Can I Freeze the leftovers????

Good, but mine was dry, next time I will add salsa most likely.  I did sub Rotel in the meat mixture, maybe that was it?  Still added a chopped tomato to the top with the green onions.  I served with homemade pickled jalapenos on the side.

Family LOVED this recipe!   I put a small can of Mexican chopped tomatoes in with the ground beef mixture to make it juicier.

Have any of you tried using bulgur wheat in place of ground meat? I love it, especially with minced onion and chopped shiitake mushrooms.

One of three kids LOVED this - that makes it a WIN. I did not drain the fat and I am glad that I didn't - I am afraid it would have been dry otherwise.

Easy Sausage and Rice Casserole

Preheat oven to 350 degrees. In a medium-sized skillet over medium-high heat add the sausage and cook halfway. Add the onion, celery, and garlic and continue to cook until the vegetables are tender and the sausage is no longer pink.

Add the sausage to a 2-quart casserole dish. In a small bowl, whisk together the chicken broth and cream of celery. Add the rice to the sausage and soup. Mix together until incorporated. Top with slivered almonds. Cover tightly with aluminum foil and bake for 60 minutes. Let rest for 10 minutes before serving.

Turn the oven to 180°C/fan160°C/gas 4. Peel the potatoes and carefully cut them in half, then into quarters. Peel the carrots and cut each carrot into about 4 or 5 even pieces.

Prick the sausages all over with a fork – this helps the fat to run out of the sausages, so that they don’t split open as they cook. Heat the olive oil in a heavy-based casserole and fry the sausages, turning often, until lightly golden all over – this should take about 10 minutes. Remove the sausages from the pan and put them on a plate.

Add the chopped onion to the casserole (there will still be some oil in the pan from the sausages) and continue to cook over a low heat for 5-10 minutes, until the onion is slightly soft. Add the garlic and paprika and cook for another minute.

Add the chopped potatoes and carrots and stir everything around in the casserole so that the vegetables are coated with the oil.

Add the tomatoes and stock (to measure the stock, you can use the empty tomato can – filled up, it will hold 400ml of stock) and the bay leaves. Bring to a simmer (so it’s just bubbling gently). Return the sausages to the casserole.

Tbsp Whole-Wheat Panko Breadcrumbs (Or Gluten-free)

Preheat your oven to 350°F and lightly spray a 2-quart baking dish with cooking oil spray.

Add the broccoli florets to a steaming basket and place it over a pot with boiling water. Cover and steam until just tender, then transfer the broccoli to the prepared casserole.

Meanwhile, heat oil in a large pan over medium heat. Add onions and sauté until translucent, 3-4 minutes. Stir in the garlic, mushrooms and smoked paprika and continue to cook, stirring occasionally for 5-6 minutes.

Meanwhile, in a small pot over medium heat whisk milk, cornstarch, salt, and pepper, until starts to thicken, 2-3 minutes.

Transfer the onion mushroom mix to the casserole, and pour over the milk sauce. Clean the pan with a paper towel, and lightly spray with cooking oil spray.

Stir the breadcrumbs over medium heat, until golden, then sprinkle over the casserole.

Place the casserole into the preheated oven and bake for about 30 minutes. Enjoy!

Chicken Crescent Roll Casserole

(8 ounce) crescent rolls

chicken soup

chicken broth

Cheddar cheese

vegetable oil

(optional) white wine vinegar

onion powder

Preheat oven to 350° F (175° C). Grease 9x13-inch baking dish.

Sprinkle salt and pepper over both sides of chicken breasts. Heat vegetable oil in large skillet over medium heat. Cook chicken in skillet, 5-7 minutes per side, until chicken is no longer pink in middle and juices run clear or until it reaches an internal temperature of 180° F (82° C). Shred chicken.

Open crescent roll packages. Unroll individual crescent rolls and divide into triangles.

Evenly divide shredded chicken over crescent roll triangles. Roll triangles, beginning with the wider end, around chicken. Arrange rolls on greased baking dish, seam sides down.

Add broccoli to baking dish, tucking into crevices between crescent rolls.

Combine cream of chicken soup, chicken broth or stock, (optional) vinegar, onion powder, garlic powder, and Cheddar cheese in a bowl, add salt and pepper to taste. Pour soup mixture over crescent rolls and broccoli.

Bake in preheated oven until sauce bubbles and crescent rolls are cooked and golden brown. About 45-50 minutes.

My Bacon Mac and Cheese Casserole is loaded with crisp bacon, cheddar, mozzarella and cream cheese. Topped with buttery, golden brown Panko breadcrumbs, this is pasta perfection!

Bacon Mac and Cheese Casserole

parsley (chopped (loosely packed))

Preheat oven to 400°F. In a small bowl mix together 2 tablespoons of melted butter, Panko breadcrumbs and chopped parsley. Set aside.

In a large stock pot boil pasta in heavily salted water per package directions. Drain and toss with 1 tablespoon of olive oil to prevent sticking in a 9x9” square or a 13x9” pan coated with cooking spray. Set aside.

In a large skillet, render bacon until crispy and browned. Remove bacon and set aside to crumble. Keep bacon fat in pan. Add crumbled bacon to pasta, reserving some to top pasta at serving.

In same skillet with bacon fat add 4 tablespoons of butter and melt over medium heat. Whisk in the flour and cook for a minute. Add the milk and whisk to mix thoroughly. Whisk in the mustard, hot sauce, salt and pepper. Lower the heat to simmer and cook for 4 minutes, the sauce will thicken.

Add the cream cheese and stir to melt in the sauce. Add the mozzarella and cheddar cheeses and stir to melt and incorporate. Sauce should be smooth.

Pour cheese sauce over pasta and bacon and stir to mix in completely. Top with breadcrumb mixture and bake uncovered for 20 minutes until top is golden brown and crunchy. This should be enough for 4 large servings or 6 as a side.

One-Pot Lemon Herb Chicken and Rice

Preheat oven to 350˚ F (176 ˚C).

Season both sides of each chicken breast with garlic powder, lemon pepper, Italian seasoning, crushed red pepper, salt and pepper.

In a large oven proof pot, heat butter on medium high heat. Place chicken in pot and cook for 5-minutes on each side. Remove chicken from pot and set aside. (The chicken will not be fully cooked at this point, but it will finish cooking in the oven.)

While chicken rests, add the uncooked rice to the pot along with the chicken broth, lemon juice and Italian seasoning. Turn burner up to high. Bring pot up to rolling boil.

Add the chicken back to the pot with the rice. Cover. Cook in preheated oven for 25 minutes. Serve plated with a lemon wedge and sage or parsley for garnish.
