Reminiscent of  <a href="https://cooking.nytimes.com/recipes/1016405-smoked-whitefish-salad-with-creme-fraiche-and-capers">whitefish salad</a>, <a href="https://cooking.nytimes.com/recipes/1018365-smoked-trout-spread">smoked trout spread</a> and everything <a href="https://cooking.nytimes.com/recipes/10043-bagel-and-smoked-salmon-sandwiches">bagels with lox</a>, this creamy dip combines hot-smoked fish, yogurt, everything bagel seasoning, fresh dill and lemon. It can be eaten with crisp and fresh accompaniments, such as bagel chips, cucumbers and tomatoes. Or, enjoy it in a sandwich or as a salad scooped onto a bed of greens. Feel free to add capers, horseradish, chopped celery or red onion or anything you like in your tuna salad or on your bagel, but taste before adding: The fish and everything bagel seasoning provide plenty of flavor on their own.

Everything-Bagel Smoked Salmon Dip

full-fat plain Greek yogurt (12 ounces)

hot-smoked trout

dill

lemon

lemon juice

everything-bagel seasoning (store-bought

Black pepper

In a medium bowl, stir together the yogurt, trout, dill, lemon zest and juice and everything-bagel seasoning. Season with black pepper. (The fish and bagel seasoning are both salty, so you likely won’t need additional salt.) 

Spoon into a serving bowl and top with more everything-bagel seasoning, black pepper and dill. Eat with any mix of dippers. (It keeps in the fridge for up to 4 days, but season again with lemon, salt and pepper before eating.)

Seafood and pasta is a wonderful combination, and this one-pot wonder is no exception.

Smoked Trout-Avocado Dip

3-oz. tins smoked trout

scallions

mayonnaise

kosher salt, divided

½ medium ripe avocado

black pepper

If you're not the kind of person who keeps canned fish in your pantry at all times, this is the recipe that will convert you. While smoked trout is great in this dip, any canned fish (think sardines, mackerel, or tuna) will work—just make sure it's packed in oil. Crackers optional.

Bon Appétit

Pour off excess oil from 2 trout tins, then place trout in a medium bowl.

Thinly slice 2 scallions on a diagonal. Add half to bowl with trout; reserve remaining scallions for serving.

Using a microplane, finely grate half of lemon into bowl with trout.

Cut lemon into quarters and remove any seeds. Squeeze 2 quarters over trout mixture.

Add 1 Tbsp. mayonnaise and ½ tsp. salt and toss gently to combine.

Finely chop ½ avocado. Transfer to a small bowl. Squeeze juice from remaining 2 lemon quarters over. Season with remaining ½ tsp. salt.

Top dip with avocado and a few grinds of pepper. Serve with crackers alongside.

The almond purée that is added to the smoked trout will fool you into thinking there’s a boatload of dairy in this dip. It gives the dip an outrageously creamy consistency.

Dairy-Free Trout Dip

almonds

Purée almonds, oil, ½ tsp. salt, and ½ cup water in a high-powered blender on high speed until thick and smooth, about 3 minutes. Transfer almond purée to a medium bowl.

Using a fork, smash trout into smaller pieces and mix with scallion whites, lemon zest, 1 tsp. lemon juice, and a big pinch of pepper. Taste and adjust salt and lemon juice accordingly. Transfer to a serving bowl, then top with scallion greens and more pepper.

Do Ahead: Dip can be made 2 day ahead. Cover and chill.

For this chowder recipe, we use a delicious clam juice instead of making fish stock (who has the time?). Serve with trout roe, live your best life. 

Smoked-Fish Chowder

unsalted butter

onion,

leek,

celery stalks, chopped

bay leaves

lb. small red potatoes, scrubbed, quartered

clam juice

Kosher salt, freshly ground pepper

lb. hot-smoked trout, skin removed, flesh broken into small pieces

buttermilk, room temperature

heavy cream, room temperature

Trout roe (for serving; optional)

We love Bar Harbor clam juice, which has no salt added and a gentle, briny flavor, for this chowder recipe. It’s a good stand-in for when you don’t want to bother making fish stock (i.e., most of the time).

Heat butter in a large Dutch oven or other heavy pot over medium-low. Add bacon and cook, stirring often, until brown and crisp, 8–10 minutes. Increase heat to medium and add onion, leek, celery, and bay leaves; cook, stirring often, until onion is translucent and softened, 8–10 minutes.

Add potatoes and clam juice to pot; season lightly with salt and generously with pepper. Bring to a simmer and cook, uncovered, stirring occasionally, until potatoes are tender, 10–15 minutes. For a thicker texture, smash several pieces of potato against the sides of the pot. Add trout and buttermilk and simmer about 5 minutes (to give flavors time to blend together). Taste and season with more salt and pepper as desired. Remove from heat and stir in cream.

Ladle chowder into bowls, top with trout roe, if desired, and season with coarsely ground pepper.

Do Ahead: Chowder can be made 2 days ahead. Let cool; cover and chill. Reheat gently over low before serving.
