Whisk together yogurt, salt, cumin powder, green chilli and chilli powder till smooth. Add all the vegetables and mix well. Refrigerate for half an hour before serving. You will notice after refrigeration that the veggies will leave a little water. Just give it a quick mix and you are ready to go.

Made this tonight. Everything was easy but I struggled to know when they were cooked through. Taste delicious.

I made everything but the tzatziki as I didn't have fresh dill. Delicious. added two additional eggs and 3 tbsp of flour as I had 2 19Oz cans of chick peas. I also added one small chopped onion and fresh cilantro instead of coriander spice. Also I fried the fritters till brown then transferred to the oven for 15 minutes at 400 because of the raw onion and egg. This is the tricky part as you want the mixture thoroughly cooked but not dried out. Also found it helpful to refrigerate the patties prior to frying so that they hold their form better.

Drain the grated cucumber by pressing down on it over fine mesh sieve over a bowl. Alternatively, you could use a nut milk bag or cheesecloth and gently squeeze until all the moisture is out.

Rest

Let the mixture rest for a few minutes for the flavors to meld together. Taste test to see if you need to add any extra herbs, lemon juice, or salt.

Prepare the tzatziki sauce by grating the cucumber. Gather the cucumber together and place in a paper towel and press the water out of the shredded cucumber and place in a medium size bowl.

Add the yogurt, garlic, red wine vinegar, fresh dill, kosher salt and freshly ground black pepper and mix well.

Cover and refrigerate for 30 minutes or up to 3 days.

Cut the ends off the cucumber. Slice the cucumber in half lengthwise and remove the seeds. Grate remaining cucumber and toss with salt in bowl. Set salted grated cucumber in strainer over bowl or in sink and let stand for at least 15 minutes. Squeeze to remove as much liquid as you can and discard liquid. Ideally you want about 1 cup of grated cucumber for the Tzatziki.

Combine cucumber with remaining ingredients in large bowl. Mix to combine, taste, and add additional salt, lemon juice, or dill, if desired.

Homemade Tzatziki Sauce Recipe

Greek yogurt

½ TBS white balsamic vinegar

Place a fine mesh strainer on top of a smaller bowl (to catch the water as it drains). Be sure that the strainer does not touch the bottom of the bowl and that there is at least 1-2 inches between them.

Put a coffee filter on top of the strainer.

Mix 1 cup Greek yogurt and ¼ cup sour cream together. Carefully scoop it onto the coffee filter/strainer and place it in the fridge overnight or for at least 4 hours.

To strain the yogurt/sour cream:

De-seed and grate your cucumber. Put it in a colander over a bowl and sprinkle with salt.

Let it sit on the counter for at least 2 hours, occasionally pushing out the excess water.

To strain the cucumber:

When you’re ready to make the sauce: squeeze out all excess water from cucumber by pushing it out while in the colander. Then get some thick paper towels, put cucumber in them and ring it out.

Put yogurt mixture in a clean, dry mixing bowl. Add all ingredients except cucumber. Once thoroughly mixed add cucumber and refrigerate for at least one hour to let flavors blend.

Serve with your favorite Mediterranean food like falafel or gyros!

Crush the garlic with a little bit of salt and pepper.

Peel the cucumber and grate. Squeeze well to get rid of water.

Whip the yogurt in a bowl and then add the garlic paste, mixing well and then add the cucumber and mix again.

Start adding small amounts of olive oil alternating with the vinegar while mixing.

Add about 2 teaspoons fresh dill and mix well.

Let it sit at least an hour in the refrigerator before serving.

This vegetarian version of the Mediterranean classic is a real winner with spiced chickpeas, tzatziki, and fresh veggies in a pita.

Make the chickpeas: Drain chickpeas and dry. Heat oil in medium skillet on medium heat until shimmering. Cook chickpeas until slightly brown, then coat with spices. Continue cooking, stirring every 30 seconds until spices are fully mixed and fragrant.

Make the tzatziki: Mix all ingredients in bowl and place to the side or in fridge until ready to serve.

Make the veggies: Mix all ingredients together and place to the side until ready to serve.

Spread hummus in center of pita to hold chickpeas. Top with veggies, tzatziki, and feta.
