Cranberry Jello Salad

Cranberry Jell-O or Cherry Jell=O (1 large package or 2 small)

Orange Juice

(20 ounces crushed pineapple, drained)

walnuts

celery (chopped fine)

Jello Mold

In a medium sized pot over medium-high heat, bring 2 cups of cranberry juice and sugar to a boil, and stir until sugar is melted.

Add package of jello and orange juice and stir.

Add crushed pineapple, walnuts, and celery, drain pineapple and discard juice, or replace some of the other juice with it

Pour into Jello mold, and refrigerate until firm

Remove from mold and serve.

In a small saucepan over medium heat combine the water and the infused oil and whisk together as you bring it to a boil.

Whisk in the flavored Jello one at a time.

Add in each packet of the unflavored gelatin one at a time, while continuing to whisk.  Keep stirring for about 5 minutes and bring to a low boil.

After 5 minutes, reduce heat to low

Using a turkey baster, start adding the mixture to candy molds. Keep the mixture on low heat while you are doing this. Stir every few minutes.

Place molds in freezer for 20-25 minutes.

Unmold the candies to enjoy right away or store in airtight containers in the fridge.

The flavor of this pudding changes dramatically depending on the ingredients used. Skim milk makes a pudding with the lighter taste and texture of the "low-fat" puddings where as whole milk gives the full flavor of the original. High end fancy cocoa powders like Valhrona will result in a really dynamic, flavorful chocolate pudding, whereas grocery store staples like Hershey's will have a simpler flavor more in line with the taste of the pudding you remember.

Homemade Jell-O Style Chocolate Pudding Recipe

In a medium bowl, combine the gelatin and 2 1/2 ounces milk. Whisk with a fork to ensure no lumps remain. 

In a small sauce pot, combine the sugar, cocoa, salt and remaining milk over medium low heat. Whisk constantly until smooth and the mixture beings to bubble around the edges, about five minutes.

Pour the hot dairy mixture through the sieve and into the bowl of gelatin. Whisk the gelatin into the chocolate mixture. Stir in the vanilla, and season with additional salt if needed (I've discovered the amount needed will vary according to the bitterness of the cocoa powder, which varies between brand and type).

Set the bowl, uncovered, in the refrigerator. After fifteen minutes cover the pudding with a sheet of plastic wrap pressed against the surface and refrigerate until fully thickened, about 2 hours.

To serve: Whip the thickened pudding with a hand or stand mixer for a full minute to restore a creamy texture. (Alas, stirring or beating with a spatula alone will not sufficiently break up the pudding into a creamy, homogenous mixture.) Spoon the whipped pudding into four serving dishes.If all the pudding is not eaten at this time, it will be necessary to re-whip the pudding before serving as prolonged refrigeration creates an unpleasantly firm texture.

Jello Mold with Fruit Salad

Whisk the Jello powder in a bowl with the boiling water until all the crystals have dissolved. Stir in the cold water.

Place in the fridge for about 45 minutes. The Jello should just start to thicken.

Spray a bundt pan or other mold with cooking spray.

In a separate bowl, combine the drained mixed fruit salad with half of the jello. Spread evenly in a bundt pan. Place back in the fridge.

Whisk the remaining Jello with the whipped cream, until smooth and creamy.

After the bundt pan has been in the fridge for another 30 minutes, the top of the Jello should be fairly set. Spread the Jello and whipped cream mixture on top of the Jello and mixed fruit.

Place the bundt pan back in the fridge until completely set, about 6 hours.

To remove the Jello from bundt pan, flip it upside down, on top of a serving dish. If it is sticking, wiggle it back and forth a little until the Jello mold releases.

Slice and serve.

Jello Poke cake is a classic cake recipe that uses a cake mix and strawberry jell-o, but you can use any flavor! Top it off with your favorite frosting.

Whipped Cream Frosting (see note)

Make the cake as directed on the box using the eggs, water and oil called for. Bake cake in a 9x13-inch pan as directed.

Cool cake at least 30 minutes or overnight.

Stir the Jello powder into the boiling water until gelatin is dissolved.

Using the back of a wooden spoon, poke about 20 holes in the cake, evenly spaced.

Carefully pour the liquid Jell-O mixture over the top of the cake.

Allow to cool for at least one hour before frosting. Frost as desired, garnishing with fresh berries if you want.

Store cake loosely covered in refrigerator for up to 3 days.

Add 1/2-3/4 cup of the juice to a bowl or liquid measuring cup and sprinkle with gelatin powder.

Whisk together to combine and allow to sit for 3-5 minutes to &#8220;bloom.&#8221; The granules will plump and the mixture will look like very thick applesauce or take on a lumpy appearance.

Pour the remaining (3 1/4- 3 1/2 cups) juice into a medium saucepan. Heat over medium heat until almost boiling.

Remove from heat and stir in honey (if using) and the bloomed juice/gelatin mixture. Stir to dissolve.

Pour into an 8&#215;8 (2 quart) baking dish for thick Jello or a 9&#215;13&#8243; baking dish for thin Jello, or into individual glasses or jars for individual portions.

Refrigerate about 4 hours, or until set. (If you&#8217;ve used a 9&#215;13 pan, it may be set in as little as 2 hours)

I agree with Anne, I don't think I've ever finished a batch of homemade Jell-O before for these reasons. The texture (and instruction for making) is perfect! Thank you. I used a half full bottle of knudsons cranberry juice + water to make up for it and then honey - great flavor.

I take exception to your comments about PINEAPPLE.  Fresh pineapple should not be used with gelatine, you are correct about the enzyme in fresh pineapple ruining the gelatine &amp; the gelatine will not set.  However, canned pineapple &amp; bottle/canned pineapple juice are just fine.  The canned/bottle pineapple products have been "heat treated", which destroys the enzyme &amp; the gelatine sets perfectly.  Pineapple/orange jelly, anyone?!

I like to use hibiscus 🌺 in my Jell-O. I also put collagen peptides in it for an extra bonus- why not lol. Put fresh fruit. Nice after work snack with vitamins and good stuff. I notice my nails growing everyday. It’s crazy. Never had nails like this before. Losing weight too and not tired all the time

He said it had jello brand orange flavored, canned mandarin oranges and cool whip. I knew that I wasn’t going to make it with those ingredients. 
So I went on the hunt for orange jello made with collagen. I had tried a couple others and they were just like a gummy. So I gave up for awhile. Then I looked again at different recipes and they were all saying the same thing. Except for yours... I’m like maybe because it has more juice in it that it just may work. And I’m SO GLAD that I tried it.

So I made your jello, juicing oranges and cuties. And I added some peeled cuties to the jello. And let it firm up. Then I made some whip cream: organic pasture raised heavy cream, maple syrup, vanilla, and squeezed some juice of a mandarin.  I spread it over the top of the jello.  He said it was delicious 😋

OMG! this was so easy! I always loved jello but wanted something healthier with no sugar. Used black cherry juice for the base and Tart cherry concentrate for the blooming part. Love that you don't need to chill the juice.

Am thinking of adding VP Beauty Collagen to the next batch but saw that it has Pineapple powder, do you think that break down the jello?

Well, the recipe turned out super! I didn't have fruit juice on hand, so I used diluted raw coconut water. I used a smidgin of Yacon syrup to add a bit of sweetness, layered a half of banana along with fresh raspberries; it was delicious.

Have made this several times. It always turns out. I pureed a mango and diluted with a pineapple coconut juice and it was delish. The mixture was very little pineapple juice, mostly mango. I thought it might not jell because I had forgotten pineapple juice was not recommended, but it was great. I just  made a batch with lemon juice, coconut water and stevia. Waiting for it to jell . Love this recipe, very GAPS friendly 😊

Thank you for this lovely treat. My first attempt was a success with your helpful tips.  Instead of juice, I used an electrolyte powder called DripDrop per it’s instructions, dissolving it in cool water before adding at the end. Perfectly sweet and a great way to add extra nutrition to a simple dessert.

I made this last week with blood orange juice and used a little sugar instead of honey because I don't really like honey and it worked great.  It was firmer like a knox blox bit still very tasty.

Just made this today! I have made other homemade gelatin recipes and they always water down the juice with boiling water. I had thought about trying it this way, then forgotten. Box Cake Mix (White, plus ingredients to make the cake)

oz Whipped Topping (Cool Whip)

Sprinkles (red, white and blue)

oz Jello (cherry)

Prepare the cake according to the directions.

Meanwhile, use 1.5 ounces (half) of the red jello in 1/2 cup boiling water, stirring to combine and the other 1/2 cup boiling water with 1.5 ounces of the blue jello.

Once you remove the cake from the oven poke the cake all over with the end of a wooden spoon and pour red in 1/2 of the holes and blue in the other half. Try to not mix colors. 

Place in the fridge for 30 minutes or up to overnight. 

Top with cool whip and sprinkles and serve!

A quick and easy homemade gelatin snack, with no added sugar.

Homemade Jello

100% fruit juice (, divided)

grass-fed gelatin

To begin, you'll want to "bloom" the gelatin in a bit of cool or room-temperature fruit juice, to ensure a smooth and even end result. In a medium mixing bowl, sprinkle the tablespoon of gelatin over 1/4 cup of the fruit juice (I used 100% organic grape juice for this batch), and whisk well until the mixture starts to thicken.

Once the mixture is nice and thick, pour the 1/4 cup of hot (just boiled) water over it, and whisk well to dissolve evenly. When the mixture is smooth, add in the remaining 1 1/2 cups of fruit juice, and mix well to combine.

Pour the mixture into a standard loaf pan, greased or lined with parchment paper to prevent sticking, and place in the fridge to set for at least 2 hours. You'll know it's done when the top is firm to the touch!

Slice into squares and serve immediately, or store in the fridge in a sealed container until ready to serve.

Using a stand mixer (or a hand mixer + large bowl), whip cream cheese and powdered lime jello on medium-high speed until thoroughly combined, about 5-8 minutes. Remove bowl from mixer.

Boil 3 cups of water, then pour boiling water into the bowl with the cream cheese. Use a spatula to stir until the jello has dissolved and cream cheese has melted.

Transfer bowl to the refrigerator and chill for 1-2 hours, stirring frequently, until consistency has slightly thickened. Mixture is ready once a ring starts to form along the edges of the bowl.

Remove bowl from refrigerator. Add mayonnaise, fruit cocktail, and chopped pecans to bowl, then stir thoroughly until mayonnaise has dissolved into the liquid.

Spray a 16 cup bundt pan (standard bundt pan size) with cooking spray, then pour the jello salad mixture inside. Use a spatula to smooth out the top so that there aren't any producing pieces of pecans or fruit.

Place bundt pan in the refrigerator and chill until jello is completely set, usually anywhere from 3-5 hours. For best results, let jello set overnight.

When ready to serve, remove bundt pan from refrigerator. Place a serving dish over the top of the bundt pan, then hold the plate in place while flipping the bundt pan over (so that the bundt pan ends up on top of the plate). If the jello doesn't immediately fall out, lift the bundt pan up about 1 inch and gently shake downwards; jello should quickly fall out.

Creamy jello salad can be served immediately or stored in a sealed container in the refrigerator for up to 7 days.
