Light and crispy, you&#x27;ll love these air fryer potato wedges as an easy side dish. Season with rosemary and thyme (or your favorite seasoning) for a kid friendly recipe.

Air Fryer Potato Wedges

potatoes

olive oil

Kosher salt

rosemary

thyme

cooking spray ((optional))

Cut potatoes in half, then cut into wedges. Each potato should make 6-8 wedges depending on the thickness of the potatoes and the desired size of the wedge.

In a large bowl, toss together potatoes with seasonings and olive oil.

Spray the basket of the air fryer with cooking spray. Add the potatoes and if desired, spray potatoes with cooking spray for an extra crispy potato wedge.

Set temperature to 390 degrees Fahrenheit and the timer for 15 minutes for regular sized wedges, adjust timing by a minute or two if the wedges are thinner or thicker.

Want extra crispy wedges? Turn up the heat to 400 degrees Fahrenheit for an additional 2-3 minutes at the end of cooking time.

Serve immediately.

These tasty homemade fish sticks are about as good as it gets! Kids and adults alike will be diving into this fish dinner!

Fish Nuggets with Bang Bang Sauce

halibut

panko breadcrumbs (a crispier breadcrumb than regular breadcrumbs, look

parmesan cheese

salt

eggs, beaten

flour

mayonnaise

honey

sriracha

sweet chili Sauce

garlic powder

Mix the parmesan and breadcrumbs in a bowl.

Add the eggs to another bowl and the flour in a third bowl.

Bread the nuggets first in the flour, shaking off the excess, then into the eggs, letting the excess egg drip off and then last into the breadcrumb/parmesan coating.

Place the nuggets on a baking sheet lined with parchment paper.

Bake in the oven for 8 minutes, then remove from the oven and flip the nuggets over.

Return to the oven and cook another 7-8 minutes until the second side is brown.

While the nuggets are in the oven, mix together the bang bang sauce and serve alongside for dipping.

I haven’t made the nuggets yet, but I made the sauce to go with shrimp.  Wow.  It is my special cheat day sauce!   Thank you!!!

Instant Yeast or Bread Machine yeast ((2 1/4 tsp))

Place the wet and dry ingredients (water, oil, sugar, salt, flour, yeast) in the order as required by your bread machine.

Close the lid and select the &quot;Basic&quot; cycle, 1.5 lb size and the preferred crust setting.

The bread will be ready once the cycle completes.

Remove the loaf by inverting the pan and shaking it.

Place the bread on a cooling rack and allow it to cool down.

Once the bread is cooled down completely, slice it with a serrated bread knife or an electric knife.

Bake in bread machine

Close the lid and select the &quot;dough&quot; cycle.

Once the cycle completes, remove the dough from the pan and shape it into a log of 8 inches in length.

Place it in the bread baking pan (9 by 5 inches) and allow it to rise for about 45-50 minutes until it doubles in volume.

Cover with a food wrap or a kitchen towel so that it does not dry up.

Once it has doubled in volume, preheat the oven to 350 °F.

Remove the food wrap gently and then place the pan in the oven.

Bake for about 20 minutes or until the crust is golden brown in color.

Transfer it to a cooling rack and allow it to cool down completely before slicing.

Super easy hidden veggie mac and cheese for toddlers and kids with cauliflower and sweet potatoes. You can&#39;t taste the veggies at all, and it turns out so creamy and wonderful!

Hidden Veggie Mac and Cheese (Kid-Friendly)

oz short pasta

cauliflower florets (about ½ head cauliflower)

full-fat milk (dairy

tbsp ghee (or butter)

tbsp arrowroot starch (or flour)

cheddar cheese

tsp dijon mustard

tsp sea salt (or more to taste)

black pepper

Cook the pasta in salted boiling water according to package instructions, but slightly al dente. Drain and set aside without rinsing.

Place a steamer basket in a large saucepan, and add 1½ cups water. Add cauliflower florets and sweet potato cubes to the basket. Cover and bring to a boil. Reduce to simmer then cook for 8-10 minutes until fork tender.

Transfer the steamed cauliflower and sweet potatoes to a blender with 1/2 cup milk. Blend until smooth.

Heat a large pot over medium heat on the stovetop. Add ghee and arrowroot starch, and whisk until a roux is formed. Add 3/4 cup of milk and whisk continuously until it starts to boil.

Reduce the heat to the lowest setting, and stir in cheese, veggie puree, garlic powder, dijon mustard, salt, and pepper. Keep stirring until the cheese is melted.

Remove from heat, and add cooked pasta and stir to combine. Taste to add more salt, if needed.

Serve, or you can transfer to a baking dish and broil for 5 minutes to get it browned on top.

chicken thighs

tbsp Mingle Greek Garlic Lovers seasoning

cucumber,

cherry tomatoes, halved

green capsicum, de-seeded and chopped into 2 cm pieces

red onion, thinly sliced

Greek feta, crumbled

pitted kalamata olives,

avocado,

tbsp red wine vinegar

tsp crushed garlic

To prepare the chicken, add the olive oil, lemon juice and Mingle Greek Garlic Lovers seasoning into a large bowl. Mix well, then add in the chicken thighs, coat well and leave to marinate in the fridge for at least two hours (if time permits) you can even do this the night before.

Once ready to cook, heat a BBQ or grill plate to high heat, then cook the chicken for about 6 minutes each side until fully cooked through.

While the chicken is cooking, prepare the salad by combining all ingredients into a large bowl.

Make the dressing by whisking together all ingredients with a whisk, then add the dressing to the salad

Once the chicken is done, serve alongside the salad.

Roast sweet potatoes until golden (air fryer or oven baked at 180 degrees C).&amp;nbsp;

Brown onion &amp;amp; garlic in a large non-stick pan until golden.&amp;nbsp;

Add mince &amp;amp;@mingleseasoning Spicy Mexican seasoning. Cook until mince is cooked through. Set aside.&amp;nbsp;
