Pickled Red Onions

Pickled red onions add a sweet &amp; tangy pop of flavor to salads, sandwiches, burgers, and more! Once you make them, they'll keep in the fridge for up to 3 weeks.

Thinly slice the onions (it's helpful to use a mandoline), and divide the onions between 2 (16-ounce) jars or equivalent. Place the garlic and peppercorns in each jar, if using

Heat the vinegar, water, sugar, and salt in a medium saucepan over medium heat. Stir until the sugar and salt dissolve, about 1 minute. Let cool and pour over the onions. Set aside to cool to room temperature, then store the onions in the fridge.

Your pickled onions will be ready to eat once they're bright pink and tender - about 1 hour for very thinly sliced onions, or overnight for thicker sliced onions.

Thinly slice ½ a red onion. (Feel free to double the batch)

Place the onion along with the vinegar, water, salt, sugar and whole spices and any optional additions in a small pot on the stove and bring to a simmer. Simmer 1 minute, stirring.

Place onions and liquid in a clean jar and store in the fridge.

Just as easy as it says...and delicious, crisp, onions.

These are so simple, quick, and delicious.  They have quickly become a staple in my house.  My kids like to snack in them 😊

I've made this twice now and it's really good. the onions come so soft and not at all acidic like raw pickled onions do. I use them on everything...fried eggs, sandwiches, salads. cheese plates etc.. so good.
For whole spices I've used lightly toasted fennel seeds, nigella seeds and coriander seeds which makes a nice subtle flavour that goes with everything I think.

So quick to make, and elevated our quinoa salad to another level. This hits the spot!

Peel and slice red onion into thin slices. Place into a pint sized mason jar, or other glass, plastic, or ceramic container with a sealable lid.

In a small saucepan stir together vinegar, sugar, and salt. Add in 1 or more additional optional flavorings as desired. Bring to a boil, then remove from heat.

Pour mixture over onions in jar until full. Place the lid on and let cool to room temperature.

Place the lid on to seal and refrigerate. Let them sit and pickle for at least 12 hours before using.

QUICK PICKLED RED ONIONS RECIPE

Thinly Slice the Red Onion. I like to set my Mandoline Slicer to 1/16th Thickness and slice thin.

Add the onions to the sterilised jar.

In a small bowl, add vinegar, salt, maple syrup and hot water. Stir together to combine.

Add the prepared pickling mixture to the Jar filled with onions. Allow the onions to rest in the pickling mixture for an hour (or more) to soak up and deepen the flavors.

After the pickled onions come down to room temperature, store them in the refrigerator for up to a month.

Our Favorite Pickled Red Onion

rice vinegar

Cut a thin slice off of the top and bottom of each onion. Cut onions in half from top to bottom and remove skin.

Lay each half, cut side down and slice thinly.

Pack onions into a quart-size jar with a wide opening.

Add vinegar, water, sugar and salt. Cover tightly and shake well.

Allow mixture to sit at room temp for 1-2 hours. Shake the jar every now and then to distribute brine.

Refrigerate for 8-12 hours or until onions turn a bright pink color. Drain well and return to jar.

Super fast and easy refrigerator pickles! Sweet, spicy, and crunchy!

Sweet and Spicy Refrigerator Pickles

cucumbers (thinly sliced (about 6 cups when sliced))

red onion (thinly sliced)

apple cider vinegar (see notes)

honey (see notes)

red pepper

Sprinkle 3 teaspoons of salt over your thinly sliced cucumbers and red onion. Place cucumbers and onions in a colander and let sit for 1 hour—this helps remove the extra moisture from the vegetables. Set aside and start on your pickling mixture.

In a small saucepan over low heat, add your vinegar, water, honey, minced garlic, and crushed red pepper. Bring mixture to a boil and let boil for 1 minute. Remove from heat and let cool to room temperature.

After your cucumbers and onions have sat for 1 hour, rinse salt and pat dry. Add your cucumbers and onions to 1 large jar or divide between 2 medium size jars (see notes). It’s okay to really squish the cucumbers and onions in there. Pour the pickling liquid into the jar(s) covering the cucumbers and onions. Place lid on tightly and refrigerate for at least 3 hours before eating.

Pickled onions are prepared in several ways in Mexico. For example, in the Yucatan area, it is made with pickled white onions and habanero or Xcatic peppers. Garlic and other herbs and spices can also be added. There are other recipes that are easier and quicker.

PICKLED RED ONIONS

dried Mexican Oregano

Medium-sized red onions

water (enough

bay leaf (Optional)

Allspice kernels

kernels black pepper

Salt

Toast Mexican oregano in a small skillet over medium-high heat for about 30 seconds. Set aside to cool.

Peel onions and thinly slice them. Place 4-5 cups of water in a saucepan and bring to a boil.

When water starts bubbling, add sliced onions, and turn the heat off.

After 2 minutes, quickly drain the onions into a colander over the sink.

Place the drained onions in a glass bowl and add the vinegar, water, oregano, bay leaf and the rest of the spices. Season with salt and mix well. Refrigerate for a couple of hours, and they are ready to eat. They keep well refrigerated for about a week. And they taste best when prepared at least one day in advance.

Enjoy with your tacos, tostadas, subs, sandwiches or grilled meats.

Pickled red onions are also a permanent fixture at every single table in Yucatan. As they are mildly spicy, deliciously tangy and surprisingly crunchy they go well with so many things. These past couple weeks I learned first hand why they are such a fabulous pickle to have handy.

Pickled Red Onions a la Yucateca

bitter orange juice

black pepper

allspice (or pimienta gorda)

Place the bitter orange (or its substitute or plain vinegar) in a mixing bowl along with the black pepper, allspice and salt. Mix well. Incorporate the red onions and bay leaves.

Char or broil the banana pepper in the broiler, on the grill, on a hot comal or dry skillet set over medium heat or directly on an open flame, for 3 to 6 minutes. Turn it once or twice, until its skin has lightly charred. Incorporate to the onion mix.

Toss well and let the mix pickle at room temperature anywhere from 1/2 hour to 2 hours, cover and refrigerate. It will keep in the refrigerator in great shape for 2 weeks.

The easiest pickled red onion recipe ever! Good for everyone of your favorite tacos!

Pickled Red Onions- Curtido

Combine all of the ingredients in the order listed. Toss well to combine. Cover and let sit for 1 hour, stirring now and then.

Transfer to glass jars and chill until ready to serve.
