This was an easy and very satisfying recipe. I didnt use nuts and instead of ice cream we used vanilla greek yogurt. My husband loved this and said the yogurt was much better than ice cream. Definitely making again!

Fabulous dessert! Even my 10 year old, who doesn't like 'fruit' desserts, devoured hers.  Our family of 5 enjoyed it plain, with vanilla ice cream, or with Cool Whip. I look forward to putting a  Costco bag of rapidly ripening  pears to good use again soon!

My ketosis is liquifying my fat and I ate these brownies as my midnight snack for the last 65 days and I have lost 8 pounds. I'll call that a win!! If you want a little extra help to your diet, try boiling it!

I loved it. The changes I made. I used splenda and 1/2 C cocoa. I blended in a food processor. It turned out smooth and silky. Scooped it into 20 mounds and froze. It is the best dessert I have had since starting keto a week ago.

I added sweetener . I like my chocolate fairly sweet.

These are terrible! I would rather just eat a scope of the cream cheese and/or oil alone. I added a 0 carb sweetener, which makes them a little better but I suggest just finding a recipe that tastes better from the beginning without you having to try to add things yourself

So nasty without altering the recipe.  I took them out of the freezer and thawed them out so i could add confectioner.  Wish I had read the comments before making.  Fortunately, it was easy to mix in the sweetener after they had thawed.  I added 1/4 cup of swerve confectioner and then sprinkled some additional confectioner on top of each.  Glad I didn't have to waste the ingredients!  Also, there was way too much coconut oil.  Probably could have used half of what the recipe calls for.  These are good but not without adding sweetener.

I added 1/4c of peanut butter and 1/4c of allulose sweetener. Too bitter without.

These completely hit the spot.  I’m glad I ignored the negative reviews because I don’t like overly sweet chocolate.   I wouldn’t change a thing.  Thanks!

Do these need to remain in the freezer or is that only to set them? Can I keep them in the refrigerator after they’ve set?

This Cardamom Apple Rice Pudding is vegan, gluten free, and soy free! It also can be made nut free by replacing the almond milk with an alternative plant-based milk. This dish is Vata-pacifying and can be Pitta-pacifying by replacing the nutmeg and cardamom with fennel powder.

Cardamom Apple Rice Pudding (Vegan, Gluten Free, Vata pacifying)

White Rice

tsp Unrefined Cane Sugar

Apples (Peeled and grated)

+ 2 tbsp unsweetened Almond Milk

Nutmeg

tsp Cinnamon

tsp Cardamom

Water

Pour all ingredients except the cardamom in a pot on low-medium heat. Cover slightly off center with a lid to let off a little steam.

Cook until desired consistency. It will become creamy in about 30-40 minutes.**

Before serving, stir in the cardamom and cook for 30 seconds more.

Vata types will enjoy this with a little bit of tahini or ghee drizzled on top, with chopped nuts or ground flax seed for garnish and added fiber.

Gluten Free Chocolate Swiss Roll Cake

tbsp Earth Balance Butter

tbsp Cashew milk

Wayfare dairy free cream cheese room temperature

Pink gel food coloring

chocolate

You will need: a 11&#8243; x 15 1/2&#8243; Jelly Roll Pan Instructions : &#8211; Preheat oven to 375° &#8211; In a medium bowl mix your flour, soda, cinnamon, salt, &amp; cocoa powder, set aside.

Melt your butter in a small dish, set aside.

Next separate your eggs. Put your yolks in a large bowl and your whites in a medium bowl.

Now beat your egg whites on high for 5 to 6 minutes until stiff peaks form, set aside.

Add your 3/4 cup sugar to your yolk mixture and beat on high for approximately 2 minutes until yolk mixture is pale in color.

Next add your 5 tablespoons of cashew milk, 1 1/2 teaspoons of apple cider vinegar, and 4 tablespoons melted butter to the yolk mixture. Blend until combined.

Now blend your flour mixture into your yolk mixture until thoroughly combined , scraping the sides of the bowl as you mix.

Gently fold your egg whites into your cake batter until combined, don’t overmix.

Line your jelly roll pan with parchment paper making sure the parchment paper covers above all sides of the pan. Then spray parchment paper with oil.

Lay a new piece of parchment paper on the counter ( clean surface ). Make sure the parchment paper is the same size as the one on your jelly roll pan. Now lightly dust the parchment paper with cocoa powder.

Next pour your cake batter into your jelly roll pan ( leaving about a half inch around the edges ) using an offset spatula smooth out batter into pan. ( make sure it’s evenly spread )

Place your pan in the oven and bake at 375° for 16 minutes or until you can gently touch the middle of the cake with two fingers and it springs back up.

Once cake is done baking let it sit for 8 to 10 min to cool just a bit. ( I’ve found it to have less cracks if you don’t roll it right out of the oven. Just don’t let it cool completely, 8 to 10 minutes is perfect. ) Now trim edges of the cake before you roll it. This will clean up and straighten the edges of the cake. Don’t take too much off just enough to clean up the cake.

Now go ahead and flip your cake onto the cocoa dusted parchment paper, and gently and slowly remove the parchment paper on top.

Next grab the parchment paper it’s laying on and slowly yet tightly roll the cake from the short end until completely rolled. ( make sure to roll tight.. can’t stress that enough ) twist the ends of the parchment paper to hold in place.

Let cool on wire rack or counter for a couple hours.

For The Cake

While the cake is cooling start your filling. Blend your cream cheese, butter, and food coloring. Once completely mixed , slowly add in your 3 cups of powdered sugar.

Once cake is cooled unroll it gently on a flat surface, spread your cream cheese filling evenly over your cake leaving a 1 inch border all the way around the cake. Now re roll your cake leaving the parchment paper behind. Next place in plastic wrap and then foil twisting the ends. Place in the freezer for an hour.

For The Filling

Next make your ganache. In a microwave safe bowl add your chocolate chips, cinnamon, 4 tsp cashew milk, and vanilla. Now place bowl in the microwave and microwave on high for 20 second intervals, stirring between each interval until melted. Once chocolate is melted add in 7 more teaspoons of cashew milk. Let it is sit until completely cooled.

Take the Swiss roll cake out of the freezer and slowly pour ganache over cake, smoothing it out with an offset spatula. Decorate&#8230; Now place on serving dish and put it in the refrigerator for no less than a half hour, or carefully freeze until ready to serve. ( cover loosely ). &#8211; Enjoy ♥️

Blueberry Maple Mini Cheesecake Parfaits

almond meal

plain Greek yogurt

Place blueberries in a small strainer or colander and allow to thaw.&nbsp;

In a small bowl, toss together the almond meal, 1 Tablespoon maple syrup, and melted butter. Divide between twelve mini dessert cups or glasses and press down firmly.

In another bowl, using a hand mixer, blend together the cream cheese, Greek yogurt, vanilla, and remaining 3 tablespoons maple syrup.

Using a piping bag or carefully with a spoon, top each of the crusts with about a tablespoon of the cheesecake mixture.&nbsp;

Set aside some of the thawed blueberries for topping the parfaits (about 36 to allow three per parfait, if you are making 12). Divide the remaining blueberries between the parfaits, then top with the remaining cheesecake mixture.

Garnish with the reserved blueberries.
