Working with one big handful at a time, lightly squeeze the grated cucumber between your palms over the sink to remove excess moisture. Transfer the squeezed cucumber to a serving bowl, and repeat with the remaining cucumber.

Add the yogurt, olive oil, herbs, lemon juice, garlic, and salt to the bowl, and stir to blend. Let the mixture rest for 5 minutes to allow the flavors to meld. Taste and add additional chopped fresh herbs, lemon juice, and/or salt, if necessary (I thought this batch was just right as-is).

Serve tzatziki immediately or chill for later. Leftover tzatziki keeps well, chilled, for about 4 days.

Perfect, no adjustments needed.  I did use cilantro instead cause thats what I had.

I am sorry but found this dip was way to mild for tzatziki.  Tasted more like a cucumber dip.

I doubled the garlic, not really sure how much dill but probably about 50% more than recipe.  And it was great.

hello there ! thank you for being there for a moment-notice that i was making "tzatziki" for the gyros tonight for dinner.  Had no lemon or herbs, added little salt &amp; garlic pepper to meat. For the lemon &amp; herb, i used a little of (Marie's market reserve) meyer lemon basil dressing, which also had an oil) in the sauce mix. Cuz i reviewed your's, i was able to make a "thumbs-up" for dinner. That was the closes i could get to your ingredients. Thank you so much. I salted the cucumbers first to take out the water of it, faster.
And, used dried dill, as didn't have the fresh one. Anyway, it turned out great!

We liked this recipe so much, I a made it again tonight. Both times I added about 1/8tsp lemon zest; and used 2% Greek yogurt.  This time I didn't have fresh dill, so used 1 tsp dried dill and 1 tbsp fresh mint. Love the flavor, the consistency and how it enhances some of our favorite Mediterranean and east Indian entrees.

Add the ground pork, ground beef, fresh herbs, spices, salt, and pepper to a large mixing bowl. Use your hands to mix everything until well combined.

Scoop the meat mixture using cookie dough scoop to form the meatballs and then roll them in between the palm of your hands. Place them on a sheet pan that has been drizzled with olive oil.

After all of the meatballs have been rolled and placed on the sheet pan, bake them at 425 degrees for 25-30 until they have cooked all the way through.

While the meatballs are cooking, make the tzatziki sauce. Add the cucumber, garlic, and dill to a food processor and pulse until finely chopped. Add the cucumber mixture to the Greek yogurt and still until well combined. Stir in the lemon juice and salt and store in the fridge until ready to serve.

When the meatballs are done, let them cool slightly and then serve with the tzatziki sauce. Enjoy!

I have made this tzaztiki sauce three weeks in a row to just have on hand. I cannot get enough! I love it for my midday snack with fresh veggies and I have been putting roasted cherry tomatoes on top and serving on warm bread as an appetizer.

Hello!  I followed this recipe and my meatballs came out very dry.  They were on the larger side — we made 20 total. Baked for 25 min at 425.  Am I missing something?

Homemade Tzatziki Sauce Recipe

Greek yogurt

sour cream

sea salt

½ TBS white balsamic vinegar

TBS lemon juice

tsp dill ((minced fresh,

Place a fine mesh strainer on top of a smaller bowl (to catch the water as it drains). Be sure that the strainer does not touch the bottom of the bowl and that there is at least 1-2 inches between them.

Put a coffee filter on top of the strainer.

Mix 1 cup Greek yogurt and ¼ cup sour cream together. Carefully scoop it onto the coffee filter/strainer and place it in the fridge overnight or for at least 4 hours.

To strain the yogurt/sour cream:

De-seed and grate your cucumber. Put it in a colander over a bowl and sprinkle with salt.

Let it sit on the counter for at least 2 hours, occasionally pushing out the excess water.

To strain the cucumber:

When you’re ready to make the sauce: squeeze out all excess water from cucumber by pushing it out while in the colander. Then get some thick paper towels, put cucumber in them and ring it out.

Put yogurt mixture in a clean, dry mixing bowl. Add all ingredients except cucumber. Once thoroughly mixed add cucumber and refrigerate for at least one hour to let flavors blend.

Serve with your favorite Mediterranean food like falafel or gyros!

To make seasoning, mix all spices together. It will make about 1/2 cup. Set aside for later.

For the chicken, butterfly boneless, skinless chicken breasts into 2 even pieces each. Rub Greek seasoning evenly over chicken. Place in a shallow dish or large plastic bag with lemon juice, vinegar and olive oil. Let marinate for 30 minutes.

While chicken is marinating, prepare the Tzatziki Sauce. Grate the cucumber (you can peel it but I don't) onto a mesh strainer or paper towel and squeeze out as much liquid as you can. Add to a bowl with remaining ingredients. Stir to combine and refrigerate until ready to serve.

Preheat grill or grill pan to medium-high heat. Grill chicken for 8-10 minutes per side, or until a thermometer inserted in the center reads 165°F. Remove from grill and slice. Serve with Tzatziki Sauce.

For about three years now I have used this recipe, and I am not entirely sure how I found it online. I just showed up at your website one day and found it, and ever since it has become an instant hit. The Catholic Church being the cornerstone of my life, I’ve made this for men’s groups, special seminarian dinners, I even adapted the recipe to work on full bone-in chickens — which I made for my family’s Easter dinner this past year. I lay them as a base in a bowl with green beans on top, then Greek chicken, then the tzatziki sauce on top, just as a quick dinner. If I don’t do potatoes and green beans, I do rice with Greek salad mixed into it with tomatoes and veggies with the chicken and sauce on top, as another simple dish. If I have a big party, we buy pita (I don’t know how to make it :/), have green beans, potatoes, rice, and Greek salad, with olives and feta cheese on standby, and for desert rice pudding (my grandma’s recipe). Chicken Souvlaki Pitas with Tzatziki Sauce

Cut your chicken into hearty chunks for the skewers. Combine with the marinade ingredients. Let it marinate for at least 4 hours. While the chicken is marinating, soak your skewers for at least an hour to prevent burning. Place 5-6 pieces of chicken on each skewer. 

Preheat your oven to 450 degrees. Foil your baking sheet. Place your chicken on the baking sheet and bake for 20 minutes, flipping halfway through.&nbsp;

For the Chicken Souvlaki

Spread tzatziki sauce on the pita bread. Add your greens, onions, feta cheese, and chicken. Add salt and pepper to taste as well as fresh dill or an additional squeeze of lemon!Enjoy!

I was tired and converting the recipe plus halving so put in a little too much lemon juice (and I used 3 garlic cloves as I like mine garlicky as I've had in Greece) but nevertheless it looks perfect.  I've been making tzatziki for 40 years, and come full circle, this is the best of them all. Now I'm going to make my low cal hummus!  It will be a very long time before we get back there so this holiday weekend we shll pretend. Thanks again!

Yes I made this and I love it. So easy to make and so delicious. I went on the search for a good recipe after ordering takeout and the tzaztiki that came with it was terrible.
