This easy taco soup recipe is so hearty, filling and just the perfect comfort food. And the deliciously spiced, beefy flavor will have everyone craving more! Makes about 10 1/2 cups.

Taco Soup Recipe

olive oil

lbs beef

yellow onion chopped ((1 1/2 cups))

garlic, (minced (2 tsp))

jalapeno, (seeded and finely chopped (optional)*)

(14.5 oz) cans diced tomatoes with green chiles

(14 beef broth

tomato sauce

Tbsp chili powder**

tsp cumin

tsp ground paprika

oregano

Tbsp dry ranch dressing mix,

Salt and black pepper

(14.5 oz) can black beans, (drained and rinsed)

(14.5 oz) can can pinto beans, (drained and rinsed)

Shredded Mexican blend cheese, (chopped green or red onions, diced avocados and corn tortilla strips/chips)

Heat a largr pot over medium-high heat drizzle lightly with oil.

Add ground beef in a large along with chopped onion, crumbling and stirring occasionally until browned. Add jalapeno and garlic and saute 1 minute longer.

Drain excess fat from beef mixture.&nbsp;

Stir in tomatoes with chiles, beef broth, tomato sauce, chili powder, cumin, paprika, oregano, ranch dressing mix and season with salt and pepper to tastes. Cover pot with lid and simmer 30 minutes, stirring occasionally.

Add in corn, black beans and pinto beans and cook until heated through. Add 1/2 cup water to thin soup if desired. Stir in cilantro and lime if using.

Serve warm finished with desired toppings.

Taco Soup

This taco soup is a hearty blend of ground beef, two types of beans, vegetables and seasonings, all simmered to perfection. An easy dinner option that's kid friendly and quick to make!

beef (I use 90% lean)

onion (finely chopped)

red bell pepper (seeded,

taco seasoning

can diced tomatoes (do not drain)

can diced green chiles (drained)

beef broth

can black beans

can pinto beans (drained and rinsed)

salt and pepper

toppings such as cilantro, tortilla strips, sour cream, avocado and shredded cheese

Heat the olive oil in a large pot over medium high heat. Add the ground beef.

Cook for 5-6 minutes, breaking up the meat with a spatula.

Add the onion and bell pepper and cook for an additional 3-5 minutes.

Add the taco seasoning, diced tomatoes, tomato sauce, chiles, beef broth, black beans, pinto beans and corn to the pot. Bring to a simmer.

Simmer for 15 minutes. Taste and add salt and pepper if needed. Serve immediately with toppings of your choice.

In a small bowl, stir together cumin, chili powder, smoked paprika, salt, and pepper.

Heat olive oil in a Dutch oven over medium heat.

Add ground sirloin, breaking it up with a wooden spoon. Stir in onions and garlic.

Sprinkle with spice mixture. Cook, stirring occasionally, until beef is browned, about 7 minutes.

Stir in diced tomatoes, green chiles, beef stock, and tomato paste.

Bring to a simmer; cook, uncovered, stirring occasionally, about 20 minutes.

Stir in black beans; simmer 5 minutes more.

Garnish servings with desired toppings.

Move the pressure release valve to the sealed position. Press the SOUP button or HIGH pressure for 30 minutes. Quick release the pressure when finished cooking.

Combine the ingredients for the taco seasoning.

In a Dutch oven, heat oil. Once hot, sauté ground meat breaking it up as it’s cooked, lightly season with the taco seasoning.

Meanwhile, finely chop the onion. Cube the red pepper, green pepper and tomatoes.

Once the meat is browned, add the remaining ingredients and seasonings. Turn heat to low and cook 12-15 minutes. Serve soup hot with desired toppings.

lb. lean ground beef

bell pepper, diced

½ brick (4-ounces) cream cheese, optional

Optional toppings: grated cheddar cheese, sour cream, cilantro, tortilla chips, lime juice, diced avocado

Add the ground beef to a large pot over medium-high heat. Cook the beef until most of the pink is gone, about 7 minutes. Add the onion, pepper, garlic, and (if using) the jalapeño and cook until the onion is soft, about 3 minutes. 

Add the taco seasoning to the pot and stir. Then add the chicken stock, diced tomatoes, and beans and bring the pot to a boil. Reduce the heat and simmer for 5 minutes. 

Add the corn to the pot and let it warm for a few minutes. Season to taste with salt and pepper. 

If using the cream cheese, cut it into small pieces and add it to the soup then stir until it dissolves into the soup. 

Serve with any or all of the optional toppings.

Put all the ingredients into your slow cooker. Cook on low for 6-8 hours or high for 4-6 hours.

Shred the chicken and season with salt and pepper to taste.

Top with tortilla chips, avocado, shredded cheese, sour cream, or jalapenos.

In a large stock pot or Dutch oven, heat oil over medium high for 2 minutes until the oil is sizzling hot. Add ground beef and cook for 5-7 minutes until browned. Make sure to break up the beef into small pieces to help with even browning.

Add onion, jalapeño, and garlic. Stir well to combine and continue to cook for 3-4 minutes until tender. Stir in paprika, cumin, and crushed pepper until evenly mixed.

Add crushed tomatoes and beef broth. Season with salt and pepper to taste. Cover the lid and let it simmer over medium heat for 10 minutes, stirring occasionally.

Add black beans and corn. Stir well to mix and cook until heated through, about 2 minutes.
