Very tasty, but enchiladas needed a bit more enchilada sauce. I added shredded cheese to the filling, as well as on top. Love the corn and black beans combination—will make this again. Thanks for the recipe!!!

My family loved these enchiladas. I took everyone's advice and added more sauce. I added a 28 oz. can of green enchilada sauce, and chopped olives. We will be having it again. Delish !

Seemed like a good recipe. Be careful what enchilada sauce you use. The kind I bought didn’t say hot or mild. But it was totally insanely hot. Otherwise it was good.

This turned out well enough in the end, but the meat mixture was far too "liquidly," contrary to what many of the comments say (that it was too dry). Maybe this is because the recipe calls for a "19 oz" can of enchilada sauce, but at least where I live, in Washington, DC, it (at least red enchilada sauce) only comes in 10 oz cans. I followed the directions and used two cans (plus a little more because of the comments) and actually had to strain the meat and vegetable mixture before putting it in the tortilla. Anyway, I tripled the amount of chili powder and topped it with habanero/jalapeno jack cheese, and it was fine.

Very simple to make and turned out tasty, I added some Franks hot sauce for added kick too.

This was pretty easy to make, and it tasted great.

Took a gamble on this recipe, and it paid off. Rave reviews from my husband and children, aged 7 and 10! Easy to make. Highly recommend.

These Beef Enchiladas Will Totally Make You Forget About Takeout

This ground beef casserole recipe is super easy to throw together and feeds a crowd! It&#039;s comforting and uses simple ingredients.

Ground Beef Casserole

penne

garlic (minced)

marinara sauce

Salt & pepper (to taste)

cheddar cheese

Preheat your oven to 400F and move the rack to the middle position. Grease a 9x13 baking dish (I use Pam spray).

Boil a large, salted pot of water for the penne. Cook it for 10 minutes (it should be slightly underdone so it doesn&#039;t get mushy).

Add the oil, beef, and onion to a skillet. Sauté over medium-high heat, breaking the meat up as you go along, for 10 minutes. Once it gets going, stir in the garlic. Spoon out excess fat if needed.

Stir in the marinara sauce and warm through. Give it a taste and season with salt &amp; pepper as needed.

Drain the pasta and pour it into the baking dish. Pour the beef mixture over top and then toss until it&#039;s combined with the pasta. Top with an even layer of the cheese. If you want it extra cheesy, you can stir in an additional half cup of cheese prior to topping it with the rest of the cheese.

Bake for 10 minutes, uncovered, until the cheese is nicely melted. I then broil it for a few minutes (optional) to brown the cheese up a bit. Serve immediately.

Homestyle Ground Beef Casserole

egg noodles (cooked

oz cream cheese (softened)

sour cream

Parmesan (plus an additional 1/8 cup (See notes))

tbsp vegetable oil (plus more as needed)

red onions

tsp minced garlic

red bell peppers

tbsp worcestershire sauce

14.5 oz diced petite tomatoes (do not drain)

tomato paste

onion powder

garlic powder

2 1/8 tsp seasoning salt (more

colby jack cheese (use block cheese)

sharp cheese (use block cheese)

mozzarella (I used whole milk mozzarella cheese)

Preheat the oven to 350 degrees Fahrenheit. In a small bowl, combine the Colby jack and sharp cheeses. Set to the side. Do not add in the mozzarella cheese.

To a medium bowl, add the softened cream cheese, sour cream, Parmesan cheese, parsley and green onions. Mix well. Add the noodles. Combine the noodles with the cream cheese mixture. Bit of salt and pepper for taste. Set to the side.

Egg Noodles

In a large skillet over medium high heat add the vegetable oil. Once hot add the onions and bell peppers. Saute for about 2 minutes or until the onions are translucent. Add the garlic and cook until fragrant about 20 seconds.

Add the ground beef to the skillet with the vegetables. With a spatula or wooden spoon, chop the beef up pretty well until the big chunks of beef are gone. Cook until browned. Drain. Add the beef back to the skillet. Add the Worcestershire sauce, diced tomatoes, tomato paste, onion powder, garlic powder and seasoning salt or use your favorite seasonings. Combine the seasonings, tomato and the rest of the seasonings into the ground beef and tomato mixture.

At this point, you can transfer the ground beef to a lightly greased baking dish then proceed with the next steps or remove the ground beef from the skillet then wipe it down with a paper towel.

Lightly grease the skillet then add the noodle mixture. Spread the noodles evenly into the pan. Top with the ground beef mixture. Spread it evenly as well. Next, in this order, add the mixture of colby jack and sharp cheddar cheese. To finish off this hamburger meat casserole, top with the shredded mozzarella cheese. Add extra cheese if you like.

Tent foil over the skillet or baking dish. Bake for 30 minutes. Remove the foil. Set oven to broil. Leave the oven cracked so you can keep an eye on it. Broil for about 2 minutes or until the cheese is golden and bubbly. Serve immediately or warm.

Followed the format of the recipe.  I half cooked the rice ( just till it absorbed the water ), used 2 cups of spaghetti sauce from a jar, and diced my own tomato.  Results were impressive,  one helping was not enough. Easy enough for this old guy to fix, and clean up.

I made it and added the seasonings we like and it came out fine. It’s a keeper!

Amazing and healthy recipe. I mistakingly added the full can of tomatoes without draining the tomatoes the first time I made this and it didn't turn out so well. Just made it again tonight and drained it..turned out so much better !

Also it is so much less watery when draining the tomatoes before adding it to the recipe.  I also used water instead of broth because I didn't have any broth and it turned out very well! I added a little bit of extra salt after plating my dish.

Easy, and just as GOOD as when you make rolls that take time to do. I used  2-3 ,cans of Campbells
 onion soup,  instead of the tomatoes, a different taste, but delicious,!!

This was so good. I did use 3 cups of chicken broth, I added more tomatoes and I also didn’t use an entire head of cabbage. It was too much with the entire head. I’ve already made it twice and my family loves it! Left overs are great too!

I made this today .. I did use 1 1/2 cups of V8 juice and 1 1/2 cups of chicken Broth and it was out of this world delicious.. will make it again !!

This was very tasty and easy to make. I think next time I make it will use a can of tomato soup to give it a creamier texture. :-)

There is only one step I did differently. Rather than put the cabbage in the skillet, I placed it in the bottom of my baking dish. My hubby and I don't like our cabbage soft. By placing it on the bottom of the pan. It stays slightly cripsy. Was absolutely a hit even with the kiddos.

I followed and did use the 3 cups of broth ( I’m from South Louisiana I know about cooking rice) it turned out great. I added some cayenne pepper to spice it up and I used Rotel instead of plain chopped tomatoes😚 was delish!!

I was disappointed. This was very watery and had little flavor.

Cook the pasta according to package directions, drain and set aside.

Heat oven to 350° F (177° C).
