whipped cream on flattened cake then reroll without the tea towel.

cover and refrigerate 1 hour before serving

Cover loosely with plastic wrap and refrigerate for 1 hour before serving. If desired, dust with powdered sugar before slicing.

store in the refrigerator

Store covered cake roll in the refrigerator up to 3 days.
