Preheat oven to 350 degrees F. Spray 8- or 9-inch square baking dish with cooking spray and set aside.

Melt 1 tablespoon butter in a large skillet over medium heat. Add squash, onion, and bell pepper to the skillet, cooking and stirring for about 10 minutes (or until vegetables are tender). Remove from heat and season with salt and pepper.

Meanwhile, in a separate bowl, whisk together eggs, cheese, sour cream, and mayonnaise.

Stir the egg mixture into the squash mixture.

Transfer the squash mixture into the prepared baking dish.

In a separate bowl, combine crushed crackers with remaining 1 tablespoon of melted butter. Sprinkle buttered cracker crumbs over top of casserole.

Bake for 30-35 minutes, or until casserole is set and topping is golden brown.

Oven Roasted Broccoli (Baked Broccoli)

Preheat oven to 450 degrees F.

Grease a large baking sheet, set aside.

In a small bowl mix together garlic powder, sea salt, paprika and black pepper. Set aside.

Place broccoli pieces in a large bowl, drizzle with olive oil and stir until evenly coated.

Sprinkle half of the spice mixture over the broccoli, stir and repeat with the second half and stir until evenly distributed.

Spread seasoned broccoli evenly on the prepared baking sheet.

Roast at 450 degrees for 14- 15 minutes, or until the broccoli is nicely roasted, stirring once halfway through. (Note: the size you cut the florets into will effect the baking time (smaller florets = shorter bake time, larger florets = longer bake time). So keep that in mind)!

If necessary, broil the broccoli for 1-2 minutes at the end of roasting time to crisp it up (I find this is only necessary if using frozen broccoli).

Remove from oven and serve immediately.

Berbere Potatoes- a simple flavorful Ethiopian-inspired side dish that is healthy, delicious and vegan!

garlic cloves, rough chopped

1.5 lbs thin-skinned potatoes, thinly sliced (yukons, red, etc)

In a cast iron or oven-proof skillet, heat the oil over medium heat, add the shallots and saute, stirring until tender, 4-5 minutes. Add the garlic and cook 2 minutes, until fragrant. Add the tomatoes and their juices, and continue cooking until they begin to break down and soften, 3-4 minutes. Stir in the Berbere spice and the water.

Scoop out ¾ cup of the mixture and set aside.

Add the potatoes tossing to coat each side and layer them. Pour the remaining tomato mixture over top.

Cover tightly with a lid or with foil. Bring to a hard simmer on the stovetop, then place in the oven for 30 minutes covered.

Remove lid, checking that potatoes are fork-tender, drizzle with olive oil, bake an additional 10 minutes uncovered.

This is a super quick and easy pak choi (bok choy) recipe that packs a punch!&nbsp;

Pak Choi (bok choi) with Garlic & Chilli

baby pak choi (bok choy) (Or use two standard sized)

salted butter ((50 grams))

tbsp veg oil

tbsp chilli flakes (or 1tsp if you like it less spicy)

Cloves garlic (finely chopped)

Wash the pak choi and slice in half, lengthways

Put alarge frying pan on a high heat, add the butter and&nbsp; oil.&nbsp; When butter has melted add in the chilli flakes and garlic.

Once butter is foaming, add the pak choi, flat side down in the pan.&nbsp; After about 4 mins, once you have some good colour, turn the halves over and cook for a couple more minutes.&nbsp; Don't overcook, you want the stalks to have a bite to them.

Serve immediately

This Stovetop Green Beans with Almonds recipe is a quick and easy side dish that goes with just about everything! I usually make this several times a week, my family loves it.

Stovetop Green Beans with Almonds

light butter spread (I use Land O’Lakes light butter spread with canola oil)

oz fresh washed and trimmed green beans

Add the butter to a large saute pan and melt over medium-low heat. When melted, add the green beans and sprinkle with salt and pepper. Stir to coat in the butter. Cover the pan and cook for 4-5 minutes, uncovering briefly to stir once in the middle. Beans should be bright green and a bit more tender.

Uncover and add the minced garlic and sliced almonds. Stir together and cook for another 2-4 minutes until the almonds are golden and the green beans are bright green and tender while still being a bit firm.

Cook baby spinach with the rice to bring out the colour in this vegetarian side dish - perfect as part of a Greek Easter lunch

Heat the oil in a large pan, add the onion and gently cook until softened but not coloured. Add the spinach and half the dill. Cook on a high heat, stirring regularly, until the spinach has wilted down and all the liquid has evaporated.

Stir in the rice and add 600ml water, then bring to the boil. Turn the heat right down again to a very gentle simmer, cover the pan with a tight-fitting lid and cook for 25-30 mins or until the rice has cooked and absorbed all the water. Give it a stir after 15 mins to ensure even cooking, adding a drop more water as required.

When the rice is cooked, stir in the remaining dill, season well, squeeze over the lemon juice to taste, and serve.

Wash the spinach throughly.

Put the spinach into slightly salted boiling water and turn off the heat. Leave it 1-2 minutes and completely remove the water by draining and squeezing the spinach.

Squash the tofu and completely remove the water from tofu using paper towel.

Whisk soy sauce, perilla oil, sesame seeds, salt &amp; sugar.

Add tofu, spinach and other ingredients into a bowl and toss them until well coated with the sauce.

Roast the bok choy for 7-10 minutes, or until the stems are tender. Exact cooking time will depend on the size and thickness of the bok choy. Remove from oven and top with sesame seeds.

Prepare your acorn squash by cutting it in half and coring out the seeds. Leave as much flesh as possible in each half of the acorn squash. Rinse after coring.

Place the acorn squash halves facing downward in a microwave-safe bowl or dish with 2 tablespoons of water. Heat on high for 5 minutes.

Transfer the heated acorn squash halves to individual bowls then add 1 tablespoon each of light brown sugar and butter. Heat on high for an additional 5 minutes in the microwave. Use a fork to check for tenderness after heating, if needed heat in additional 1-minute increments until the squash reaches your desired level of tenderness.
