Per la ricetta del crocchè di patate, lessate le patate con la buccia finché non saranno tenere. Scolatele e fatele riposare per 8-12 ore. Pelate le patate e raccoglietele in una grande ciotola.Tritate il prezzemolo, unitelo alle patate e schiacciatele con una forchetta. Aggiungete una generosa presa di sale. Amalgamate e, con le mani inumidite, formate le crocchette. Bagnate velocemente le crocchette nel latte e poi nella farina. Friggetele, poche alla volta, in abbondante olio di arachide. Scolatele su carta assorbente. Servitele caldissime con la scorza di limone grattugiata, accompagnandole a piacere con panelle siciliane.

Per la ricetta dello sformato di pollo, patate e cavolfiore, pelate le patate e tagliatele a tocchetti; mondate il cavolfiore e dividetelo a cimette; riducete la mela a cubetti. Pasta, patate e provola is a standard dish at Neapolitan trattorie. The potato and pasta soupy-stew with smoked cheese is a welcoming gooey remedy for chilly days.

Wash, peel and cut the potatoes into 1/8" cubes. Cut the provola into 1/2" cubes. Cut the pancetta into 1/4" cubes and clean and chop the celery, carrot and onion.&nbsp;

Brown the pancetta in a saucepan over medium heat without oil, then add the celery, carrot and onion and cook.

Deglaze with 2 ladles vegetable broth. To deglaze add the broth to the saucepan to loosen and dissolve food particles that may be stuck to the bottom of the pan. The cooked food particles are the source of intense flavor. Add the potatoes and brown them for 2 minutes, cover with stock and add the pasta, directly into the pan, with a pinch of salt if needed.

Cook it like a risotto, adding broth as it evaporates. Once cooked al dente, remove from the heat, add the provola, 1 sprig of rosemary and 3-4 Tbsp. Parmigiano. Stir to mix well, let rest for 5 minutes and serve.&nbsp;

I fem exactament el mateix amb la patata. No importa massa la mida dels daus, ja que ho acabarem triturant tot plegat, però així es cou millor.

Πατατόπιτα με Μανιτάρια

φύλλο για πίτες

700 γρ. μανιτάρια σε φέτες

πατάτες

250 γρ. τυρί

κρεμμυδάκια φρέσκα

κρεμμύδι ξερό

ποτηράκι κρασί λευκό

αλάτι

πιπέρι

λίγο μοσχοκάρυδο

λάδι για το φύλλο και για το σοτάρισμα

Σοτάρουμε το κρεμμύδι στο λάδι και προσθέτουμε προς το τέλος το φρέσκο κρεμμυδάκι.

Ρίχνουμε τα μανιτάρια και αφήνουμε να σοταριστούν και αυτά.

Σβήνουμε με το κρασί και αλατοπιπερώνουμε. Σκεπάζουμε για λίγο να ψηθεί το κρεμμύδι και ανοίγουμε σε χαμηλή φωτιά μέχρι να εξατμιστούν τελείως τα υγρά.

Βράζουμε τις πατάτες σε αλατισμένο νερό και τις πατάμε ζεστές με ένα πιρούνι .

Προσθέτουμε λίγο μοσχοκάρυδο και ενώνουμε την πατάτα με τα μανιτάρια.

Ρίχνουμε το τυρί και ανακατεύουμε. Στρώνουμε τα φύλλα σε ταψί και ψήνουμε στους 180 βαθμούς για 1 ώρα περίπου ή μέχρι η πίτα μας να ροδίσει.
