Rich cream cheese, tangy homemade cranberry sauce, and savory green onions make a simple but delicious appetizer for any holiday gathering!

Cranberry Cream Cheese Dip

cranberries (1.25)

sugar (0.08)

water (0.00)

jalapeño (optional) (0.15)

salt (0.02)

cream cheese (0.79)

green onions, sliced (0.33)

box crackers (for serving) (2.95)

apple (for serving) (0.33)

Rinse the cranberries then add them to a small sauce pot with the sugar, water, and salt.

If using a jalapeño, remove the stem, slice it lengthwise, scrape out the seeds (or leave some in if you like it extra spicy), then finely dice the pepper. Add the diced pepper to the sauce pot.

Stir the pot to combine, place a lid on top, and place it over medium-high heat. Allow the pot to come to a boil. Once it reaches a boil, give it a good stir, turn the heat down to medium-low, and let it simmer without a lid for 5 minutes.

After simmering for 5 minutes, the cranberries should have all burst open and created a thick sauce. Turn the heat off and transfer the sauce to the refrigerator to cool.

Place the cream cheese on a small plate or in a shallow bowl. Use the back of a spoon to create an indentation along the center of the block of cream cheese.

Pour the cooled cranberry sauce over the cream cheese, then top with sliced green onion. Serve with crackers and apple slices.

Turned out great.  My daughter-in-law liked it so much last Christmas that I'm making it again.

I used the pillsbury crescent rolls. 2 packs. Makes 16 small rolls. I would have preferred homemade rolls but I didn’t have time to make them. I cut back a little on the spinach and added some artichoke hearts to blance the mix and used cream cheese instead of ricotta as someone else suggested. These were a HIT! Amazing recipe and it can be tweaked to fit your liking.

I usually just use scissors to cut the individual biscuits & then just roll them into a ball in the palm of my hand. Such a beautiful presentation & so delicious!

Made for a holiday gathering. Excellent !!!

Skinny Taco Dip for a Crowd

14 ounce fat free refried beans (add a second can if desired)

light sour cream (or greek yogurt)

ranch dressing mix

lettuce

cheddar cheese

tomatoes

green onions, chopped

olives

avocado,

In 9 x 13 inch baking dish, spread out the refried beans.

Combine ONE TABLESPOON of the ranch dressing saving the rest for another use, and 2 cups light sour cream. &nbsp;Pour on top of the refried bean layer.

Top with lettuce, cheese, tomatoes, olives, onion and avocado.

Cover and store in the refrigerator until ready to use, up to 6 hours. &nbsp;

Serve with salsa on the side, chips and fresh cut veggies for dipping!

This easy sheet pan recipe can be used as a chilled appetizer or breakfast for 6! &nbsp;Using store bought pie dough, it's a breeze to make!

Sheet Pan Quiche Bites

eggs

dijon mustard

pie crust, store bought

cheddar and monterey jack cheese blend

Preheat oven to 350 degrees.

Spay a 15 x 10 inch baking sheet (or 9 x 13 baking dish) with non stick spray.

Slightly roll out one sheet of store bought pie crust and place in pan. &nbsp;You should have some of the round edges hanging over the pan. &nbsp;Remove those with a sharp knife and press into the corners of the sheet pan to fill in.

In large bowl, beat eggs. &nbsp;Whisk in cream, mustard, salt and pepper.

Sprinkle ham, cheese, sun dried tomatoes and green onion onto unbaked pie crust.

Place your pan onto the rack of the oven and pour egg mixture over the filling.

Bake 45-50 minutes or until center of quiche is puffed up and slightly firm.

Service a a hot breakfast or brunch or chill at least 3 hours and slice into cubes and serve as an appetizer.

Have  made several times.  Add some hot sauce and leave out the lemon juice for a better consistency. Still use the zest.

Meh.  Not very garlicky, evn though I used more than recipe called for.  Lemon came thru pretty strong.  Consistency was runnier than I would have liked

Big hit...so much so that I didn’t even get to try them because they were gone before I got to where they were!  I used sweet spicy mustard instead of Dijon and sesame seeds instead of poppy (just because I had them).  Will be making again for sure!
