Instant Pot Meatloaf with mashed potatoes is made with a mixture of ground beef and ground turkey as well as delicious Yukon Gold potatoes.&nbsp; It's an easy dinner recipe that the whole family will enjoy!

Add all of the meatloaf ingredients to a large bowl and gently mix everything to combine (without over-working the meat).

Form the meat mixture into a round loaf that will fit into your instant pot.

Place the loaf on a large piece of aluminum foil and fold the edges up to make a secure nest for the meatloaf to rest in. (You want the edges high enough that grease from the loaf wont spill out onto the potatoes while cooking.)

Add the quartered potatoes, water, and salt to the bottom of the instant pot.&nbsp;

Lay the IP wire rack on top of the potatoes. Place the aluminum foil &quot;nest&quot; with the meatloaf on top of the rack. 

Secure the lid on the pot and close the pressure release valve. Select manual/High pressure and cook at high pressure for 25 minutes*.  When the timer beeps, allow the pressure to naturally release for 10 minutes. 

While the meatloaf cooks, make the sauce by combining all of the sauce ingredients in a bowl.&nbsp;

Remove the IP lid, and carefully remove the meatloaf. Discard the aluminum foil and dippings. Spoon the meatloaf sauce over the top and cut into slices.

Add the milk, sour cream, butter, bouillon paste, and salt and pepper to the bottom of the instant pot with the mashed potatoes. Mash to combine (but don't over-mash the potatoes).&nbsp; Taste and adjust seasonings, as needed.&nbsp;

This flavorful, juicy Instant Pot Meatloaf is one of my family’s favorite easy instant pot dinners! The meatloaf is made with ground beef (or a combination of ground beef and ground turkey), breadcrumbs, spices, and eggs, and I usually add potatoes to the bottom of the instant pot to make mashed potatoes at the same time, for an all-in-one meal!

Adding ground turkey meat and oats to the traditional ground beef base makes this meatloaf lighter and healthier — but it's just as hearty and comforting as any old-fashioned recipe.

Line a 9”x5” loaf pan with parchment paper and preheat oven to 375°F.

In a large bowl, add all of the ingredients for the meatloaf. Mix well to combine.

Add meat to the loaf pan, gently press meat down and shape evenly and bake meatloaf at 375˚F for 40 minutes.

In a small bowl, mix all of the ingredients together for the sauce.&nbsp;Spread the sauce over meatloaf then return to oven and bake additional 15-20 minutes. Rest meatloaf 10 minutes before slicing. Drizzle with baking juices from the pan.&nbsp;&nbsp;

Keto Meatloaf | The BEST, Easy, Low Carb Meatloaf Recipe You'll Make

Grease a 9&#215;5 loaf pan with cooking spray and set it aside.

In a large skillet over medium heat, add and heat the Macadamia Nut Oil.

Now, add the onion &amp; celery and cook until soft and translucent.

Next, add the garlic, oregano, and chili powder, and Italian seasoning and cook until fragrant.
Once fragrant, let the mixture cool.

Now, when the mixture cools, use a large bowl to add and combine all of the ingredients &#8211; except for the ketchup.

Shape meat mixture into the size of a large loaf, and add it to the pan. *If using bacon, wrap it in bacon before adding the meatloaf to the pan.

Cook for 40 minutes, remove, and cover with ketchup (if using)

Return to oven and cook for another 15-20 minutes (once the internal temp gets to 165°F).

Let it rest 10-15 minutes before cutting into it.

Garnish with fresh oregano, or more Italian seasoning.

Cover the air fryer basket with tin foil.

Set the air fryer to 380 degrees Fahrenheit, and cook for 20-30 minutes.

Add the keto ketchup if using, and if it&#8217;s browning to quickly cover it with foil.

Cook for an additional 15-20 minutes. *Just make sure the internal temp. reaches 165°F

I must say I make a great meatloaf and was looking for different recipes because I now I subscribe to keto.  Well, I’m not a fan of almond flour but I used it and added some red hot pepper and jalapeños.  This was so delish I can’t tell you.  The cumin, oregano, cheeses....So simple but so tasty. Ty ty!

I have never really cared for meatloaf that much but my husband has always been a meatloaf fan.  I made your keto meatloaf tonight exactly as written and it was INCREDIBLE.  The best flavor - moist - DELICIOUS!!!

This was delicious.  This Meat loaf recipe was very moist and tender which is not the usual outcome for meat loaf.    I thought it was easy to prepare.  Thank you for sharing and all you do.  I usually make your desserts which are also delicious.  I am going to have to investigate more main dishes.

I used green pepper in place of celery because it's what I had on hand and I draped a few optional slices of bacon across the top. The meatloaf was excellent - both flavorful and very moist. I will definitely be using this recipe again!

Preheat oven to 350°F. Spray a foil lined baking tray with cooking spray and set aside.

In a medium bowl combine eggs, milk, and breadcrumbs. Allow mixture to sit for 5-10 minutes.&nbsp;

Add the ground beef, onions,  1 tablespoon of chili sauce, Italian seasoning and parsley. Mix until just combined.

Form a 8"x4" loaf on the prepared baking tray. Bake for 40 minutes.&nbsp;

Meanwhile, combine the chili sauce and ketchup (and brown sugar if using). Spread mixture over the meatloaf and bake for an additional 10-15 minutes or until cooked through and the meatloaf reaches 160°F.

Allow meatloaf to rest for 10 minutes before slicing.&nbsp;

The Best Meatloaf  Ever

Yasss may be the only word you utter after your chomp down and savor the bursting flavors of this delicious classic, tender, and moist meatloaf.&nbsp;

ground beef (preferably not lean ground beef)

bread

beef broth (I used Better Than Bouillon Beef Base)

Worcestershire sauce

eggs (lightly beaten)

thyme

dry parsley

vegetable oil

onion

salt (for taste)

pepper (for taste)

light brown sugar (about 4-5 tablespoons)

tsp pepper (optional)

Preheat the oven to 350 degrees Fahrenheit. Cover the entire top and sides of a baking sheet with heavy-duty aluminum foil.&nbsp;See notes.&nbsp;Fill a baking sheet or sheet pan with water and place it on the very bottom shelve in the oven. *See notes.

Add the vegetable oil to a medium skillet over medium heat. Once the oil is hot, enough add the onions and cook until softened about 6-8 minutes. A minute before the onions are done, add the garlic.&nbsp;

Cook until fragrant (about 30 seconds).&nbsp; Remove the onions and garlic from the skillet and let it cool for about 5 minutes.

To a small bowl add the fresh breadcrumbs, eggs, Worcestershire sauce and beef broth. Mix gently. Let the breadcrumbs soak for 5 minutes.&nbsp;

To a bowl add the ketchup, pepper and brown sugar. Mix well. Reserve for later.

Use a bowl big enough for the ground beef and breadcrumb mixture. Add the ground beef to the bowl with all the seasonings, salt, and pepper. Add the breadcrumb mixture, onions and garlic and gently mix.

Place the beef on the baking sheet lined with heavy-duty aluminum foil or line it with parchment paper. Shape the beef into a loaf. Pour only half of the brown sugar ketchup over the meatloaf.&nbsp;Put the meatloaf on the shelf right above the pan with water.

Bake for 45-60 minutes or until the temperature on your meat thermometer reads 165 degrees Fahrenheit *See notes. Cover the meatloaf with the remaining ketchup glaze and serve with mashed potatoes and vegetables.

Preheat the oven to 350F.

In a small bowl combine 2 tbsp of the ketchup with Worcestershire sauce.

In a small skillet, heat olive oil and onion on low heat until translucent, 3 to 5 minutes, remove from heat.

In a medium bowl combine the turkey, onion, breadcrumbs, egg, 1/4 cup ketchup, salt and marjoram.

Place mixture into a loaf pan or shape into a loaf and place on a baking pan. Spoon sauce on top.

Bake uncovered for 55-60 minutes, remove from oven and let it sit for 5 minutes before slicing.

Classic Meatloaf Recipe

For the Glaze:

sweet chili sauce

dry mustard

Add the butter and oil to a skillet. Once the butter is melted, add the onions and cook 7-8 minutes until softened.

Add the tomato paste to the onions and stir to combine. Remove from the heat and let cool slightly.

Add the meatloaf mix to a large bowl along with the salt, pepper, Worcestershire sauce, mustard, breadcrumbs, eggs, parsley, garlic powder, basil and the cooled, cooked onions.

Mix together until all the ingredients are incorporated but do not over mix, as this will make for a tough meatloaf.

Line a baking sheet with foil or parchment paper, or spray a baking sheet with cooking spray. If using foil, make sure you spray that with cooking spray as well before you add the meatloaf.

Add the meatloaf mixture to the baking sheet, forming into a loaf shape approximately 10&#8243; long by 5&#8243; wide.

Stir the ingredients together for the glaze in a small bowl. Pour half of the glaze over the meatloaf and save half for later.

Place the meatloaf in the oven for 35 minutes, remove from the oven to pour on more glaze, then return to the oven and bake another 20-25 minutes.

I made this meatloaf for tonights dinner my ex-spouse loved it. The meatloaf mix was ideal. In addition, the different herbs and condiments gave such bursting flavor.

Delicious! Made with 2lbs or ground beef instead of 2 1/2  and cooked it at 375 for 50 min and it was perfect!

I am 50 and have never mastered meatloaf although I cook a ton.  Tonight I nailed it with this recipe and got rave reviews from my teenagers and husband.  Fantastic and a keeper!

This Instant Pot Meatloaf is juicy, melt-in-you-mouth and so easy to make!

Place the baby potatoes, chopped onion, garlic, and broth in the bottom of a 6QT Instant-Pot.

Cook diced onion (for the meatloaf) in butter until tender, about 5 minutes. Cool completely.

Combine all meatloaf ingredients in a bowl and mix well. Form into a loaf and place on a piece of foil. Fold the edges of the foil to make a &quot;pan&quot; for the meatloaf. Place the meatloaf on the trivet and add to the Instant Pot.

Select manual and cook on high pressure 28 minutes. Allow to naturally release for 10 minutes.

Remove any remaining pressure. Open the lid and ensure the meatloaf has reached 165°F. Remove meatloaf to a cutting board.

Combine topping ingredients and brush over meatloaf. (Optional: Place under the broiler 3-4 minutes)

Rest 10 minutes before slicing. Serve with potatoes.
