While technically a mornay sauce due to the cheese, this is my go-to béchamel sauce anytime I need a white sauce!

The Best Béchamel Sauce

unsalted butter

all-purpose flour

milk

nutmeg

provolone cheese

Parmesan cheese

Salt and pepper (to taste)

In a medium saucepan placed over medium heat, melt the butter. Add the flour and cook, whisking constantly, until the flour turns light brown and emits a nutty aroma.

Slowly add the milk, whisking constantly. Once all of the milk has been incorporated, whisk in the nutmeg, and allow the mixture to come to a simmer. Once simmering, cook for 2 minutes, whisking constantly.

Remove from the heat, and add the shredded provolone a handful at a time, stirring until it melts. Stir in the Parmesan cheese and season with salt and pepper.

Chicken alfredo recipe with heavy cream, garlic, parmesan cheese, fettuccine noodles, and tender chicken breast for a classic Italian meal.

kosher salt (divided, and as needed for seasoning)

Cut each chicken breast in half through the center to create two cutlets, four total.

Lightly season both sides with salt, pepper, and paprika.

Heat a large skillet over medium heat, once the pan is hot add the olive oil.

Add the chicken and cook for 6 minutes. Flip over and cook until the internal temperature reaches 160 to 165ºF (71 to 74ºC), about 5 to 7 minutes, turn off the heat.

Rest the chicken for 5 minutes and then slice into ½-inch thick pieces.

Wash and dry the pan to use for making the alfredo sauce.

Bring 3 quarts of water and 1 ½ teaspoon salt to a boil in a large pot.

Add the noodles and cook until al dente, about 10 to 12 minutes, or according to manufacturers directions.

Place noodles in a colander and do not discard water.

While the noodles are cooking, make the alfredo sauce.

Heat a large skillet over medium-low heat.

Add the butter, once melted add the garlic and saute until fragrant, 30 to 60 seconds. Do not brown the butter or garlic.

Add the cream, ½ teaspoon salt, and pepper, stir to combine.

Bring the cream to a simmer over medium heat. Cook, stirring frequently, scraping the sides and bottom of the pan to make sure the cream does not curdle.

Reduce the sauce to about 1 cup, about 10 to 12 minutes. The sauce should be slightly thickened, coating the back of a spoon.

Turn off the heat and stir in the parmesan cheese and nutmeg. If the sauce is too thick, add in some of the pasta water or more cream, a few tablespoons at a time until the desired consistency is reached.

Add the pasta to the sauce, gently tossing to combine.

Divide the pasta among bowls, top with sliced chicken and chopped parsley.

Prepare this easy lasagne ahead of time and save in the freezer, uncooked, for when you need it during a busy week. Then just bake for an extra 45 mins.

Classic lasagne

To make the meat sauce, heat 2 tbsp olive oil in a <a href="https://www.bbcgoodfood.com/content/top-five-non-stick-frying-pans">frying pan</a> and cook 750g lean beef mince in two batches for about 10 mins until browned all over.

Finely <a href="https://www.bbcgoodfood.com/content/top-five-paring-knives">chop</a> 4 slices of prosciutto from a 90g pack, then stir through the meat mixture.

Pour over 800g passata or half our basic <a href="https://www.bbcgoodfood.com/recipes/339605/tomato-sauce" target="_blank" rel="noopener">tomato sauce</a> recipe and 200ml hot beef stock. Add a little grated nutmeg, then season.

Bring up to the boil, then simmer for 30 mins until the sauce looks rich.

Heat oven to 180C/fan/160C/gas 4 and lightly oil an ovenproof dish (about 30 x 20cm).

Spoon one third of the meat sauce into the dish, then cover with some fresh lasagne sheets from a 300g pack. Drizzle over roughly 130g ready-made or homemade <a href="https://www.bbcgoodfood.com/recipes/2982678/white-sauce" target="_blank" rel="noopener">white sauce</a>.

Repeat until you have 3 layers of pasta. Cover with the remaining 390g white sauce, making sure you can’t see any pasta poking through.

Scatter 125g torn mozzarella over the top.

Arrange the rest of the prosciutto on top. Bake for 45 mins until the top is bubbling and lightly browned.

Dredging for fish: In a medium bowl, add flour, taco seasoning, garlic powder, cornstarch, salt and pepper. Stir and set aside.

Fish taco sauce: In a small bowl, add yogurt, mayo, lime juice, taco seasoning, cayenne and black pepper. Stir and set aside.

Toppings: Chop and prepare the toppings.

To cook fish: Preheat large ceramic non-stick skillet on medium-high heat and swirl 1 tbsp of oil. In batches, dredge pieces of fish in flour mixture and fry for 2-3 minutes per side or until crispy and brown. Fish cooks fast, so don&#039;t over cook. Do not overcrowd the skillet - helps to keep fish crispy. Remove onto a plate.

To assemble tacos: Warm tortillas in a cast iron skillet on high heat for 10 seconds per side and pressing on with spatula. Fill each tortilla with 3-4 pieces of fish, add toppings and drizzle with sauce. Serve immediately with your favorite toppings (please see suggestions in notes).

How to Make Fish Tacos

Béchamel sauce or white sauce is one of the five mother sauces and an essential French classic.

370 g pasta (tagliatelle, fettuccine, rigatoni)

130 g Parmigiano Reggiano 24 months (grated)

Preheat oven to 180°C/350°F and line with parchment paper a baking tray. Add the hazelnuts and roast for 15 minutes or until golden. Remove from the oven, chop them finely with a sharp knife and set them aside until needed.

For the Parmigiano Reggiano white sauce, melt the butter in a saucepan over medium-low heat. Sprinkle the plain flour over the butter to make a “roux”, which is basically the base of the sauce.

Once you have cooked the roux for a minute (don’t let it brown), slowly stir in the warmed milk, and stir, gently but continuously, until the sauce thickens, about 5-7 minutes.

If the sauce starts bubbling, turn the heat to low and continue to stir until the sauce has reached a silky creamy consistency.

Turn the heat off, whisk in the parmesan cheese, and set the sauce aside.

Place a large pot of water over high heat and bring to a boil. Lightly season with sea salt, then add the pasta and cook for about 7-9 minutes.

Look at the instructions on your pasta packaging. See how long it tells you to boil it for, and drain the pasta three minutes before this time to have it al dente.

In the meantime, prepare the mushrooms. Heat the butter in large pan over medium-low heat, add the mushroom, shallot and thyme, and sauté for 10 minutes or until cooked through, adding a splash of pasta water (or white wine) if necessary, then season with sea salt and black pepper to taste, and discard the thyme sprigs.

Drain the pasta al dente, add it to the pan with the mushrooms and sauté all the ingredients for one more minute.

Remove the pan from the heat, stir in the Parmigiano Reggiano sauce, chopped roasted hazelnuts and freshly-chopped parsley.

Season with freshly cracked black pepper and serve immediately.

Adding the egg whites: Use a clean whisk to beat the egg whites until peaks form that just hold their shape (electric is best as it will make the job much quicker). Then take a metal spoon and gently stir the whipped whites into the white sauce in a figure of eight.

Top-hatting: Spoon the mixture into the dish. Run a cutlery knife around the edge to create a ‘top hat’ effect; this ensures the soufflé rises above the rim and doesn’t stick. Place on the baking sheet and bake for 25-30 mins until the top is golden and risen and has a slight wobble. Serve immediately.
