Best baked cod recipe out there! Prepared Greek style with a few spices and a mixture of lemon juice, olive oil and lots of garlic. Bakes in 15 mins!

Mediterranean Baked Cod Recipe with Lemon and Garlic 

1.5 lb Cod fillet pieces (4-6 pieces)

garlic cloves,

parsley leaves

lemon juice

tbsp Private Reserve extra virgin olive oil

tbsp butter

all-purpose flour

tsp coriander

tsp sweet Spanish paprika

tsp cumin

tsp black pepper

Mix lemon juice, olive oil, and melted butter in a shallow bowl. Set aside

In another shallow bowl, mix all-purpose flour, spices, salt and pepper. Set next to the lemon juice mixture.

Pat fish fillet dry. Dip fish in the lemon juice mixture then dip in the flour mixture. Shake off excess flour. Reserve the lemon juice mixture for later.

Heat 2 tbsp olive oil in a cast iron skillet over medium-high heat (watch the oil to be sure it is shimmering but not smoking). Add fish and sear on each side to give it some color, but do not fully cook (about a couple minutes on each side) Remove from heat.

To the remaining lemon juice mixture, add the minced garlic and mix. Drizzle all over the fish fillets.

Bake in the heated oven for until it begins to flake easily with a fork (10 minutes should do it, but begin checking earlier). Remove from heat and sprinkle chopped parsley.

Serving suggestions: Serve immediately with Lebanese rice and this Mediterranean chickpea salad or this traditional Greek salad.

I’ve tried a few different  cod recipes this past month. This is by far the best. Flavorful, moist, with a crunchy outer coating, it is deeeeeelicious, easy to make and quick. Major yum!!! I highly recommend!

Delicious, I live in Florida and didn't want to put on the oven. Used tilapia and finished in the sauce covered in too of the stove. Still wonderful.

This recipe is a keeper.  It was quite good.  The recipe itself is easy, to follow, especially after watching the video.  I substituted almond flour for regular flour because that's all I had on hand!  Also, i sprinkled zest from the lemon I juiced and sprinkled that over the fish before serving.

I made this with Whiting since my monger was out of cod.  Great recipe, super simple.  My family loved it.  I didn’t have rice so I used some angel hair with garlic and oil and pepper flakes.  Also I chopped up some asparagus I had and threw it in with the pasta.  It was awesome.  Thanks so much.  I have a picture of the fish but I can’t paste it here for some reason.

Hands down this is the best recipe for fish I have ever cooked! The seasonings are perfection! I doubled the coating amounts and the lemon sauce amounts - next time I will triple because they are so delish!  I used Whole Foods frozen cod (365 WF brand) and the portions were perfect!

Here's How To Make Delicious Cod In The Oven

A simple, healthy recipe for baked cod with tomato and lemon. Perfect for fast, easy dinners. The Italian flavors make this our favorite way to cook cod!

cod fillets

extra virgin olive oil

onion

fennel (quartered, core cut away, thinly sliced)

cherry tomatoes (halved)

dry white wine stock

capers (drained)

red pepper flakes (plus additional to taste)

herbs

Preheat

Place a rack in the center of the oven and preheat oven to 375 degrees F. Lightly coat a 9x13 or similarly sized baking dish with nonstick spray.

Pat the cod dry. Arrange in the baking dish, and season with ½ teaspoon salt and black pepper. Squeeze the lemon over the top.

Saute

Heat a large skillet over medium heat. Add the olive oil. Once the oil is hot, add the onion, fennel, tomatoes, and remaining 1/4 teaspoon salt. Saute for 8 to 10 minutes until the onions and fennel are tender and the tomatoes begin to break down. Add the white wine. Let the wine reduce for 1 minute, then add the capers.

Bake

Spoon the tomato-fennel mixture around the cod. Place in the oven and bake 12 to 15 minutes, until fish is opaque and flakes easily with a fork. Sprinkle with fresh herbs. Serve hot.

This really is the best baked cod! The fish comes out perfectly tender and coated in our "magic" seafood seasoning. A dinnertime home run!

Magic Seafood Seasoning (required!)

Preheat the oven to 450 degrees Fahrenheit. While the oven preheats, allow the cod to sit at room temperature.

If you haven&#8217;t already, make the Magic Seafood Seasoning.

Brush the cod fillets with olive oil, then sprinkle them with the kosher salt and the seafood seasoning. Place the fish on a parchment-lined baking sheet.

Bake the cod for 8 to 10 minutes until flaky and just cooked; test it with a fork to assess doneness. The internal temperature should be about 130 degrees Fahrenheit when removing it from the oven. Watch the cod to make sure not to overcook it; the timing can vary based on the thickness of the fish. Serve immediately.

Tip from an old fisherman, place the lemon slices under the fish. The fish will not stick to the bottom and the lemon will seep into the fish as well. 😉

This is the perfect recipe. Simple, flexible and delicious!  I made the recipe as written, employing a couple of suggestions from other reviews. I added white wine and capers to the lemon-garlic sauce and substituted asparagus for the tomatoes. I cooked some spaghetti while the fish and asparagus baked. It took about 20 minutes baking time because I crowded them in a baking dish that was one size too small. Fish and asparagus were perfectly done. The lemon-caper sauce on the pasta was fabulous. Thank you for this great recipe.

Great recipe, sauce was excellent (I did add just a little piece of sliced shallot).  Placing the lemons under the cod was a great suggestion.

Mixed the tomatoes and lemon with orzo to serve, fantastic.

Very light and lovely. I sprinkled Italian breadcrumbs on top. Next time I will triple the garlic and maybe add some white wine to the mix--mine had no sauce.  Maybe add capers too.

First time cooking COD so I gave it a try.

I found this to be bland. Tomatoes tasted great. Cod had no taste. I used thyme seasoning instead of fresh thyme and 2 lemons instead of one. Also I used minced garlic. I know these changes didn't make the world of difference.

Okay, I used this recipe as a guideline. I read the comments, and saw that many thought it was bland, but I thought it definitely had potential - I was right! I at least doubled all of the quantities, and added fresh rosemary and shallots. What I did was mix sliced shallots, olive oil, minced garlic, lemon juice, salt, pepper, rosemary and thyme. I coated the bottom of the baking dish with it, saving just enough to put on top of the fish. I then placed the lemon slices down and put the fish right on top (seasoned heavily with salt and pepper, as well as lemon juice). I threw 2 whole crushed garlics in there along with the cherry tomatoes and some springs of thyme and baked. Served over brown jasmine rice (which I sautéed in half a sweet onion (grated), olive oil, and salt and pepper. I also added lemon to the rice. On the side I had some crispy baked herb potatoes. It was to die for! Don't be afraid to season it up.

I had just about given up on cod, and then I found this recipe.  I've made it 3 times now. My husband and I love it. It's really really good!

I used herb de Provence because I ran out of thyme and I crushed the garlic instead of dicing it. It was just delicious!

Baked Cod in Cream Sauce

kosher salt (or

butter

garlic (minced)

breadcrumbs (seasoned)

cornstarch

whipping cream ((or half and half))

c. milk

Tbsp Parmesan cheese (grated)

kosher salt (to taste)

black pepper (to taste)

Preheat oven to 400-degrees.&nbsp;

Prepare cream sauce (see instructions below) and set aside, keeping warm.&nbsp;

Spray a 9x13 baking dish with cooking spray and place cod fillets in the dish. Sprinkle with salt.&nbsp;

Combine melted butter and garlic and brush over fillets, reserving any leftover butter mixture.&nbsp;

Sprinkle seasoned breadcrumbs over fillets and pour remaining butter mixture over the top.

Pour cream sauce in the spaces between the cod fillets so it fills up the baking dish and just the tops of the fillets are visible.&nbsp;

Place in the preheated oven and bake for 25-30 minutes or until the cream sauce starts bubbling.&nbsp;

When the sauce starts bubbling up, set oven to "broil" and broil for about 3-5 minutes or until the fillets start to turn golden brown.&nbsp;

Keep a CLOSE eye on it to make sure it doesn't start to burn.&nbsp;

Remove from oven and serve with potatoes, rice, or vegetables.&nbsp;

Melt butter in a medium sized sauce pan over medium heat.

Slowly add the cornstarch and stir for about 1 minute.&nbsp;

While whisking constantly, slowly add whipping cream and milk until well combined. Stir in Parmesan cheese.&nbsp;

Reduce heat to low and whisk occasionally for about 10 minutes until sauce becomes rich and creamy, adding more milk, if needed. You want it to be the consistency of a thin gravy.&nbsp;

Season with salt and pepper, to taste.&nbsp;

Heat the oven to 220C/200C fan/gas 7. Tip the flour into a bowl and add some seasoning. Turn each cod fillet in the flour until evenly coated.

Heat half the oil in a <a href="https://www.bbcgoodfood.com/content/top-five-non-stick-frying-pans">non-stick frying pan</a> over a medium-high heat. Add the cod and fry on each side for 2 mins or until golden brown.

Transfer the cod to a <a href="https://www.bbcgoodfood.com/review/test-five-best-roasting-tins">roasting tin</a>. Arrange the lemon slices and thyme on and around the fish and drizzle with the remaining oil. Bake for 10 mins or until cooked through.

2 lb cod filet ((2 to 2 1/2 lb filet))

Preheat oven to 425˚F. Pat dry the cod fillets with paper towels and remove any stray bones.

Place filet onto a rimmed baking sheet and fold the thin sides onto the filet to create a uniformly thick filet. Season all sides with salt and pepper and drizzle each side with 1 Tbsp of olive oil.

Place strips of prosciutto over the filet overlapping the slices as you go to avoid any gaps in prosciutto. Tuck the layers underneath the filet. The ends do not need to be fully covered.

Place tomatoes in a bowl, season lightly with salt and pepper, and drizzle with 1 Tbsp olive oil. Toss to combine.

Add seasoned tomatoes to the baking sheet around the fish and bake at 425˚F for 35 minutes or until the center of the fish reaches 145F on an instant-read thermometer. The fish should be flaky in the thickest part of the filet. Cool for 5 minutes then slice into portions with a serrated knife and spoon pan juices over the slices to serve.
