Best Basic Cheese Fondue Recipe

tbsp butter

garlic

cornstarch

Chardonnay

Kirsche (Kirschwasser)

oz Roth’s Grand Cru® (3 wedges-that have been shredded)

tsp dill (dry)

white peppercorns (black peppercorns black pepper)

nutmeg

banquette (sliced lengthwise and cubed)

In a medium saucepan, start by melting the butter on medium heat.

Add minced garlic and stir briefly.

Sprinkle in cornstarch.

Next, add your wine and Kirsch, stir well.

Follow with shredded cheese. Stir well.

As the cheese is melting, add dill, peppercorns and nutmeg.

Keep the cheese warm, not hot, by using a fondue pot, small crockpot or reheating the saucepan, periodically over low heat.

Serve with your favorite dipping ingredients, including bread, vegetables and meat. Enjoy!

Classic cheese fondue! Bread, vegetable, and ham pieces dipped in melted cheese sauce with Jarlsberg, Emmenthaler, and Gruyere cheeses.

Toss grated cheese with cornstarch: Place the shredded cheese and cornstarch in a plastic freezer bag. Seal, shake to coat the cheese with flour or cornstarch. Set aside.

Rub inside of pot with garlic, add wine, lemon juice, bring to a simmer: Rub the inside of a 4-quart pot with the cut garlic, then discard. Add the wine and lemon juice to the pot, and bring to a low simmer on medium heat.

Slowly stir cheese into the wine: Bit by bit, slowly stir the cheese into the wine. Stir constantly in a zig-zag pattern to prevent the cheese from seizing and balling up.
Cook just until the cheese is melted and creamy. Do not let boil.

Add kirsch, mustard, nutmeg: Once the mixture is smooth, stir in kirsch, mustard and nutmeg.

Transfer to a serving pot and keep warm: Transfer the cheese to a fondue serving pot, set over a low flame to keep warm. If your pot is thin-bottomed, a lit candle will probably do. If thick-bottomed, you can use a small Sterno.

Arrange dipping foods around the pot: Arrange various dipping foods around the fondue pot. (A lazy Suzan works great for this.)
To eat, spear dipping foods with fondue forks or small forks. Dip to coat with the cheese, and eat.

"I've been blessed in that whenever I traveled abroad somebody else paid for it. I remember fondue from a business trip to Zurich Switzerland. Typically fondue is about cheese and not so much about chocolate...but it can be either.\r\n\r\nI would suggest the Trudeau Alto as your fondue pot. It will not scorch your chocolate or cheese like flamed fondue pot can. It's electric but it's also basically a double boiler.\r\n\r\nIf you want to have some fun, get yourself a cream whipper.\r\n\r\nhttp:\/\/www.mscream.com\/products.asp\r\n\r\nThey can be used for other things besides whipped cream. Try putting your pancake batter into one for ultra fluffy pancakes!"

the cream with a pinch of salt over medium heat in a small saucepan until tiny bubbles show and begins to lightly and slowly simmer.

Remove from heat, add the chocolate, and whisk until smooth and full incorporated.

transfer to a fondue pot heated at low or with a low flame, or serve straight from the pot.
Arrange the dip-ables on a platter or plates around the chocolate pot. Use a fondue fork, bamboo skewer, seafood fork, or salad fork to dip the fruit pieces and other dippables into the hot melted cream chocolate mixture. Eat immediately.
If the fondue begins to feel a little stiff, add a tablespoon of heavy cream and stir. It will help it go a little longer. Eventually, it will cook down though and you may need to start a new pot.
Variations
Add a tablespoon or two of Bailey's Irish Cream to the chocolate. Other liquors such as Grand Marnier, Amaretto, or Kirsch are equally yummy.
Add a 1/2 teaspoon of cinnamon and ancho chili pepper for a nice Mexican Chocolate.
The contents of a vanilla pod or some vanilla extract are always a decadent touch to chocolate.
A good pinch of espresso powder can do wonders!
Orange zest or grapefruit zest is nice way to create a slightly fruity chocolate.
A few tablespoons of Torani flavoring syrups (the kind used for coffee or Italian sodas) can add a nice dimension of flavor as well.
Add a teaspoon of peppermint extract for peppermint chocolate fondue.
White chocolate is always a nice change, and spiked with a little liquor or citrus zest becomes heavenly.
Steeping the cream for an hour beforehand and while heating it can add a nice subtle flavor, lemongrass for white chocolate or a bag of Earl Grey tea for dark chocolate are particularly stylish and contemporary.

Smoky 3 Cheese Fondue with Toasted Garlic Buttered Croissants.

smoked gouda cheese (cubed)

gruyere cheese (cubed)

swiss cheese (cubed (or swap brie!))

corn starch

cayenne pepper

brandy

truffle oil (optional)

cooked steak cubes + assorted veggies (for serving)

croissants

butter (softened)

garlic (grated)

basil (chopped)

To make the fondue, add the cubed cheese to a bowl and toss with the cornstarch and cayenne.

Rub inside of a fondue pot with garlic; discard garlic. Pour the wine, brandy and truffle oil (if using) into the fondue pot, and place over medium-low heat. When liquid starts to bubble, start adding the cheese by the handful, stirring until melted and combined. Season with nutmeg and pepper. Keep over low heat until ready to serve.

To make the buttered croissants, combine the butter, garlic and basil in a small bowl, spread both sides of the croissants with the butter. Heat a skillet over medium heat, once hot, add the toast and cook for 3-4 minutes per side or until lightly toasted and garlic fragrant. Flip and cook another 2-4 minutes.

Serve immediately with the fondue + assorted veggies.

For the sage crostini, heat olive oil or butter over medium heat with sage until sage is crisp and oil is fragrant or butter is lightly browned

     Brush toasts with oil or butter, crumble sage over and top with flaky sea salt

For the apples and cubed bread, set aside on a platter for serving

For the pumpkin and fonduta, preheat oven to 450°F, with rack at center

 Line tray with foil and parchment, then coat the pumpkin with oil, season with salt and pepper and roast until tender and browned at edges, about 25 to 30 minutes

Place a glass bowl over a medium pot with an inch of water at a simmer

 Whisk yolks into half-and-half and whisk constantly for a few minutes to thicken, then add diced cheese a handful at a time to combine

The easiest vegan cheese fondue that requires one pot and about 10 minutes of your time! It's perfect for date nights, dinner parties and game day!

Easy Vegan Cheese Fondue (Ready in 10-Minutes)

garlic, finely minced

vegan butter (or cooking oil of choice)

all-purpose flour* (see notes)

(8 oz.) lager-style beer, at room temperature * (see notes)

(8 oz.) vegetable broth

In a medium spot over medium heat, add in the vegan butter. Once melted, add in the garlic and cook for 1 minute, or until fragrant.

Add in the flour and mix it  through until everything is evenly coated. Cook for about 1 minute.

Pour in the vegan beer, vegetable broth and mustard and mix until uniform. Bring the mixture to a boil.

Once simmering, slowly being to add the cheese a little at a time, stirring well between each addition to ensure a smooth fondue. Adjust the seasonings to taste and season with salt and pepper as desired.

If you have a fondue pot, transfer it to the pot and light it to keep the sauce warm. Serve with dippers of choice and enjoy!

Rub the cut side of garlic all over a stove-safe fondue pot (or other pot if transferring to ceramic fondue pot).

Add wine and bring to a simmer on your stove over medium-high heat.

Meanwhile, toss grated cheese with cornstarch in a large ziploc bag or in a mixing bowl.

One handful at a time, stir cheese into hot wine in a zigzag pattern, letting it melt before adding an additional handful. Once completely melted, add kirsch, if using, and let heat 1-2 minutes. Taste and season with salt, pepper and nutmeg. Serve with your favorite dippers.

Combine chocolate, 1 cup heavy cream, and vanilla extract in a small, heavy bottomed sauce pan.

In a medium bowl, toss the Swiss and Gruyère cheeses with the cornstarch.

Smash the garlic clove, but leave it whole.

Add the cheese, wine, lemon juice, garlic, salt, and pepper to the slow cooker.

Cover, turn the slow cooker on high, and cook for 15 minutes. Remove the garlic and stir. Cover again and cook for 45 minutes more on high, stirring every 15 minutes, until the cheese is melted and smooth. Be careful not to overcook or the fondue will seize.
