Classic Bisquick Peach Cobbler

Stir together Bisquick mix, milk and nutmeg in ungreased 8-inch square (2-quart) glass baking dish.

Stir together sugar and peaches; spoon over batter.

In a large microwave-proof bowl, combine the eggs, onion soup mix, seasoned breadcrumbs, dried cranberries, fresh parsley and ground beef and a pinch of salt. Mix thoroughly.Form the mixture into small balls.

In batches of 6, cover and microwave for 2-3 minutes.

In a large microwave-proof bowl, combine the cranberry sauce, ketchup, beef broth, brown sugar, onion, cider vinegar.

Cover and microwave 3-4 minutes, stirring halfway.Add the balls to the sauce and microwave for another 1-2 minutes.

Lemon Turkey Cutlets

turkey breast,

flour

pepper

eggs

panko breadcrumbs

fresh oregano, grated lemon zest

grana padano cheese or other grating cheese

olive oil, butter

orange and lemon wedges

Cut each turkey breast on the bias and on the diagonal into 3/4-inch-thick slices.

Place each piece between two pieces of waxed paper or plastic wrap.

Pound the turkey with a large flat meat pounder until slices are 1/4- to 3/8-inch thick.

Place the flour in a bowl; season with salt and pepper.

Crack the eggs into a small bowl; season with salt and pepper; whisk well.

Combine the panko, oregano, lemon zest and Grana Padano; season with salt and pepper in a third bowl.

Dip both sides of the turkey slices in the flour, shaking off the excess.

Next, dip the slices in the beaten eggs, letting the excess drain off.

Finally, dip into the breadcrumb mixture; use your fingers to coat each side. Tap off the excess.

Set aside in a single layer on a foil-lined baking sheet.

Heat the oil and butter in a large skillet over medium-high heat.

Add turkey in a single layer, in batches if necessary. Do not overcrowd the pan.

Cook, turning, until the pieces are golden brown on each side, 8-10 minutes.

Serve garnished with orange and lemon wedges.

Add the oil to a pan over medium high heat, add the beef, and break up with a wooden spoon.

Creamy Fish Chowder With Bacon, Corn and Spinach

(3 ounces) leek, split lengthwise, rinsed

bacon, diced (about 2 ounces)

white onion, diced

carrot, peeled, diced

serrano pepper, halved, seeded, minced

(32 ounces) seafood stock or chicken broth

corn kernels

heavy (whipping) cream

salt, freshly ground pepper

salmon fillet, skinned,

bay scallops,

chives

red-pepper sauce

Step 1: Remove most of the dark green section of the leek and save for other use. Dice the white and light green portion.

Step 2: Put leek, 2 slices diced bacon, 2 tablespoons olive oil, 2 diced potatoes, diced onion, diced carrot and minced serrano into a large saucepan. Cook, stirring occasionally, over medium-low heat until softened, about 10 minutes. Do not brown.

Step 3: Stir in 1 quart seafood stock and 1 cup water. Heat to a boil; reduce heat to low. Simmer, uncovered, stirring often, 20 minutes. (Base can be made several days in advance; refrigerate covered and reheat before continuing to step 4.)

Step 4: Stir in 1 cup corn and 1 cup cream. Simmer over low heat, 5 minutes. Season with ½ teaspoon salt and ¼ teaspoon pepper. Stir in 12 ounces salmon and 1 pound bay scallops. Simmer, 2 minutes.

Step 5: Stir in small bunch spinach. Simmer until salmon almost flakes, about 2 more minutes. Taste and adjust salt and pepper.

Step 6: Garnish with fresh chives. Serve right away with warm bread or oyster crackers. Pass the hot sauce.

Arepas are corn pockets, like pitas, that have origins in the indigenous tribes of South America. A popular street food or snack in Venezuela and Colombia, they can be eaten plain but are usually split and stuffed with savory fillings. This filling is a classic combination of black beans and queso fresco, but you can fill these with anything you like. Other suggested fillings include shredded cooked chicken or pork, corn salad with onion and fresh herbs, tomatoes, and avocado. Note that this calls for arepa flour, which is precooked yellow or white cornmeal. Sometimes sold as masarepa or harina precocida, it can be found in Latin American markets and some supermarkets, and is not the same as masa harina. garlic cloves,

Step 1: Heat 2 tablespoons olive oil in a small saucepan over medium-high heat and add 3 tablespoons minced onion and 2 cloves minced garlic. Cook until softened, 1 to 2 minutes. Add 2 cans beans, 1/2 cup water, 1/2 teaspoon salt, 1/4 - 1/2 teaspoon red pepper flakes, and 1/2 teaspoon oregano, cook for 3 to 5 minutes, then remove from heat and set aside, covered.

Step 1: Combine 2 cups arepa flour and 2 teaspoons salt in a medium-size bowl. Make a well in center and add 2 1/2 cups warm water. Using a wooden spoon, gradually incorporate dry ingredients, stirring until no dry lumps remain. Let rest for 5 minutes to hydrate.

Step 2: Knead dough a few times in bowl, then divide into eight equal pieces. Roll each piece into a ball on a work surface, then gently flatten to about ½ inch thick.

Step 3: Heat 1 tablespoon of oil in a large, nonstick skillet with a lid over medium heat. Add four arepas, cover, and cook until bottoms are golden brown, 6 to 8 minutes. Uncover, flip, and cook (keep uncovered) until other sides are golden brown, 6 to 8 minutes. (When they’re done, you’ll get a hollow sound when you tap on the arepa.) Transfer arepas to a wire rack. Repeat with remaining 1 tablespoon oil and remaining dough.

Step 4: When ready to serve, split arepas by slicing horizontally almost all the way through, as you would a pita, and stuff with prepared bean filling and 4 ounces queso fresco; serve with a squeeze of lime juice and some cilantro.

Heat olive oil in a Dutch oven over low heat.

Add garlic; cook until fragrant, one minute.

Remove garlic with a slotted spoon; reserve.

Cook until browned on all sides, five minutes.

Add wine to pan; heat to a boil, scraping pan to loosen browned bits.

Stir in reserved garlic, beef, remaining 1 teaspoon of the salt and remaining 1/4 teaspoon of the pepper.
