Ready in under 30 minutes, this deliciously festive noodle dish is also an omen of good health and longevity.

Vegetable Lo Mein (蔬菜捞麺)

3.5 oz fresh shiitake mushroom

oz enoki mushroom

oz king oyster mushroom

carrot

broccoli

2.5 oz celery

oz red bell pepper

oz bean sprouts

green onion

garlic

water

cornstarch

0.5 tbsp light soy sauce

0.5 tbsp dark soy sauce

oyster sauce

salt

tsp sugar

vegetable oil

tsp sesame oil

Cook noodles

Cooking our fresh egg noodles should take about 10 minutes in total. There's a lot of waiting involved, so we'll be doing this in tandem with chopping our veggies and mushrooms. 

Wash vegetables & mushrooms

In a bowl of water, gently scrub all of our mushrooms and veggies to wash away the dirt and impurities. 

Chop vegetables & mushrooms

We'll chop our shiitake mushrooms, king oyster mushrooms, carrots, broccoli, celery, red bell pepper, green onion, and garlic. 

Heat wok, add oil when hot

Set the stove to its highest heat, and let the wok heat up for 2-5 minutes (depending on the strength of your stove). When it's hot enough, add vegetable oil, and swirl it around the wok. 

Cook garlic, vegetables

Add the garlic, and cook for about 20-30 seconds until you start to smell the garlic's aromas.

Add boiled water, cover wok, prepare slurry

Add boiled water​ to the wok, and cover for 2-3 minutes until it starts boiling again. While we wait, we'll mix cornstarch and water into a slurry. 

Add flavors, noodles, cover wok

Uncover the wok, and add light soy sauce, dark soy sauce, oyster sauce, sugar, and salt into the wok. 

Add cornstarch slurry

Stir the cornstarch slurry for a few seconds, and slowly pour it into the wok. 

Add bean sprouts, green onions, sesame oil

Add bean sprouts, chopped green onions, and sesame oil. Stir everything around for 60-90 seconds.

Plate the noodles!

We're ready to eat! Plate the noodles into your favorite dish and call your loved ones over.

The noodle part is easy - you can literally use any noodles, even pasta (yep, seriously). Also, switch out the vegetables with 5 cups (packed) of any chopped vegetables of choice.

Lo Mein Noodles

/ 1lb Lo Mein, Hokkien

(65 milliliters) water

tbsp dark soy sauce ((Note 4))

tsp white pepper ((sub black))

Sauce: Mix cornflour and dark soy until lump free, then add remaining Sauce ingredients.

Season Chicken: Transfer 2 tsp Sauce into bowl with chicken. Toss to coat.

Heat oil in a wok or large heavy based skillet over high heat until smoking.

Add onion and garlic, stir 30 seconds.

Add chicken, stir until white on the outside, still raw inside - 1 minute.

Add carrot and capsicum/bell peppers, cook 2 minutes or until chicken is cooked.

Add noodles, Sauce and water. Use 2 wooden spoons and toss for 30 seconds.

Add green onions, toss for another 1 minute until all the noodles are slick with sauce.

Serve immediately, garnished with extra green onions if using.

Shake all the sauce ingredients together in a jar.

Cook the noodles according to package directions. Drain and set aside.

Add the mirin to loosen the browned bits up off the bottom of the pan. Add the cooked noodles and about half of the sauce &#8211; toss around in the hot pan to combine. Add more sauce if needed (I usually gauge the amount of sauce I want by the color of the noodles &#8211; you want a medium brown color, not too light, not too dark). Serve topped with remaining green onions!

Thank you Lindsay for that nice recipe. I had no different soy sauces so I took the one I have at home, I also exchanged sugar for vegan honey (synthetic produced without bees). I also added a few more veggies because in our household we love veggies.  This is a keeper and will be made very soon again

Just made this with ricewine vinegar and agave nectar with rice ramen and its delicious! Also I didn't have the dark sky but will purchase this next time.

Hi! I just made this Lo Mein recipe, using some rotisserie chicken for a quicker weeknight meal. Also, since i luuuuv the spicy sesame dressing from your Korean BBQ bowls, I added grated ginger, garlic and Sambal oelek to the sauce. Yum.

This was good. I used soba noodles. I used 3 T. of dark low-sodium soy sauce b/c I didn't have any light. I also didn't have any mirin, so I used 2 T. of marsala wine with 1 T. of sugar. I also added cubed tofu. It took a few minutes more than 15 but not double that amount or anything like that.

I meant to say 2 T. of marsala wine with 1 t. of sugar as per Cooking Light's Web site in place of the mirin. Mea culpa!

Pinch Of Yum – Pearl River Bridge LoMein

These 25-minute vegetable stir-fry noodles are simple, and packed with flavor for a quick weeknight meal! Customize the ingredients with whatever you have available, and you have a meal that will never get boring. Plus, this Asian noodle recipe is meat-free, refined sugar-free, vegan, and can be made gluten-free!

Vegetable Stir-Fry Noodles

oz linguine (e.g. linguine or rice noodles (*see notes))

tbsp (sesame) oil

ginger

mushrooms

carrot (finely chopped)

red bell pepper (finely chopped)

zucchini (finely chopped)

onion powder

tsp smoked paprika

Salt and black pepper (to taste)

onion (to garnish)

Sesame seeds (to garnish)

vegetable broth (or water)

tamari (or soy sauce, (GF) or coconut aminos)

tbsp rice vinegar

tbsp maple syrup (or more to taste)

red pepper flakes (optional)

Cook noodles of choice (see notes) in salted water until al dente (do not overcook them).

Meanwhile, heat oil in a skillet or wok and sauté ginger and garlic over medium heat for about 2 minutes, stirring frequently. Add mushrooms, carrot, red pepper, zucchini, and spices and sauté for about 5 minutes or until the veggies are softened, stirring frequently. You can add a splash of water or veggie broth to avoid burning.

To make the sauce, simply add all sauce ingredients (vegetable broth, tamari, rice vinegar, maple syrup, cornstarch, and red pepper flakes) to a medium bowl and stir with a whisk. Alternatively, add the sauce ingredients to a mason jar (with a lid) and shake it.

Pour the sauce into the pan and bring the mixture to a simmer. Let simmer for about 1 minute.

Add the drained noodles and toss to combine. Cook for a further 1-2 minutes, taste it and adjust seasonings by adding more salt/pepper/tamari/sweetener, etc. if needed. If you like it creamier, add a few spoons of peanut butter!

Garnish with green onions (scallions) and sesame seeds, serve, and enjoy! Store leftovers covered in the fridge for up to 3 days.

An easy Cantonese-style pan-fried noodle dish that comes together so quickly! These taste just like your favorite restaurant's version and now it's easy to make them at home!

Cantonese-Style Pan-Fried Noodles

Hong Kong style egg noodles

+ 2 teaspoons toasted sesame oil

Bring a large stockpot of water to boil....

Bring a large stockpot of water to boil. While the water is boiling, separate the greens from the whites of the scallion. Cut into one-inch pieces then quarter the 1-inch piece vertically so you end up with thinly julienned scallions, set aside. In a bowl, combine the oyster sauce, soy sauce, sugar, minced garlic, red pepper flakes, salt, and 1 teaspoon of sesame oil, stir to combine, set aside.

When the water comes to a boil, add the noodles and allow them to boil for 2-4 minutes (according to package directions). Drain and rinse under cold running water.

Heat a large wok or a 16-18 inch...

Heat a large wok or a 16-18 inch skillet over high heat. Let the skillet heat for several minutes until it becomes SCREAMING HOT. Drizzle with 1 tablespoon of sesame oil and 1 tablespoon of canola oil. When the pan becomes very hot and the oil starts to shimmer, add the noodles in a thin even layer. Grab the handle and carefully swirl the pan so the oil evenly coats all the noodles. Allow the noodles to cook for 4-6 minute or until they become crispy.

Flip the noodles over using a large spatula....

Flip the noodles over using a large spatula. Do this carefully, don't worry if you cannot get all of them to turn at once. Do it in portions if necessary. Drizzle the remaining 1 tablespoon of sesame oil and 1 tablespoon of canola oil around the perimeters of the pan and again, lift the skillet with handle and swirl the pan to allow the oil to distribute. Let the noodles fry for an additional 3-5 minutes. Remove the noodles to a plate.

Heat the remaining 1 teaspoon of sesame oil, along with the white part of the scallion and let sizzle for just 10 seconds. Add the shredded carrots if using, and let cook for an additional 10 seconds. Add the noodles back into the skillet and toss. Separate the noodles so there aren't any large clumps. Toss in the shredded cabbage mix, if using and drizzle with the soy sauce mixture and toss continuously for 1-2 minutes or until the sauce distributes evenly over the noodles.

Heat 1 teaspoon oil in a wide nonstick skillet over high heat until shimmering. Add mushrooms and cabbage and season lightly with salt.  Cook, stirring and tossing frequently, until barely cooked through but still bright, about 3 minutes. Transfer to a medium bowl. Add 1 more teaspoon oil to wok and return to high heat until lightly smoking. Add carrot and snow peas and season lightly with salt. Cook, stirring and tossing frequently, until barely cooked through but still bright, about 3 minutes. Transfer to bowl with mushrooms and cabbage. 

Add remaining teaspoon oil and reduce heat to medium-high. Add garlic, ginger, and scallions and cook, stirring constantly until fragrant, about 15 seconds. Add noodles and toss to coat. Return vegetables to wok. Add soy sauce. Add sesame seeds and cilantro. Cook, tossing constantly, until noodles and vegetables are coated in sauce. Transfer to a plate and serve immediately.
