I boiled my potatoes until they were just tender then grilled. No, not because I cannot wait 15 minutes but because the kabobs I was making with them cooked faster that that. These were very good!

Really good...I'm a vegetarian & only have a George Foreman grill. They took a lot longer than 15 minutes to cook since the heat isn't as high as a regular grill. I may try them in my air fryer next time. Still, they were delicious!

This is our favorite Macaroni Salad full of red onions, celery, bell peppers, herbs, and of course, delicious creamy dressing.

Macaroni Salad

lb macaroni pasta

red onion

red bell pepper

celery

green onion

parsley

dill weed

mayonnaise

sour cream

Dijon Mustard

tbsp white wine vinegar

tbsp brown sugar

garlic powder

tsp black pepper

salt (more

Cook pasta in salted water according to box instructions.

Drain cooked pasta and let it cook until no longer scalding hot.

Dice all vegetables and herbs while pasta is cooking and whisk all ingredients for the dressing in a separate bowl.

In a large mixing bowl, combine pasta vegetables, and herbs and mix.

Pour dressing into the bowl with the pasta and mix everything together until dressing is evenly incorporated throughout.

Cover the bowl with plastic wrap or transfer the salad into a food storage container with a lid. Refrigerate for at least 2 hours before serving.

Vintage Macaroni Salad

lb Macaroni elbow pasta, dry

Eggs,

Mayonnaise

Onion, fine mince

Celery,

Dill pickle relish dill pickles

Vinegar, white distilled

Mustard, classic yellow

Sugar, white granulated

Salt

Paprika

pepper

Cook macaroni according to package directions. Drain and rinse under cold water until cool. Drain and set aside.

In large salad bowl, make dressing by whisking together mayonnaise, vinegar, mustard, sugar, salt, and fresh cracked pepper to taste. When well combined, add dill pickle relish and minced onion; stir well. Allow dressing to sit at room temperature for 10 minutes for flavors to develop.

Add cooked and cooled macaroni to salad bowl. Toss thoroughly in dressing until evenly coated.

Add diced celery and stir until evenly distributed.

Carefully stir in diced hard boiled egg until evenly distributed.

Sprinkle top of macaroni salad with paprika and fresh cracked pepper to taste.

I'm so picky when it comes to potato salad, and if you love Whole Hog as much as I do - you're going to love this one!

Copycat Whole Hog Potato Salad

1.75 lb red potatoes

Sugar

½ tsp black pepper

dry parsley

salt

dry ranch dressing mix

chives

bacon

mayo

½ TBS white vinegar

Bring a big pot of water to a boil and add the sliced potatoes. Cook until fork tender. 

Once cooked, mix together with all ingredients while still warm. (I save a little bacon and chives to put on top before serving.)

Refrigerate for at least a few hours prior to serving. 

This delicious twist on potato salad starts with oven roasted potatoes and a creamy BBQ dressing!

BBQ Bacon Potato Salad

scallions, chopped

Toss the potatoes in a large bowl with the salt, pepper and olive oil then spread out onto 2 baking sheets that have been sprayed with cooking spray.

Bake for 45 minutes, tossing twice during cooking, until the potatoes are tender and lightly browned.

Remove the potatoes from the oven and let cool.

Make the dressing by adding the barbecue sauce, mayonnaise, dijon, parsley, salt and pepper to a bowl and whisking together until smooth.

Add the roasted and cooled potatoes to a large bowl along with the scallions, celery and bacon. Pour the dressing over the ingredients in the bowl and toss together until combined.

Cover with plastic wrap and place in the refrigerator for at least an hour or longer if needed.

Toss before serving and garnish with chopped parsley.

In a large serving bowl, combine cabbage, purple cabbage, and carrot.

In a small mixing bowl, mix together mayonnaise, vinegars, sugar, celery seeds, salt, and pepper. Stir to combine. Add dressing to the salad and toss to combine.

Serve immediately, or refrigerator for one hour to allow the flavors to infuse into each other more. Add more salt and pepper if desired, to taste.

Tuna Pasta Salad is one of my favorite comfort foods! Perfect for bringing to a BBQ or party, make it ahead and it just gets better! This pasta salad works both for a side dish and the main course. The mayonnaise dressing has a secret ingredient for just the right amount of tanginess!

elbow macaroni, cooked, drained and rinsed with cold water

albacore tuna fish, drained

red wine vinegar

Add the elbows, bell pepper, celery, onion and tuna fish to a large bowl.

Add the ingredients for the dressing into a bowl and whisk together to combine. Taste for seasonings and adjust if needed.

Pour the dressing over the pasta salad and toss to combine. Cover with plastic wrap and refrigerate for at least 1 hour. Toss again before serving.

You will love these baked beans because they are easy to make and use basic ingredients and they're healthy. 

Homemade Baked Beans from Scratch

white pea beans

(28 oz) diced tomatoes

onions

ketchup

fancy molasses

brown sugar

dry mustard

Using colander or sieve, rinse baked beans. Discard any that are discoloured. 

In a large heavy bottomed Dutch oven or pot, cover beans with 9 cups of water.

Bring to boil over medium-high heat; reduce heat to medium and boil gently for 3 minutes.

Remove from heat; cover and let stand for 1 hour, then drain.

Return beans to pot with 12 cups of water.

Bring to boil over medium-high heat. Reduce heat to medium and simmer, covered for 45 minutes (beans should be tender)

Remove 2 cups of the cooking liquid and set aside.

Slice bacon into six pieces and cook over medium-high heat in frying pan. Do not cook until its crispy. This is simply rendering the fat from the bacon.

In a dutch oven or 16-cup casserole dish, combine beans, 2 cups of reserved cooking liquid, tomatoes, bacon, onions, ketchup, molasses, sugar, dry mustard and salt and pepper.

Bake, covered in a 300°F oven for 2 and a 1/2 hours.

Uncover and bake for another 1 and 1/2 hours or until desired thickness of sauce is reached.

Having never cooked baked beans other than from a can I was hesitant to make these. So glad I did as these are well worth the effort. They are so delicious and flavourful. Really a great side or for a meal, or on its own. Ditched the old halloween wieners and beans with this amazing homemade recipe now. Thanks Sandra!!

This vegan creamy mustard slaw is crunchy and so flavourful with two types of mustard, white wine vinegar, celery seed, fresh dill, sweet onion, and a hint of maple syrup. This is a mayonnaise-free coleslaw making it perfect for summer get togethers!

Creamy Mustard Slaw

cashew butter

mustard

Dijon mustard

water

maple syrup or agave nectar

celery seed,

sea salt and ground black pepper,

green cabbage

kale leaves,

shredded/julienned carrots

sweet onion

In a small bowl, whisk together the cashew butter, grainy mustard, Dijon mustard, water, white wine vinegar, maple syrup, olive oil, celery seed, salt, and pepper. Once creamy and thoroughly combined, set aside.

In a large bowl, combine the green cabbage, kale, carrots, sweet onion, and dill. Give the vegetables a little splash of white wine vinegar and season liberally with salt and pepper. Toss to coat everything as evenly as possible.

Pour the creamy mustard dressing over the vegetables and toss until all of the shreds are evenly coated in the dressing. To serve, sprinkle some extra chopped dill and celery seed on top. Enjoy!

Everything you love about a dill pickle, in a creamy pasta salad!

Dill Pickle Pasta Salad

oz rotini pasta

celery (chopped)

onion

dill pickles (chopped, 6-8 spears)

mayonnaise (4.6 oz)

sour cream (2 oz)

dill pickle juice

apple cider vinegar

coriander

dill (minced, + more for garnish)

Cook Pasta:  Add a large pot of water to a stovetop and heat on high to bring to a boil. Cook pasta for 9 minutes, or whatever the time listed for that particular pasta is. For fresh pasta, it is only 2 minutes.

Make Dressing: Add mayo, sour cream, dill, mustard, coriander, salt, vinegar, and dill pickle juice to a small bowl and mix well.

Assemble Salad: Once the pasta is done, add it to a large bowl with chopped celery, onion, and dill pickles. Add dressing and then mix well.   Finish with more fresh dill if desired, and enjoy!

*I linked a vegan-friendly whole grain mustard in the recipe post. If you have trouble finding one at your store, just swap it for another tbsp of yellow mustard.
**The package of kale gnocchi says to boil for 6 minutes, but I found that they floated around the same time as the regular gnocchi. Be sure not to overcook the gnocchi or it will turn to mush.
***You don’t want to let the gnocchi sit for longer than 10 minutes, otherwise they will start sticking together. 
****This can be made 1 day in advance. If you are making it ahead of time, leave some of the dressing separate in the fridge and add it right before serving.

Vegan Gnocchi Potato Salad | This Savory Vegan

This Vegan Smashed Potato Salad is made with Yukon gold potatoes that are crisped up in the oven and tossed in a dairy-free dressing.

Vegan Smashed Potato Salad

Yukon gold potatoes (or sub baby dutch)

avocado oil

garlic salt

green onions (diced)

garlic (minced)

Preheat the oven to 425 degrees and line 2 baking sheets with parchment paper.

Add the potatoes to a stock pot and cover with water. Place on the stove and bring to a boil. Boil for 15-20 minutes or until the potatoes are fork tender. Drain  and allow to cool for a few minutes.

Add some oil to both baking sheets. Evenly split the potatoes between the baking sheets. Use the bottom of a glass cup to flatten the potatoes. To each baking sheet add half of the oil and half of the dry seasonings. Place in the oven for 20 minutes. Remove from the oven, flip the potatoes and place back in the oven for 20 more minutes - be sure to alternate the racks the baking sheets were on.

Meanwhile, add the mayo, celery, green onions, garlic, apple cider vinegar and mustard to a large bowl. Mix until combined and set aside.

Remove the potatoes from the oven and allow to cool for 5 minutes. Roughly chop the potatoes and add them to the bowl with the dressing (reserving a few for topping). Toss until coated, taste and adjust the seasonings if needed. Top with the reserved potatoes.

Serve at room temperature or chilled.
