Easy Teriyaki Salmon

*NOTE: Prep time does not include marinating time*

salmon filets (skinless)

garlic (minced)

ginger (minced)

water

sugar

rice wine vinegar

sesame oil

cornstarch

green onions

sesame seeds for garnish (if desired)

Add garlic, ginger, soy sauce, 1/8 cup water, brown sugar, rice wine vinegar and sesame oil to a medium bowl.

Add half of the marinade to a ziplock bag and the other half to a small saucepan and set aside.

Place salmon filets in the ziplock bag and marinate for 30 minutes.

Heat oil in a large skillet. Add salmon filets making sure not to overcrowd pan (I had to cook two at a time).

Cook 3-4 minutes on each side until desired doneness.

Meanwhile heat the reserved marinade in the saucepan and bring to a simmer.

Add cornstarch and water to a small bowl and whisk to combine.

Slowly whisk in the cornstarch mixture to the marinade and simmer until thickened.

Serve immediately with the teriyaki sauce drizzled on top as well as green onions and sesame seeds for garnish, if desired.

Combine

In a small to medium size pot, add ingredients from the coconut amino to the sweetener.

Simmer

Give it a stir and cover the pot with a lid. Bring it to a gentle simmer over medium-low heat, about 3 minutes.

Thicken

Slowly and gradually sprinkle in the xanthan gum little-by-little while whisking the hot simmering sauce at the same time. The sauce will thicken pretty quickly.

Store

Off heat. Let it cool to room temperature before packing it to a mason jar. Store it in the fridge and best use it in 2-3 weeks.

Teriyaki Tofu

unsweetened plant milk (, I used unsweetened almond milk)

tsp ginger

Cauliflower rice (, zoodles or Jasmine rice if not grain-free)

Prepare Tofu: Tear or cut the tofu into 1-inch chunks. (Tearing the tofu makes them resemble chicken nuggets).

Make the Batter: Mix together all the ingredients for the batter. Toss the tofu into the batter. 

For an extra crispy coating: Dip each piece of tofu into a bowl of finely crushed crackers, making sure each piece is evenly coated.

Bake tofu in the oven: Preheat the oven to 400F. Line a large baking sheet with parchment paper. Bake for 22-25 minutes, or until golden and crispy, flipping each piece halfway through.

Air fry tofu: Add the tofu into the air fryer basket in a single layer, (you will have to cook batches). Air Fry at 375F for 15 minutes, or until golden and crispy, flipping halfway through.

Pan fry tofu: Heat 3 Tbsp avocado oil in a large nonstick skillet over medium-high heat. Once the pan is nice and hot, add tofu, in a single layer (you may have to cook in batches) and cook for 4-5 minutes on each side, until golden brown and crispy.

Cook tofu using your preferred method below:

Meanwhile, in a large pot or wok, whisk together all the ingredients for the sauce. Bring to a boil over medium-heat, allowing to boil for 1 minute. Once boiling, bring the heat down to medium and cook until the sauce is thick and glossy, about 2-3 minutes. Season with salt to taste and add more water, as needed to thin out sauce to desired consistency.

Coat tofu with sauce: Once the tofu and sauce are done, add the tofu to the pot and heat on medium. Use tongs or chopsticks to toss gently, until every piece is coated and heated through.

Serve with Rice &amp; Sesame Seeds: Remove from the heat, sprinkle with green onions, parsley, sesame seeds and serve with cauliflower rice, zucchini noodles, or Jasmine rice, if not grain-free.

This incredibly quick and Easy Sweet Chili Sauce only requires four ingredients and can be mixed up in minutes.  Pour it over meat, tofu, or seafood!

Easy Sweet Chili Sauce

rice vinegar (0.47)

Add the rice vinegar, sugar, water, and sambal oelek to a small sauce pot. Heat and stir the mixture over medium heat until the sugar fully dissolves.

Stir the cornstarch into 1 Tbsp water until dissolved, then pour it into the sauce pot with the sweet chili sauce. Continue stirring and heating until the mixture comes up to a simmer, at which time the cornstarch will thicken the sauce and go from appearing cloudy to clear.

Use the sauce immediately, or refrigerate and use within one week.

Teryaki Baked Salmon

salmon filets (skin on)

Preheat oven to 400 degrees.

To make the sauce add oil and garlic to a medium saucepan. Cook for 1 minute.

Add in soy sauce, water, honey, brown sugar and ginger. Bring to a simmer and cook for 2 minutes.

In a small bowl mix together the cornstarch and water until combined. Slowly add this to the teriyaki sauce and whisk until the sauce has thickened. The sauce should be thick enough to coat the back of the spoon.

Line out 4 sheets of aluminum foil lightly oil each. Place a salmon filet on each piece of aluminum foil and brush the salmon with the teriyaki sauce.

Fold up the edges of the foil and place wrapped salmon filet on top of a baking sheet.

Place in the oven and cook for 12-15 minutes, or until the fish is fully cooked.

Take out of the oven and remove the skin from each salmon filet. The skin should be very easy to peel off.

Serve immediately over rice or with a salad.

Easy Homemade Teriyaki Sauce (Gluten-Free)

tamari ((ensure gluten-free as needed // if soy-free, sub coconut aminos))

maple syrup

Tbsp rice vinegar

½ tsp ginger, peeled and roughly chopped ((~1 ½ inch piece or 6 g))

garlic, roughly chopped

Add all ingredients (tamari or coconut aminos, maple syrup, rice vinegar, water, ginger, garlic, and cornstarch) to a high-speed blender. Blend on medium-low speed until no large chunks of ginger or garlic remain and the mixture is well combined — about 30 seconds. It will look pale and foamy — this is normal!

Transfer the mixture to a medium saucepan (large enough for the mixture to boil) and turn to medium heat. Let the sauce come to a boil and keep an eye on it — it should begin to bubble vigorously and start going up the sides of the pan. This will take about 2-3 minutes.

Once boiling and bubbly, reduce the heat to low and whisk for 5-10 minutes, or until the sauce reaches your desired thickness. We like whisking for 5 minutes and leaving the sauce on the thinner side, as it will thicken even more as it cools. If you like your teriyaki sauce thicker, whisk for up to 10 minutes.

Transfer to a heat-proof container like a glass jar or storage container and let cool. Enjoy with bowls (recipe coming soon!), Tofu Noodle Stir-Fry with Spring Vegetables, or Crispy Tofu Lettuce Wraps.

Leftover sauce will keep in the refrigerator for 4-5 days or in the freezer for up to 1 month.

To serve this with peas and carrots, zucchini or broccoli, simply cook them in a pan over the stove in a little bit of water, pinch of salt and pepper, and garlic powder until tender. I cook my broccoli in a large wok separately to reach desired tenderness.
