Keto Crockpot Pizza Casserole

Keto Jalapeño Popper Chicken Soup

chicken, shredded/diced

-1 cup(roughly 4-6 large jalapeños)

chicken broth

cream cheese (room temperature)

heavy whipping cream

cheddar cheese

paprika

cumin

pepper

Add some oomph and creamy, rich flavor to your Trifecta salmon with this simple salmon cakes recipe. Then top it all off with a zesty and vibrant chimichurri sauce!

Low Carb Keto Baked Salmon Patties

Trifecta salmon

1.5 Tbsp. Flax seeds, ground

Tsp. avocado oil

onion, small diced, sauteed

fresh parsley, chopped

Tsp. garlic

whole liquid eggs

Salt and pepper

Tbsp. Chimichurri sauce

Spray oil

Preheat your oven to 375 degrees Fahrenheit. Dice onion, and saute it in a saute pan by spraying with spray oil. Cook until translucent, season with salt and cool in the fridge.

Break salmon apart with hands. Transfer to food processor and pulse until a paste-like consistency is formed.

Add the whole liquid eggs, granulated garlic, avocado oil, ground flaxseed, and chopped parsley into the food processor. Season with a pinch of black pepper and salt. Pulse a few more times to combine. Transfer to a bowl scraping all sides with a spatula.

Form salmon patties into 4.2 oz patties. Transfer to a parchment-lined baking sheet pan. Bake for 15 min. Broil for 5 to make a golden crust.

Make the chimichurri sauce as explained on the recipe.

Divide the mixture into 6 even-sized balls with your hands and place on a baking sheet lined with parchment paper. Use your fingers to flatten each ball into a patty shape. 

Bake for 25 minutes, followed by 5 minutes under the broiler to give them a nice golden crust.

This cozy, hearty Sausage Stuffed Acorn Squash with apples, mushrooms, and herbs is a fantastic blend of sweet and savory flavors. Easy and ultra delicious!

Sausage Stuffed Acorn Squash

acorn squash (halved through from the stem to the base and seeds removed)

olive oil

Kosher salt and ground black pepper

Parmesan cheese (divided)

Bake the squash: Place a rack in the center of the oven and preheat the oven to 400 degrees F. With a sharp, sturdy chef’s knife, carefully cut the squash in half from stem to base. Scoop out and discard the stringy core and seeds. Arrange the halves cut-sides up on a rimmed baking sheet. Brush each half with 1 teaspoon olive oil and sprinkle with salt and pepper. Place in the oven and bake for 40 minutes, until the edges begin to wrinkle and the flesh is fork-tender. Set aside. Reduce the oven temperature to 375 degrees F.

While the squash bakes, prepare the filling: Heat the olive oil in a large skillet over medium-high heat. Add the sausage. Brown the meat, breaking it apart into small pieces for 3 minutes.

Add the mushrooms, onion, apple, salt, pepper, nutmeg, allspice, and minced garlic. Cook, stirring frequently, until the sausage is cooked through, the vegetables and apple are softened, have given up liquid, and the liquid has cooked off, about 8 additional minutes.

When the squash is cool enough to handle, scoop out its flesh, leaving a wall all the way around that is about ¼-inch thick. Add the scooped squash to the pan with the sausage. Add the herbs and ¼ cup Parmesan. Stir to combine. Taste and adjust salt and pepper as desired.

Mound the filling inside of the hollowed squash halves. Sprinkle the remaining Parmesan over the top. Place the pan in the oven and bake until the cheese is melted and the filling is nice and hot, about 15 minutes. Sprinkle with additional fresh herbs as desired. Serve hot.

One Pan Cheesy Jalapeño Chicken

This Keto Big Mac Casserole is an easy low carb hamburger casserole recipe made with ground beef, cheese, and delicious Big Mac sauce!

Keto Big Mac Casserole

Onion (diced)

Worcestershire

Garlic powder

Salt (divided)

Pepper (divided)

Cream cheese

Dill pickle relish

Eggs

Heavy cream

Cheddar cheese (shredded)

Mayonnaise

Yellow mustard

White wine vinegar

Paprika

Onion powder

Preheat oven to 350 degrees F.

Cook the ground beef in a skillet over medium high heat. After cooking for for approximately 7 minutes add the diced onions, worcestershire sauce, garlic powder, 1 teaspoon of salt, and ½ teaspoon of pepper. Continue to cook the ground beef for 3 minutes, or until ground beef is cooked through.

Transfer the ground beef to a strainer and let the excess fat drain out before placing the beef back in the pan.

Add the cream cheese to the ground beef and heat over medium low heat until the cream cheese has melted and coats the beef.

Remove the mixture from the heat and stir in the dill relish.

Scoop the beef mixture into an 11x7 inch casserole dish and set aside.

In a small bowl whisk together eggs, heavy cream, remaining 1 teaspoon of salt, and ½ teaspoon of pepper.

Pour the egg mixture over the ground beef gently shaking the casserole dish so the egg mixture is evenly distributed.

Top with the grated cheese.

Place the dish in the oven to bake for 30 minutes or until the casserole is set.

While the casserole bakes make your Big Mac sauce by whisking all of the ingredients together in a small bowl.

When the casserole comes out of the oven drizzle it with the Big Mac sauce before serving.

Low Carb Keto Drunken Noodles

Teaspoons Golden Swerve or Lakanto ((note 1))

Teaspoon Xanthan Gum ((note 2))

Cup Soy Sauce

Tablespoon Thai Fish Sauce

- 8 Ounce Packages Shirataki Noodles (fettucini style)

Cup Sesame Oil

Small Shallot (thinly sliced)

Cloves Garlic (minced)

Bell Pepper (thinly sliced)

Thai Chilis (minced. Can sub

Pound Chicken Breast (boneless + skinless)

Cup Fresh Basil (roughly chopped)

Make the sauce. Add warm water (1/3 cup), erythritol (2 teaspoons), and xanthan gum (1/8 teaspoon) to a bowl and whisk until dissolved. Be sure to sprinkle the xanthan gum over the top, otherwise, it will clump (note 3). Add the soy sauce (1/2 cup)and fish sauce (1 tablespoon), and whisk. Set aside.

Rinse noodles. Rinse your shirataki noodles (2 - 8 ounce packages) thoroughly by draining them in a colander and running water over the top as your toss the noodles with your hands for at least 1 minute. Set aside to drain.

Sear. Heat 2 tablespoons of oil in a large skillet over medium heat. Add chicken (1 pound) and sear each side (about 1-2 minutes) until golden (it won&#039;t be cooked through yet). Set seared chicken aside on a plate.

Saute.  Add remaining oil to the skillet, along with the bell peppers (1) and shallots (2 small) and cook for two minutes. Add Thai chiles (1-2), garlic (3 cloves) and green onions (8), and cook for another 2 minutes, or until they become fragrant. Add the noodles and toss to coat in the veggies and oil. Fry for about 3 minutes (this helps remove any weird taste the noodles may have, don&#039;t skip).

Simmer. Add the chicken back to the skillet, as well as the sauce. Toss to coat everything. Bring sauce to a simmer and allow it to cook for about 5 minutes until the sauce thickens, the chicken is cooked through, and the veggies are tender to your liking.

Serve + enjoy! Remove from heat, stir in the basil (1 cup), serve warm, and enjoy!

Combine chicken, oil, butter and seasoning in a large bowl. Cover and marinate in the refrigerator for up to overnight, at least 20 minutes.

Heat oven to 375°F. Spread chicken on baking pan and bake in the hot oven for 40-50 minuets until done. Finish under the broiler for a few minutes.
