Strawberry Sorbet Recipe

strawberries, washed (about 2 1/2 pounds)

sugar

lemon juice,

kosher salt,

Remove tops from strawberries and purée in a blender or food processor until smooth. 2 quarts whole strawberries should yield 1 quart of purée. Add sugar and blend for 30 seconds. Add lemon and salt, blend to incorporate, and adjust to taste.

Strain purée and transfer to refrigerator; chill for 2 to 3 hours until very cold. Churn sorbet in ice cream maker according to manufacturer's instructions. Transfer sorbet to freezer to firm up for 2 to 3 hours before serving.

The title says it all: this is a smooth, sweet-tart sorbet that's perfect for summer. Or dinner.

Rich, Tart Lemon Sorbet Recipe

juice

lemons

water (preferably filtered or distilled bottled), chilled

corn syrup

vodka

salt

Whisk all ingredients except salt together in a bowl until thoroughly combined. Add salt to taste. If water and lemon juice are not chilled, chill in refrigerator until cold.

Churn in ice cream machine according to manufacturer's instructions. Transfer to an airtight container and chill in freezer until firm, 2 to 3 hours.

Patbingsu (Korean Shaved Ice)

400 g ice cubes ((0.9 pounds))

Tbsp sweetened red bean paste ((or more to taste))

Tbsp sweetened condensed milk ((or more to taste))

mini sweet rice cakes ((mochi))

strawberry ((2.8 ounces), chopped)

45 g kiwi ((1.6 ounces), thinly sliced)

45 g blueberry ((1.6 ounces))

pineapple ((1.6 ounces), chopped)

Put the ice blocks into a food processor (or shaved ice machine if you have one). Grind the ice (for about 20 seconds) until it has a smooth texture.

Place the shaved ice into a chilled serving bowl. Top up with your choice of fruit, red bean paste, mochi. Garnish with sweetened condensed milk.  (FYI: I like layering the sweetened condensed milk on top of the shaved ice as well as on top of the fruit.)

Serve.

Korean Milk Ice Sorbet (Injeolmi Bingsu)

Tbsp sweetened condensed milk

scoop sweetened red bean paste

Tbsp mini mochi rice cakes

tsp Korean multi grain powder ((Misutgaru))

Mix the milk and sweetened condensed milk in a measuring cup with a spout. (So it’s easier to pour out). Pour out the milk mixture onto an ice tray. Freeze it (for at least 5 hrs) until it becomes ice blocks.

Take out the ice blocks and put them into a food processor (or shaved ice machine if you have one). Grind the ice (for about 20 seconds) until it has a smooth texture (like snow).

Put together all the ingredients in a chilled serving bowl in this order:- Lay down some milk sorbet (about 3 to 4 Tbsp per serving bowl) in the bottom of the bowl. Sprinkle 1 tsp of multi grain powder. Lay down more milk sorbet (about 3 to 4 Tbsp per serving bowl) on top of the multi grain powder. Sprinkle 1 tsp of multi grain powder. Add some rice cakes (Injeolmi and mini mochi rice cakes) and red bean paste. Sprinkle almond flakes. Serve.

This peach sorbet doesn’t require an ice cream maker, just peaches, yogurt, honey, blackberries, lemon, and vodka. 

Peach Sorbet with Crushed Blackberries

The splash of vodka we add to this fruity sorbet recipe is the key to a smooth frozen treat: The alcohol helps prevent big ice crystals from forming, making the sorbet easier to scoop out of the loaf pan. Just don’t add more than a couple of tablespoons—too much alcohol will cause the sorbet to melt faster. This recipe is part of the 2020 Healthyish Farmers Market Challenge. Get all 8 recipes here.

Process peaches, yogurt, vodka, salt, and ¼ cup honey in a food processor or blender until smooth. Pour peach mixture into a loaf pan (a metal pan will conduct cold more efficiently than tempered glass) and place a piece of parchment paper on top, pressing directly onto surface. Freeze until sorbet is firm, about 6 hours.

A little before serving, lightly crush half of the blackberries in a small bowl. Add lemon juice, remaining berries, and remaining 2 Tbsp. honey and let sit, tossing occasionally, until berries have released some of their juices, about 20 minutes.

Scoop sorbet into bowls and top with macerated blackberries.

Do Ahead: Sorbet can be made 3 days ahead. Keep frozen. Thaw in refrigerator 30 minutes before scooping into bowls.

Ninja Creami Frozen Yogurt

Ounces Vanilla Yogurt

Pour 16 ounces of yogurt into a Ninja Creami pint container and freeze on a level surface in a cold freezer for a full 24 hours.

After 24 hours, remove the pint from the freezer. Remove the lid.

Place the Ninja Creami pint into the outer bowl. Place the outer bowl with the pint in it, into the Ninja Creami machine and turn until the outer bowl locks into place. Push the LITE ICE CREAM button. During the LITE ICE CREAM function, the yogurt will mix together and become creamy. This should take approximately 2 minutes.

Once the LITE ICE CREAM function has ended, turn the outer bowl and release it from the Ninja Creami machine.

Yourfrozen yogurt is ready to eat! Enjoy!

Ninja Creami Pineapple Sorbet

Ounces Pineapple (Canned)

Pour 16 ounces of canned pineapple, with the liquid from the can, into a Ninja Creami pint container and freeze on a level surface in a cold freezer for a full 24 hours.

Place the Ninja Creami pint into the outer bowl. Place the outer bowl with the pint in it, into the Ninja Creami machine and turn until the outer bowl locks into place. Push the SORBET button. During the SORBET function, the sorbet will mix together and become very creamy. This should take approximately 2 minutes.

Once the SORBET function has ended, turn the outer bowl and release it from the Ninja Creami machine.

Your sorbet is ready to eat! Enjoy!

*** If the sorbet is not quite creamy enough, place the outer bowl with the pint back into the Ninja Creami machine and lock it into place. Choose the RE-SPIN function. Once the Ninja Creami completes the RE-SPIN cycle, remove the outer bowl from the machine.

Watermelon Sorbet without Blender or Ice Cream Maker

Watermelon chunks (frozen)

Black salt

lime juice

mint leaves

tsp Maple syrup

Orange

cut and freeze watermelon

Cut watermelon into chunks. Place it on a tray and keep it in the freezer for 4-5 hours. (You can also use frozen watermelon chunks.)

Freezing Watermelon

rest for 5 minutes

Take out frozen chunks 5 minutes before making the recipe.

sprinkle salt

Sprinkle a pinch of black rock salt to it.

add lime juice and mint leaves

Add 5-6 drops of lime juice and 2-3 sprigs of mint leaves.

add maple syrup

Drizzle 1/2 tsp of maple syrup. (You can adjust this as per the sweetness of the watermelon.)

crush it

Crush everything well with the help of mortar or blend in a blender or food processor.

Add it in glass

pour juice

Fill half of the glass with orange juice.

Refreshing Watermelon Sorbet without Ice Cream Maker or Blender

Easy Plum Amaretto Sorbet ~ this epic summer fruit sorbet is unlike anything you've ever tasted, it's like biting into a ripe juicy plum, only exploded tenfold.   To be honest, a fresh plum never tasted so good!

Easy Plum Amaretto Sorbet

(or 931 grams, fresh plums)

Tbsp Amaretto

tsp honey

Wash, pit, and chop the plums.  I don't peel them.

Add the plums to a food processor or blender and blend until they're finely pureed.  Blend in the Amaretto and the honey, and taste to adjust either one of them.

If you have time, chill this mixture in the refrigerator until cold.  I'll be honest, I don't have the patience for that, so I process my puree in my ice cream maker right away.

Process according to your machine's directions, mine takes about 20- 30 minutes.

Spoon the soft sorbet into a loaf pan or ice cream container of your choice, and freeze for at least 2-4 hours, until it gets to a perfectly scoop-able consistency.

600 g de groseilles

Dans une casserole mettre l'eau et les groseilles et faire chauffer quelques minutes pour que les graines éclatent et rejettent leur jus

Retirer du feu. Prendre un récipient et y mettre une passoire au dessus, verser le contenu de la casserole par dessus et bien presser les fruits (au presse purée) afin de récupérer un maximum de jus de fruits. Jeter les déchets

Ajouter le sucre en poudre et la maïzena et bien mélanger jusqu'à complète dissolution de celui-ci. Mettre au frais

Lorsque la préparation est bien froide la verser dans la sorbetière et turbiner pour 30 minutes

Transvaser dans un récipient et terminer la prise au congélateur

Combine the sugar and water in a saucepan and heat until the sugar dissolves. Simmer for a further 15-20 minutes until you get a sugar syrup. Pour into a glass jar/bottle. Let it cool completely and for best results, chill in the fridge until you need it.

Cut up whole fruits into ½ inch cubes (except raspberries - these can be frozen whole).

Lay out the fruits in a single layer on parchment paper lined baking trays (it's OK if the fruits touch).

Freeze the fruits completely and store them in freezer bags.

Roughly weigh out 8 oz of the frozen fruit and place it in a small food processor or ice crushing blender.

Pulse to crush the fruits into small pieces and add the simple syrup, a tablespoon at a time (while pulsing) to create a smooth sorbet-like paste. Please see notes.

Add a squeeze of lemon juice and run the blender for a few seconds to mix.

Spoon it into a bowl and serve immediately - or store in the freezer until you’re ready.

Fruit Sorbet

Make your own raspberry sorbet with just three ingredients. Perfect for hot summer days, or pairing with chocolate puds – and it's vegan too

Raspberry sorbet

Put the sugar and 270ml water in a saucepan over a low heat and stir until the sugar has dissolved. Raise the heat and simmer for 5 mins, or until the liquid has become a syrup. Set aside to cool.

Put the raspberries and lemon juice in a food processor and blitz until smooth. Strain through a fine sieve into a bowl and discard the seeds. Combine with the sugar syrup, then pour into freezer-proof container.

Freeze for 1 hr 30 mins, then whisk with a balloon whisk or a fork to break up any ice crystals that have formed and return to the freezer.

Keep mixing the sorbet once an hour for 4 hrs to break up the ice crystals. Stop mixing when firm but scoopable. Will keep in the freezer for up to a month. Serve with extra raspberries, if you like.
